Western Samoa -- Poi (Banana Puddling)

We are moving on to Western Samoa today. There are not too many countries starting with W and so I picked one from this list and cooked from it, not realizing until I started typing the post that is the former name for Samoa. Oh well, it is what it is now and I'm going with it!!!!!!
Western Samoa/ Samoa is a country encompassing the western part of the Samoan Islands in the South Pacific Ocean. To be honest, I had no clue where these islands where till today and WIKI has given me lot of geographic knowledge about the country. It is fascinating to read about a new country, that too about a country that I just made a dish from. So if you want to know where and what Samoan islands are, please refer to this link.

I found this great blog called Samoafood written by a Samoan. She says 'Samoa is the home to some of the smiliest people in the world.' They love their food and every major life event is marked with a feast. Their dishes usually include whole pig, fresh seaweed, crayfish, baked taro, rice. Coconut appears in many Samoan dishes. I have made a Samoan Coconut buns, Panipopo, some time back and loved the creamy, sweet buns a lot.
Today's dish I made from Samoafood could not be simpler, but I was initially skeptical because uncooked coconut milk is not something that I'm really used to. But this simple dessert tasted refreshing and delicious. Adding lemon zest gives it the required tartness to the otherwise sweet and creamy dessert. I added lime zest because that was all I had in the fridge.
Western Samoa -- Poi (Banana Puddling)
Ingredients: Serves 2
Ripe Bananas - 2
Coconut milk - ¼cup
Sugar - 1~2tsp (adjust as per taste and the sweetness of your bananas)
Lemon zest - ¼tsp (I used lime zest)
Vanilla extract - ¼tsp

Method:
  • Mash the banana into a smooth paste. Add all the other ingredients and refrigerate for 30 minutes.
  • Banana will discolor and form a dark layer on the top. Just mix it in. Try to eat this pudding as soon as possible.

  5. I bet it is flavorful though sounds simple. During the research for this BM, I had come across a link which talked about the must try desserts from around the world and I think this was mentioned in it.

  6. Simple and yumm! I was also skeptical about using raw coconut milk, but I found it not very different from regular milk albeit with the coconut flavor :)
