Sweden -- Swedish Vegetarian Meal (Recipes)

BM# 44: A-Z Cooking Series -- Around the World in 30 days
Country: S for Sweden
Dishes: Swedish Sandwich Cake (Smörgåstårta), Raggmunk (Potato Pancakes), Broccoli Soup & Christmas Porridge
We are going to Sweden today. It is a Scandinavian country in Northern Europe. Two of my brothers-in-law live there now. We went to Sweden 5 years ago and had a chance to visit Stockholm (Capital of Sweden) and Gothenburg. It is a beautiful country and we had a great time there. Good thing about visiting a new country, not as a tourist but as a guest is that we got a chance to see the country more up close. We went to couple of grocery stores with my BIL's family that I'm sure we would have skipped if we were tourists.

Visiting Sweden

We didn't get a chance to taste Swedish dishes. We had good home cooked meals, so didn't go out much for food. But even if we did finding vegetarian is a little difficult in Sweden. Fish, meat, potatoes and dairy products play prominent role. Supermarkets are stocked with hundreds of different varieties of yogurt and milk. It took us forever to decide what to choose and buy from the vast collection. My son, who was about 20 months old at the time, had a gala time enjoying the flavored yogurts and the smoothies.

We bought this Swedish Princess Cake (don't remember the occasion now -- it wasn't anybody's brithday!!). It is a layer cake with alternating layers of airy sponge cake with raspberry or strawberry jam, pastry cream, and a thick domed layer of whipped cream. A green colored marzipan layer covers the entire cake giving it a smooth round top. It is then sprinkled with powdered sugar and a pink rose is put as decoration.

This is the very famous Princess Cake that we ate in Sweden.
Ikea, world's largest furniture retailer was founded in Sweden. I am a big fan of Ikea, more for the food props than the furniture. Ikea has a restaurant in store where they sell Swedish meatballs and other Swedish dishes. They also sell Swedish snacks, drinks, cheese and jams there. I often buy their muesli, cheese and jam.

I initially wanted to make Swedish Cinnamon rolls, but then after the Russian meal -- I wanted to make another meal for Sweden and then saw Rajani's Smörgåstårta or Swedish Sandwich Cake and I wanted to try it. So here's my Swedish meal menu:
