I found this Russian Potato Salad called Salad Olivier on Smitten Kitchen. It is a very simple potato salad but the addition of dill pickles, carrots and peas makes it a little different. I never bought dill pickles before and I didn't realize there were 20 different kinds of pickles in the store. It took me good 10 minutes to figure out what to buy. Carrots and peas make the salad look more colorful.

Ingredients: Serves 2~3
Russet Potato - 1 large
Red or White Onion - 2tbsp, finely chopped
Egg - 1, hard boiled (optional)
Carrot - 3tbsp, diced and cooked
Peas - 3tbsp
Dill pickles - 1, chopped
Mayonnaise - ¼cup (or use 2tbsp each of mayo & sour cream)
Salt & Pepper - to taste
Salt & Pepper - to taste
Method:
- Boil potatoes until fork tender. I pressure cooked mine for 2 whistles. Peel and chop into ¼"~½" pieces.
- Combine all the ingredients and mix well until combined. Serve!!

ReplyDeleteI live near a Russian area in Brooklyn called Brighton Beach and you should see the variety of pickles. It's like olives in a Middle Eastern markets. rows and rows of choices , spicy, sweet, dill...it can be intimidating so I understand why it took you so long to decide
