Coconut Peanut Sesame Chutney

I'm always looking for different chutneys to serve with idli, dosa or upma. So when Priya did a whole month of Dosa-chutney recipes for the mega marathon, I knew I will have a lot of interesting chutneys and dosas bookmarked to try.

I really wanted to try her jackfruit savory dosa and the breadfruit peel chutney, but haven't had a chance. Do check Priya's space from some amazing Indian and International dishes, her bakes are out of this world.

Zucchini Thoran (Kerala Style Zucchini stir fry)

Day 25: Z for Zucchini Thoran
It is the last and final day of this month's mega marathon and time sure flew right by. For letter Z, I knew I had to make something with Zucchini, but it took me a while to finalize on what to make.

After discussing with Rajani about the possible zucchini dishes to make, I finally made this zucchini thoran from Kitchen Mishmash. Thoran is a very simple and basic Kerala dry curry that can be made with just about any fresh vegetable. I make cabbage thoran quite often, so I tried making zucchini thoran this time.

Wheat Payasam (Kerala Style)

BM# 63: Journey through the Cuisines 
Week 4: Kerala Cuisine 
Day 23: W for Wheat Payasam
I went straight to Rajani's blog for today's letter. She did an A-Z Kerala Sadya recipes for one of the previous mega marathons and I knew she will have the perfect dish with the letter W. Rajani didn't disappoint me, this Wheat payasam, Kerala style with coconut milk was so decadent and delicious.
Kerala Style Wheat Kheer
This payasam is made with cracked wheat or broken wheat, sweetened with jaggery and simmered in coconut milk. I used fine bulgur wheat and it worked just perfect for this recipe.

Vellarikka Curry (Kerala style Cucumber Curry)

Day 22: V for Vellarikka Curry
There were quite a few options for the letter V in Malayalam. Raw banana (vazhakai), eggplant (vazhuthananga), okra (vendakai) and garlic (velluthulli). I finally ended up picking Vellarikka or cucumber.
Kerala style Cucumber Curry
This Kerala cucumber curry is a simple side dish made with ground coconut and yogurt sauce. With all these coconut based Kerala dishes I probably ate more coconut in a week than I normally would in a month. I'm not complaining though, it's just that we don't use this much coconut in our everyday cooking. On another note, adding coconut to diet has many health benefits like improving heart health, improves digestion, quick energy boost and so on.

Ulli Theeyal (Kerala Onion Masala Curry)

Day 21: U for Ulli Theeyal
We are starting the final week of 'Journey through the Cuisines' mega marathon and I'm visiting beautiful Kerala -- God's own country this week. My plan for the marathon was to pick a state from each corner of the country -- so I started from the west with Bengali cuisine, then moved north to Rajasthan and then east to Gujarat. Finally this week I'm in deep south in Kerala.

Initially I wanted to do Tamil cuisine and even made 2 dishes, but somehow I wasn't happy with my choice of dishes, so I changed it to Kerala at the very last minute.

Oondhiyu (Undhiyu) (Gujarati Mixed Vegetable dish)

BM# 63: Journey through the Cuisines 
Week 3: Gujarati Cuisine 
Day 15: O for Oondhiyu
We are starting third week of our mega marathon 'Journey through the cuisines' and my choice for this week is 'Gujarati cuisine'. The main reason for picking Gujarat is to cook today's dish. I wanted to try this delicious mixed vegetable dish called Undhiyu or Oondhiyu for the mega marathon and initially I was thinking of doing Gujarati cuisine for the last week (so U would have been Undhiyu), but I couldn't find dishes for most of the other letters, so it became Oondhiyu instead.

This was actually the very first dish I cooked for the marathon. Few months ago, I ate Undhiyu for the very first time at one of our Gujju friends and it was absolutely amazing. Since then I had it in my mind and when I sat down to make my list for the marathon, this was the first one on there.

Coconut Cookies (using Coconut flour)

Dish: Coconut Cookies
For the final day of this week's marathon under 'Cook with Coconut', I made these cookies with coconut flour, coconut milk and grated dry coconut. You can already understand how coconutty these cookies taste.

Recipe is from 'Good to the Grains' cookbook. The recipe uses barley flour along with coconut flour with no all purpose flour, but you would never know from the light crumb. They are crunchy on the outside and soft and cakey inside.

Spicy Coconut Rice (Masala Kobbari Annam)

We are starting a new week of blogging marathon today and my theme for the week is 'Cook with Coconut'. Coconut is a very interesting ingredient in that it comes in so many different forms, oil, milk, fresh grated, desiccated, flour and sugar. So this week I have 3 recipes using various forms of coconut.

First up is a delicious rice made with fresh grated coconut. Recipe is from Suma's blog. I made it a few days after she posted the recipe. It is a spicy version of regular coconut rice with some added masalas as well.

I love chickpeas in any form and this recipe with coconut and minimum spices is easy to make and is one of my favorites. I made it for Sankranthi along with pulihora and bobbatlu, for prasadam that day.

Today I have a delicious variation to tamarind rice. I bookmarked this coconut tamarind rice recipe from Priya's blog the minute I saw it. I made it couple of weeks back and it tasted amazing, so simple to make but very flavorful and delicious.
Tamarind Rice with Coconut
Tamarind rice is one of the dishes that is made very frequently in my household, typically around the end of the week when I'm running out of veggies and also during festival season. Both my kids love peanuts, so I had a little extra for them in this dish.

My theme for this week's Blogging marathon is probably one of my favorite. It is 'Meal Ideas', Valli wants us to showcase a complete meal even if that means sharing just one recipe. Coming up with a plan for a meal is quite an exercise for the brain which is why most of us try to delegate the task to the family by asking, 'what do you want to eat today?' I am one of those people who will ask this question and then reject almost everything that is being requested, only on very rare occasions a suggestion is actually cooked. But I don't fail to ask the question ;-)

We are starting a new week of blogging marathon today and my theme for this week is 'Salads'. Growing up, salads were never part of our meal and the first time I ate a salad was during my Masters orientation in the US. The less about the experience the better and most of my fellow Indian students shared the same feeling.

But through the years I grew older, wiser and my palate changed for the better. Salads used to be just part of the meal once but now I can eat a salad and call it a day. So I'm always looking for new salads to add to my repertoire.

Green Beans Masala Poriyal

This green beans curry is spicy and is a great variation to regular green beans curry that I make at home. Recipe is from Dakshin by Chandra Padmanabhan.

Poriyal is Tamil name for fried or sauteed vegetables. In our home, anything made with a vegetable is called 'kura'. If it is a dry curry it is called podi kura, gravy based curries don't usually get any prefix and they are simply called kura. So it is interesting to hear the various names for curries in other languages -- poriyal, thoran, palya etc etc.

Chayote & Carrot Dry Curry

We are starting a brand new week of blogging marathon and my theme for this week is 'Dry Vegetable Sautes or Dry Curries'. I just realized that all the themes I picked for this month require easy to make, everyday dishes which was just perfect because with the upcoming festive season, it is going to be a food fest wherever you turn :-)
Chow Chow Curry
This first curry doesn't even need a recipe, it is extremely easy to make. Just saute the chopped veggies until tender and sprinkle some grated coconut on top. My mom used to make a lot of dry curries like that using cabbage, carrot, green beans, snake gourd, chayote and so on.

Sorakaya Kobbari Karam kura (Bottle gourd/ Lauki Coconut Curry)

It snowed the whole day today. Winter is going strong and is not tired even a little bit. But all of us have had enough and can't wait for some warm weather. The roads seemed treacherous today with the snow sticking to the ground and turning slushy, luckily we didn't have to go outside because the schools were closed and the husband worked from home.

Also, luckily I had the ingredients for today's curry already in the fridge and that's what we had a cozy lunch today. I watched this recipe on a Telugu cooking show recently and noted it down to try.

Balehannu Halwa (Coconut - Banana Halwa)

This is the final dish I made for Sankranthi. The actual festival was very low key, but we are heading to our cousin's place this weekend for some belated celebrations. My cousin puts up a beautiful golu and she also celebrates 'bhogi pallu' for the kids.
As I was thinking of what to bring, I found this interesting halwa with coconut and banana in 'Vegetarian Cookbook of India' cookbook by Mridula Baljekar. I had bananas that needed to be used up before leaving for the weekend, so this was a perfect recipe to make good use of them.

Also the recipe uses dry grated coconut cooked in some whole milk to give the texture of fresh coconut. Finding good fresh coconut is a little difficult here, but I always have dry grated coconut in my fridge, so this is a very convenient recipe to make for me.

Carrot Poriyal (Carrot-Kobbari Kura)

Here's wishing everyone a very Happy, Healthy & prosperous New Year -- 2015.
Hope everyone had a fun filled joyous holiday. Fun means lots of food in my book and I sure had lots and lots of fun for the past couple of weeks. After all the delicious bakes and holiday specials that I posted at the end of the year, I wanted to start the New Year with a healthy & simple dish.
Carrot Poriyal (Carrot-Kobbari Kura)
I watched this recipe on a Telugu cooking show and loved how simple it was with very few ingredients. My mom makes dry carrot curry with coconut, but this recipe uses grated carrot along with some ginger and coconut making it a little different from what I'm used to. I bought a bag of shredded carrots from Trader Joe's for a shortcut, but shredding it yourself will be a good bicep exercise :-)

Sri Lankan Coconut Rice

This Sri Lankan coconut rice is a tasty accompaniment not only to the Sri Lankan vegetable curry but also to any spicy curry. Fresh grated coconut is added to cooked rice along with fried peanuts and a flavorful tempering.

I loved the addition of soaked dals to the tempering, I think it made the dals nice and crunchy when sauteed. I used coconut oil to enhance the coconut flavor, but ghee or regular cooking oil can also be used.

Kobbari Paramannam (Coconut Rice Pudding -- Vegan recipe)

Happy Dasara to All
Here's a simple and slightly different Parvannam/ paramannam to offer to god during this festival season. Traditionally paravannam is made using dairy milk, but this is made with coconut milk. To enhance the coconut flavor, grated coconut is also added.

I saw this dish being made on a Telugu cooking show and wanted to try it during the Navratri season. It uses jaggery instead of sugar making this a refined food free dish that is perfect for this festival season.
