Pan Seared Oatmeal with Warm Fruit Compote

Dish: Pan Seared Oatmeal with Warm Fruit Compote 
Oatmeal is one of my favorite breakfast foods and I can have it either sweet or savory in the morning. I soak them in milk and ground cinnamon the night before, if I remember, and they are ready for me in the morning. I eat them along with some seasonal fruit and nuts and I'm good to go till lunch.

Since this week is all about brunch recipes, I have a slightly elaborate dish with oats that is perfect for a leisurely brunch or even to serve for company. The good thing about this dish is both the components can be prepared ahead of time and it takes just a few minutes to pan sear the oatmeal triangles and warm the compote.

For the final day of this year's blogging marathon, I have a very healthy & delicious variation to regular oatmeal. I bookmarked the recipe from Joy the Baker's blog and made it almost a year ago in January of this year. Finally these healthy oats are seeing the light of day today :-)

Overnight Steel Cut Oats

VeganMofo Day 28: We are bracing ourselves for the super storm, Sandy. Hopefully we will have our electricity and internet connections intact. Last year we had the untimely snow storm around the same time and Halloween parades were cancelled as a result. My 5 year old has his costume picked out and he's been talking about Halloween since the beginning of October. So we are keeping our fingers crossed that the storm is not as bad as the weather department is predicting.

Five Grain Cereal with Dried Fruit

For Day 2 of BM# 16 I made this healthy and delicious 5-grain cereal with dried fruits. We just came back from our vacation to Disney World in Orlando, Florida and I can't seem to forget the oats that I ate for breakfast in the resort for almost everyday. It was just simple cooked oats and they would add your favorite toppings on it -- either fresh berries/ dried fruits/ nuts etc. It was very filling and would keep me going until afternoon.

So when we got back I wanted to make something similar but more hearty and healthy. I found the recipe for this 5-grain cereal in "Cooking Light - Way to Cook Vegetarian" cookbook. Recipe makes about 10-12 servings, I made me a whole batch and stored it in an air tight container in the fridge, this way I can make my bowl of cereal whenever I feel like it.
