Taco Salad (Vegetarian Recipe)

Dish: Taco Salad
Today's dish from Taste of Home top 100 recipes is this delicious Taco Salad. I wanted to make taco salad for a while now and when I saw it on the top 100 I knew I had to give it a try. Original recipe also has cooked meat but I omitted it and just made the rest of the recipe.
Vegetarian Taco Salad
Key to this recipe is the dressing that is made with Thousand Island dressing. You can either use store bought Thousand Island dressing or make it yourself at home. I didn't want to buy a jar since I know I will let it sit in the fridge for god knows how long.

We are starting a new week of blogging marathon today and my theme for this week is 'Salads'. Growing up, salads were never part of our meal and the first time I ate a salad was during my Masters orientation in the US. The less about the experience the better and most of my fellow Indian students shared the same feeling.

But through the years I grew older, wiser and my palate changed for the better. Salads used to be just part of the meal once but now I can eat a salad and call it a day. So I'm always looking for new salads to add to my repertoire.

We are starting a new week of blogging marathon and my theme is to cook from 'Food52 Recipe Contest winners'. I didn't really know about Food52 until I signed up for this and now it has vecome my go-to site to look for for new recipes.

Salad with Black beans & Corn and Citrus Blasamic Vinaigrette

Blogging Marathon# 38: Week 1/ Day 2
Theme: Soup or Salad with Sides 
Dish: Salad with Black beans & Corn with Cheese Quesadilla
For Day 2 of BM# 38, I have a simple salad served with cheese quesadilla. This salad is inspired from a dish that is on Chili's menu -- Quesadilla explosion Salad. We were at Chili's couple of weeks ago and saw it on the menu, though I didn't order it. Not sure if I already told you, I don't order salads when we go out. I feel like I have to eat actual food and not salads at restaurants. In my mind, I think I can make salads at home and don't want to spend money on a salad at a sit down restaurant.

Well anyway, coming back to the Quesadilla explosion salad; I googled for the recipe and found that it is one of the unhealthiest salads served at a restaurant. It has a full day worth of salt and ¾of the day's worth calories. It made me feel even better because you would think ordering salad is a good thing -- but apparently it's not such a good thing afterall.

Refrigerator Soup

Blogging Marathon# 38: Week 1/ Day 1 
Theme: Soup or Salad with Sides 
Dish: Refrigerator Soup with Zucchini Tortilla/ Omelette 
It's time for another blogging marathon, BM# 38 and my theme for this week is 'Soup or Salad with Sides'. Valli wants us to pair soups or salads with a side dish. So for the first day I made a very simple soup. 'Very simple' is the key word here, you might actually feel cheated when you read the recipe, it is THAT simple.
March is already here, but winter with bitter cold decided to stick around for a little too long this year in our neck of woods. This season's 13th storm is on its way as I type this post -- but thankfully it's only going to 1~2" of snow instead of the 8~12" as predicted.
Refrigerator Soup
With that weather report, you know why I have a soup recipe today. That too a super simple one. I was watching the Rachael Ray show the other day and saw Jacques Pepin make his refrigerator soup. It sounded so comforting and perfect to eat in this weather, so I made it the very next day with whatever veggies I had in the fridge.

Vegetarian Summer Rolls (Vegetarian Vietnamese Rolls)

Dish: Summer Rolls (Vietnamese Rolls)
We are starting our 2nd of Blogging Marathon# 30 today and my theme for this week is "Get it Rolled". Any dish that is cooked rolled or served as a roll. Summer rolls were the first thing that came to my mind and with the temperatures soaring in the 90s (degree Fahrenheit), these are perfect no-cook rolls that are filling, healthy and delicious. They are salad rolled up into a portable package -- easy to eat and very convenient.

Summer rolls are very versatile and any of your favorite veggies can be used. I followed Nupur's recipe for Summer rolls. The spicy peanut dipping sauce is to die for -- its salty, spicy, sweet and very addictive.
