Coconut Cookies (using Coconut flour)

Blogging Marathon# 62: Week 3/ Day 3

Dish: Coconut Cookies
For the final day of this week's marathon under 'Cook with Coconut', I made these cookies with coconut flour, coconut milk and grated dry coconut. You can already understand how coconutty these cookies taste.

Recipe is from 'Good to the Grains' cookbook. The recipe uses barley flour along with coconut flour with no all purpose flour, but you would never know from the light crumb. They are crunchy on the outside and soft and cakey inside.

Pancakes with Multigrain Flour and buttermilk

Today I have a healthy and nutritious multigrain pancakes. I recently borrowed this 'Good to the Grain: Baking with Whole grain flours' cookbook from the library. I was hoping to find a bread recipe for this month's Breadbakers 'Breads with Ancient grains' theme. Unfortunately most of the recipes in this book had whole wheat flour in them.

But I did find a few recipes that looked very good and these pancakes made with Multigrain flour is one of them. There is a master recipe for multigrain flour mix that can be made in large quantity and kept in the pantry along with your other flours. It can be used in place of or along with other flours in any of your baking recipes.

Chocolate Malted Muffins

Dish: Chocolate Malted Muffins
For the 3rd and final day of this week's blogging marathon, I made these delicious Chocolate Malted Muffins. These go to Kalyani's 'Kid Delight -- Cooking with Whole grains' event (an event started by Valli).
Chocolate Muffins with Malted Milk Powder
I usually substitute some of the all purpose flour with wholewheat flour and wholewheat pastry flour to add some whole grains and fiber to my bakes. I have also used barley flour in a strawberry cake but this recipe uses 1 cup barley flour and is the main ingredient for this muffin.

Corn Pizza on Multigrain Crust for #BreadBakers

'Whole Grain breads' is the theme for this month's #BreadBakers challenge. Thanks to Cali's Cuisine for choosing this interesting theme. Any yeasted or chemically leavened bread using at least half of the grains whole is what we need to come up for the challenge.

So I did the easiest thing I can do, opened my Whole Grain Baking cookbook by King Arthur Flour and found this Corn Pizza recipe with Multi grain crust. The crust has cornmeal, barley flour and wholewheat flour along with a little bit of bread flour. Per serving there are 43gms of whole grains in this recipe.

Fresh Strawberry Cake

Bake of the Day: Celebration Cakes --  Fresh Strawberry Cake
I first saw this strawberry cake on Siri's blog. This cake recipe was making rounds in Facebook couple of months ago. A Strawberry Winter Cake movement was also started because it was strawberry season in India. All the cakes shared looked so amazing that I had to jump on the bandwagon and make this cake right away. This cake celebrates Summer in a delicious way!!
Fresh Strawberry Cake
Even though it wasn't really strawberry season then (I still remember the super cold winter -- brrrrr), I found some decent strawberries and made this cake. It is a very pretty cake with whole strawberries beautifully arranged on top. I should have put the strawberries a little closer on top -- they seemed to have drifted apart after baking.
