Jaipuri Vegetable Pulao

Day 10: J for Jaipuri Pulao
Today I have a easy to make, colorful and delicious rice dish. Being a south Indian, I am attracted to rice dishes like a magnet and so J is for Jaipuri Pulao it is. This is a great dish to make on a busy weeknight or to serve at a fancy party.
Recipe is from this You Tube video by Ruchi Bharani. Cooked basmati is tossed with colorful veggies and a freshly ground spice paste. So once you have the spice paste ready, the recipe comes together in no time.

Bengali Mishti Pulao with Vegetables

I made this Bengali Mishti pulao to go with the Enchor Kofta curry. Typically this pulao is made using Gobindo bhog rice which is an aromatic short grain rice, very popular in Bengali households. I've never seen it in Indian stores here, so I used regular basmati rice. Soma says good quality jasmine rice can also be used instead.

Rice is rinsed, drained and dried for at least 30 minutes before making the dish. It is then sauteed with whole spices until aromatic and then cooked till tender. Care is taken to make sure each rice grain is separate and the dish doesn't end up becoming mushy.

Spicy Coconut Rice (Masala Kobbari Annam)

We are starting a new week of blogging marathon today and my theme for the week is 'Cook with Coconut'. Coconut is a very interesting ingredient in that it comes in so many different forms, oil, milk, fresh grated, desiccated, flour and sugar. So this week I have 3 recipes using various forms of coconut.

First up is a delicious rice made with fresh grated coconut. Recipe is from Suma's blog. I made it a few days after she posted the recipe. It is a spicy version of regular coconut rice with some added masalas as well.

Vegetable Makhani Rice

Dish: Vegetable Makhani Rice
After yesterday's South Indian rice dish, I have this North Indian rice dish. Makhani gravy is a reddish tomato based gravy made with butter and cream (hence the name makhani), commonly used in North Indian dishes. It is very popular on restaurant menus and paneer makhani is quite famous.

Here the makhani gravy is mixed with basmati rice to make this creamy and delicious rice that is equally good to perfect to serve at dinner parties or as a quick weeknight meal. Recipe is from a Telugu cooking show.

Kashmiri Saffron or Kesar Rice

Final dish on my mini Kashmiri thali is this saffron or kesar rice. Saffron flavors this simple rice dish along with some more spices. I added some turmeric to give the rice a little more color. Serve with simple rice with a spicy gravy curry.

Green Mango-Potato Pulao

Sometimes I wonder if I would be this adventurous at making new dishes if I was not a food blogger. I saw the recipe for this raw mango & potato pulao on a Telugu cooking show one day and made it the same day because I had all the ingredients on hand. As I was making it, I started wondering if I would try this combination if I wasn't thinking about posting it on the blog.

After that I started wondering how the dish would taste and how the husband would like it. The dish ended up tasting pretty good, even though in hindsight I should have added a little more chili powder and green chilies to make it a little more spicy.

We are starting a new edition of Blogging Marathon today and my theme for this week is 'Festival Special. Since it's November and we are only few weeks away from Thanksgiving, I decided to make some easy Vegetarian dishes for the occasion.
Thanksgiving Day is a national holiday that is celebrated on the fourth Thursday in the United States. It is the day of giving thanks for the blessing of the harvest and of the preceding year. The holiday's history in North America is rooted in English traditions -- it has aspects of harvest festival almost similar to that of Pongal in South India.

For the very first Thanksgiving in the US, the Dean of our Department invited few of us poor graduate students who didn't have anywhere to go. There was so much food and that was the first turkey I saw in my life (dead that is...) Thankfully they had lot of vegetarian food too that I was able to enjoy.

We are celebrating Sapana's Virtual Baby Shower' today. Welcoming a new bundle of joy into the family is a very exciting time for the whole family and especially to the mom. So Sapana, here's wishing you 'All the very best for the new arrival'.

So our BM group decided to cook from Sapana to celebrate her Virtual Baby Shower. I picked a simple one-pot dish, Paneer Pulao from Sapana's blog. This dish was a hit with my family. I made minor changes to the original recipe to suit for taste preference.

Sprouts Mixed Vegetable Pulao

Today's recipe is from a Telugu cooking show and I have made it a number of times since I watched the show. It is a healthy and delicious dish with sprouts, mixed vegetables and spicy masala paste. This is a great way to use sprouts and with the addition of mixed vegetables, it is a balanced dish to serve for lunch or dinner. It also reheats really well making it perfect for lunchboxes.

Iranian Jeweled Rice (Vegan recipe)

For this month's International Cooking Challenge, our host Savitha Ramesh @ Savitha's Kitchen has taken us on a culinary tour of Persia/ Iran. Iranian cuisine or Persian cuisine refers to the traditional and modern styles of cooking related to Iran. Situated in the Middle East, the Iranian culinary style is unique to Iran, but it has been influenced by Iran's neighbouring regions at various stages throughout its history.
Many foods famously associated with Middle Eastern, and indeed World cuisine have their origins in Iran, such as kebab and ice cream. Fresh green herbs are frequently used along with fruits such as plums, pomegranates, quince, prunes, apricots, and raisins. Typical Persian main dishes are combination of rice with meat, lamb, chicken, or fish and some onion, vegetables, nuts, and herbs. To achieve a balanced taste, characteristic Persian flavorings such as saffron, dried limes, cinnamon, and parsley are mixed delicately and used in some special dishes.

I made this very flavorful and colorful Iranian Jeweled Rice. It is sweet, nutty and very aromatic. I'm lucky to live in an area that is close to good Turkish/ middle eastern groceries and I have access to good quality ingredients. I bought orange blossom water on one of my so-called 'window' shopping days, which was put to good use in this recipe.

Cabbage-Pudina Pulao (Cabbage Mint Pilaf)

Can't believe there's only 10 days left for Christmas. But the weather here has been sending quite a few signals that it is almost winter and holiday season is just around the corner. We had 2 snow storms this week and the temperatures are below freezing. Can't wait for winter to end even before it started :-)
After that brief weather report, here's what's cooking in my house. I made this quick and easy (almost) 1 pot dish for one of our meals last week. Recipe is from a Telugu cooking show. I already have 2 cabbage rice recipes on the blog, but this one has whole garam masala spices and ground masala that gives a nice flavor to the dish.

In the original recipe, rice was cooked with the veggies in the pot making it a 1-pot dish, but I cooked the rice separately and added it to the veggies at the end. All in all it is a tasty variation to regular pulaos and can be prepared in short amount of time.

Corn & Rajma (Kidney beans) Pulao (Pilaf)

Dish: Corn & Kidney beans Pulao
After using sweet corn in this uggani and baby corn in this masala curry, I'm combining both of these corns in a rice dish today. Recipe idea is from a Telugu cooking show. Original recipe used baby corn and rajma (red kidney beans), but I put some sweet corn that I had in the fridge.

If you have cooked rice and beans on hand, this dish takes literally minutes to complete. I made this for my lunch today. I had very little time to cook before I had to go pick my daughter from her play school. As I said this is a super quick dish to make if you have everything ready. I was able to cook, click and then go pick my daughter right on time.

Pineapple Sweet Pulao

This post has been in my drafts for exactly 9 months. It's waiting to see the light of day (or the light of your monitor) for way too long. It didn't fit any of the BM themes till now. I saw the recipe being made on one of the Telugu cooking show.
Pineapple Sweet PulaoAs the name suggests this is a sweet pulao made with pineapple chunks and basmati rice. Addition of whole garam masala is the interesting part of the dish. All in all it is a simple dish packed with flavors. Give it a try if you are looking for a different dish.

Shahi Biryani

I have started to enjoy making Biryanis, both to entertain and also for Sunday lunches. You can tell from the increase in the biryani recipes on the blog in the recent past. Once the rice and spiced veggies on done, then all is left to do is the layering part which is my favorite thing to do. The layered look is very pretty on the plate too. Also it is easy to multiply the ingredients and make them for a crowd.

I'm on the look out for new and interesting biryani recipes and when I saw this being made on a Telugu cooking show, I promptly noted it down. This biryani has a spice paste that gives all the flavor to the dish.

Quick Tawa Rice

Dish: Tarla Dalal's Quick Tawa Rice
One of my favorite Indian Chef is Tarla Dalal. I still remember watching her show on Sony TV from 12~15 years back and noting down the recipes. I used to bug my mom to buy the ingredients from super market to try the recipes. I love the way she makes all the dishes so simple and easy to make.
So for Day 3 of BM# 33, I made this quick Tawa rice by Tarla Dalal. I used to print out recipes from Tarla Dalal.com some 6~8 years back. I neatly them put in a binder and kept it safely in the basement. While looking for recipes for this week, I looked through the binder, but couldn't find anything to make with the ingredients I had on hand. A quick Google search landed me on this recipe and Tarla Dalal's Youtube video. I made it right away for lunch and really liked it. This dish is going to be on our meal rotation going forward.

The dry red chili - garlic paste gives this dish so much flavor and it smells heavenly while cooking and even after cooking. My addition to this dish is a spoonful of pav bhaji masala, other than that I kept it close to the original.

I can't believe today's the last day for our month long Blogging Marathon. This month flew by so fast and I've enjoyed cooking dishes from my home state of Andhra Pradesh. It has been quite a culinary journey that involved learning new dishes that I've never known or made before (like Vegetarian Haleem or Sheer Qurma) and making some traditional dishes that I've grown up with (like Lauju or kobbari kura or these comforting dals).
A big THANKS to Valli, our gracious host and organizer for the amazing ideas and being the driving force behind all of this action. Thanks to ALL the lovely ladies who did this month long marathon for your constant support. Thanks to ALL my blog readers. Last but not the least huge thanks to my family for all your ideas and encouragement.

For the final letter Z, I made Hyderabadi Zafrani Pulao. This dish was almost set in stone and never changed throughout the marathon planning. I couldn't think of any other dish with Z and was happy the minute I found this recipe on Vahrehvah site.

Qabooli Biryani (Hyderabadi Chana dal Biryani)

Theme: A-Z Dishes from Andhra Pradesh
Dish: Q for Qabooli Biryani (Hyderabadi Chana dal Biryani)
Letter Q stands for Qubani (apricots). Qubani ka Meetha is a very famous Hyderabadi dessert that is made with dried apricots that are soaked and then cooked with sugar and drizzled with cream. I wanted to make it, but couldn't find good quality apricots. So I made Qabooli instead.

Qabooli is biryani made with spicy chana dal (split pea lentil) and layered with basmati rice. I used black chana/ chickpeas instead and it turned out quite tasty. This is a filling and delicious dish that is great to make when you have company.

Mango Coconut Pulao (Pilaf)

After trying Mango curry, I was ready to expand my raw mango recipe repertoire. So when I saw this recipe for Mango-Coconut Pulao on a telugu cooking show, I promptly noted it down.

With Summer being in full swing in our neck of woods, fresh green mangoes are widely available in the Indian groceries. I always make sure that I get a few, so I can use them to make pappu (dal) or this aam ka panna or this masala curry. But this mango coconut pulao is simple to make and is perfect one-pot meal for weeknights.

Dal Biryani

It's been a while that I sent an entry to Susan @ Well Seasoned Cook's famous My Legume Love Affair (MLLA) event. This month's edition is being hosted by lovely Nupur @ One Hot Stove. I love legumes and they are integral part of my cooking. My 5 year old LOVES dal chawal and I'm very glad that I can sneak in any veggie in to a dal and he'll eat it without complaining. So much for little victories :-)
This Dal Biryani recipe is adapted from one of the Telugu cooking shows that I recently watched. I really loved the idea of using dal in biryani, it makes it a complete dish with the required carbs, protein and fat. It is filling and delicious to boot.

The original recipe was for 'Panchratan Dal Biryani' with 5 different legumes. But I remember a nutrition expert on one of the other cooking shows saying that 'adding more good things to a dish is not necessarily good for health'. She mentioned that using a lot of different beans/ nuts/ oils/ seeds (anything for that matter) slows down the body from absorbing the good nutrients from each of the ingredient. I don't know if that is true or not, but I used only 3 legumes -- Chickpeas, Adzuki beans and Moong beans. But the recipe is versatile and any sturdy legume that doesn't become mushy when cooked can be used.
