Methi Tomato Paneer

This Methi-Tomato Paneer curry recipe is from a Telugu cooking show. It is a simple curry with very simple ingredients, methi, tomato and paneer. It is a great side dish for rice or roti.

I planted my little vegetable garden few weeks back and the saplings have slowly started to grow. My methi plants are also slowly grwoing. Hopefully I can get to cook with my own methi leaves soon :-)

Hara Butter Paneer Masala (Spicy Green Curry with Paneer)

For the final day of this week's 'No Tomato Gravies' theme I have an interesting curry made with green pepper and cilantro. Regular butter masala is made with butter, tomatoes puree and cream. This 'green' version is made with butter, green pepper, cilantro and cream.
Spicy Green Curry with Paneer
This recipe is from a Telugu cooking show and it looked too good to pass on. It is very easy to make once you have hara/ green masala prepped. Switch paneer with other protein like tofu, chickpeas or beans and skip the cream and use vegan butter for a vegan version of the curry.

Spinach & Paneer Stuffed Paratha

Today's Stuffed dish is a simple paratha that is stuffed with spinach and grated paneer. I call it a simple dish because the filling is not really stuffed into the dough, it is put on the roti and folded while cooking making this a perfect recipe for anyone who thinks making stuffed rotis is difficult.

There are about 3~4 versions for palak paneer parathas on Tarla Dalal's site and this was probably the easiest one to make, perfect even for the most novice cook.

Shaam Savera (Spinach-Paneer balls in Tomato sauce)

I have a rich and decadent restaurant style curry today. It is called 'Shaam-Savera' aka Spinach-paneer koftas in tomato sauce. I ate it once in an Indian restaurant and absolutely loved the dish. I have been looking for the recipe and an opportunity to make it ever since.

We had my mom and sister's family come over for my son's birthday last month and I made this curry along with yesterday's post Aloo-Gobhi, Mughlai parathas and Jeera rice for dinner. It was a restaurant style meal without going to the restaurant :-)

I have made scrambled tofu but never tried scrambles paneer even though I've seen the recipe many times on various blogs. This recipe for paneer bhurji has veggies and spices to make it more substantial and is a great breakfast dish that can be made even on a weekday.

Shahi Mixed Vegetable & Paneer Curry

I made this creamy and colorful mixed vegetable curry to go with the Khamiri rotis. 'Shahi' literally means regal or royal, so any dish with that in the name means it's going to be rich and flavorful.

Here's a delicious biryani made with paneer for all paneer and biryani fans. Paneer is cooked with tomatoes, spices and some cream to make a lip smacking curry that is layered with basmati rice and then baked off (or cooked on dum) for an awesome tasting biryani that is sure to wow anyone.

I had more than a gallon of 1% milk that needed to be used up real fast, so I made paneer flavored with cumin seeds, ground coriander, chili flakes and kasuri methi. Now that I had that in the fridge, I was looking for recipes to use it and found the recipe for Makhani Paneer biryani here. It sounded like the perfect dish to make with my homemade flavored paneer.

Kashmiri Paneer Tikka Masala (Vegetarian recipe)

After making Lucknowi dal and Punjabi Kadhi Pakora for the first 2 days of North Indian side dishes, for the final day this week's BM, I made a spicy Kashmiri Paneer Tikka masala. I actually made all of the dishes on the same day and they can all be served together as part of a North Indian meal/ thali along with simple jeera rice or roti.

My mom bought a jar of Kashmiri Tikka masala from her Kashmir trip and I used it in this curry. But the tikka masala can also be made at home. I'm including the recipe for tikka masala from 660 curries here.

So our BM group decided to cook from Sapana to celebrate her Virtual Baby Shower. I picked a simple one-pot dish, Paneer Pulao from Sapana's blog. This dish was a hit with my family. I made minor changes to the original recipe to suit for taste preference.

Palak Paneer (Curried Spinach & Cottage Cheese)

Palak Paneer is probably one dish that is on ALL Indian restaurant menu cards around the world. Restaurant can be South Indian, North Indian or any Indian cuisine at all, I'm sure all of them have Saag Paneer or Palak Paneer on their menu. It is that famous and if you are an Indian food aficionado, you probably tasted it at least once. 
There are quite a few recipes on the internet for palak paneer. Each one using different spice blends and some blend the spinach to a paste and some use it just as is. I like my palak paneer creamy and smooth.

Haryana -- Bajre ki Roti & Paneer Do Pyaza

Dish: Bajre ki Roti & Paneer Do Pyaza
Haryana is a state in North India. It came into existence on 1 November 1966 as a newly created state carved out of Punjab state on the basis of language. Haryana is a leading contributor to the country's production of foodgrain and milk. Agriculture is the leading occupation for the residents of the state.

Cuisine: Haryana's cuisine is very similar to that of Punjab, since it was a part of Punjab. With the availability of milk in abundance, milk products like paneer and ghee are used extensively in cooking. Wheat, jowar (millet) are also widely used.
Staple Food: Wheat, Jowar, Barley, Gram etc.
Specialties: Kadhi, Besan masala roti, Bathua raita, Methi gajar, lassi.

Today's Dish(es): I made rotis with bajra flour. I have seen roti recipes using just bajra flour and some times potato, but I have limited skill making rotis without gluten, so I picked this recipe on Sanjeev Kapoor's site with wheat flour. To serve with the rotis, I made a paneer curry with 2 onions -- paneer do pyaza. Onions are added at 2 different times during the cooking, which makes the curry so delicious and also gives a nice texture to the curry.

Paneer Lababdar

For the final day of this month's blogging marathon, I decided to try 'Paneer Lababdar' - a dish suggested by one of the BM members. This is the first time I heard about this paneer curry and the name itself sounded very interesting that I had to try this dish.

Paneer Veggie Curry in Coconut milk Gravy

Did you know that this week, October 13 - 19 is National Curry Week in the UK? Who you would have thought that there is even such a thing as curry week. Well, it is good news to food bloggers like us - yet another reason to cook up something yummy for your family.
I saw the lovely ladies @ Blogger's buzz team announce about the 'Curry week' on Facebook and really wanted to join in the fun. What's not to love about curry??

After looking through my bookmarks, I found this Paneer-Vegetable Stew recipe from Ecurry. It seemed to be a simple dish with not many spices, so I made some changes to make it more of a curry and less of a stew and served it with some bread for dinner tonight.

Potato Paneer Methi Curry (Alu Paneer Methi Curry)

Dish: Potato Paneer Methi Curry (Alu Paneer Methi Curry)
My theme for this week's BM is 'Cook from a Book'. But to make the theme a little more challenging Valli asked us to pick 2 ingredients from a list and then find a recipe from a cookbook. I got lucky and found the recipes quite easily this time (unlike the last time). 
Potato Paneer Methi Curry (Alu Paneer Methi Curry)
The ingredients I picked for the first day are 'Paneer & Greens". I found a very simple and delicious recipe in 660 Curries by Raghavan Iyer. 660 Curries is usually the first cookbook I refer to when I'm looking for an Indian dish. As the name suggests there are 660 recipes to choose from and it is always tough to pick just one dish.

Frankie is a famous Mumbai snack. It is nothing but a delicious wrap stuffed with meats and vegetables. Frankie's been on my to-make list for a long time now. Not sure why I didn't make it earlier --- since it's so simple to make and all the ingredients used are always in my pantry. 
Frankie is very versatile and can be made entirely with meat or just vegetables and if you skip the egg wash for the wrap, they can be completely vegan too.

For the last day of this month's BM, I made Palak Kofta from the "Hamari Pasand" section of India House Restaurant menu. This recipe is from one of the cooking shows that I have started to watch with my mom on an Indian channel. As if I don't have enough bookmarks of recipes I want to make, I have started to note more recipes from Telugu cooking channels. I think I need 2 lifetimes to make all the recipes on my bookmarks.

Navratan Kurma

For Day 2 of BM# 24 from Indian House Restaurant menu, I chose to make the famous Navratan Kurma. To be honest, Navratan kurma is not something I would order at a restaurant because of a dreadful experience I had with this dish in the past. I don't even remember how long ago this happened, but when I think about Navratan kurma, all I can think of is this really sweet curry with wimpy vegetables and ton of oil floating on top. What really got me was the sweetness that didn't really wasn't supposed to be there, so for years I avoided ordering it in the restaurants. I think I was too emotionally moved to even try at home.

Paneer Stuffed Kulcha

Today's stuffed bread in a restaurant style "Paneer stuffed Kulcha". Kulchas are leavened with baking powder and baking soda. All purpose flour or maida is usually used to make these flatbreads, but I had half a bag of spelt flour in the fridge that is begging to be used, so I used a combination of spelt flour and all-purpose flour to make my kulchas.

Kulchas can be made either on the stove top or in the oven. Today I made them under the broiler. One thing I learnt when using the oven is that you cannot take your eye off of the oven even for a single minute. Kulchas go from perfect to burnt in matter of seconds.
