Spelt Sweet Potato Paratha for #BreadBakers

It's time for this month's BreadBakers' and the theme for this edition is Ancient Grains and is being hosted by Robin at A Shaggy Dough Story. Ancient grains are generally accepted to mean grains that have remained largely unchanged/un-hybridized over the last several hundred years, which means NO MODERN WHEAT.

I have to say this was probably the most challenging theme I have done for the BreadBakers. Finding ancient grains or even their flour was not the hard part, but finding a bread recipe with just ancient grains was hard. Also my family is not much into rustic breads, so my search for soft sandwich bread without any wheat flour turned up nothing.

Navratan Paratha

Blogging Marathon# 59: Week 3/ Day 3
Theme: Stuffed Dishes
Dish: Navratan Paratha
After a stuffed curry and stuffed paratha, I was wondering what to make for the 3rd day in this series. I had some stuffed desserts and pasta dishes bookmarked but nothing really wanted me to get up and cook. Then I watched the recipe for this Navratan paratha on a cooking show and I knew that the 3rd dish was set.

As the name suggests this paratha recipe is stuffed with 9 gems or Nav-ratan or 9 different veggies and dry fruit. All the 9 ingredients are boiled and mashed along with spices and then stuffed inside the dough to make the parathas.

Spinach & Paneer Stuffed Paratha

Dish: Spinach & Paneer Stuffed Paratha
Today's Stuffed dish is a simple paratha that is stuffed with spinach and grated paneer. I call it a simple dish because the filling is not really stuffed into the dough, it is put on the roti and folded while cooking making this a perfect recipe for anyone who thinks making stuffed rotis is difficult.

There are about 3~4 versions for palak paneer parathas on Tarla Dalal's site and this was probably the easiest one to make, perfect even for the most novice cook.

Zucchini Paratha

Blogging Marathon# 49: Week 3/ Day 3
Theme: One Vegetable - 3 Dishes
Dish: Bread - Zucchini Paratha
For the third day of this week's blogging marathon, I wanted to make a bread with Zucchini. I have tried quite a few bread recipes with zucchini, like this sweet carrot-zucchini bread, this everyday sourdough bread and this double chocolate bread. I wasn't in a mood to bake anything or make any sweet dish, so tried making parathas with zucchini.

I kept the paratha recipe simple with just grated zucchini and few spices because I was serving them with a spicy side dish. But you can add more spices and serve it with some yogurt and pickle.

Chili Parotta/ Kothu Parotta

Dish: Chili Parotta
The first time I tasted Chili Parotta was about 4~5 years ago in Saravana bhavan in Edison, NJ. Both my husband and I didn't really like it. It was way too greasy and heavy on the stomach. So that ended my chili parotta eating experience on a bad note.
Recently I saw this recipe on Sandhya's blog and it looked so much tastier than what I remember chilli parotta to be. I bookmarked it right away.
Chili Parotta/ Kothu Parotta
My husband bought a packet of frozen 'Kawan Paratha' instead of regular wholewheat rotis that I usually buy. So I knew I had to make the chilli parotta with them and was waiting for an occasion to make it. Which came the other day when we needed a quick dinner after whole day of shopping. If you time, then you can also make your own Kerala Parottas.

Methi Thepla

Blogging Marathon# 36: Week 2/ Day 2
Theme: Travel Food
Dish: Main Course -- Methi Thepla
When I think of the good old days summer travel to Vijayawada is something that I always remember and cherish. Right after our annual exams, my mom would take us sisters for almost 2 months to my grandparents house to spend the summer vacation. We used to take the train and my mom had either pulihora or roti with potato curry packed for our meal. We were never allowed to buy anything on the train. I especially liked the cutlets that were sold on trains but never got a chance to try them. But my mom made sure we were not hungry and we had more than enough munchies to munch on.
Methi Thepla
As I was thinking of what main course dish to make for Day 2 of BM# 36 under travel food theme, I remembered one of my friend bringing Methi Theplas on a road trip we had together few years back. I think we ate them on day 2 of the trip and they were still soft and tasted delicious with some pickle she had packed.

Kerala Parotta & Mixed Vegetable Curry

Dish: Dinner --- Kerala Parotta & Mixed Vegetable Curry
For Day 2 of BM# 35, I decided to explore the dinner recipes of Kerala. I have seen Kerala Parotta on a number of blogs and wanted to give them a try. I never ate a properly made Kerala Parotta, I might have eaten a frozen version of it, even that I'm not very sure.

After looking through the recipe the techniquee of making it is similar to lachcha paratha. Only difference being Kerala Parotta is made with all-purpose flour or maida whereas lachcha paratha is made with atta or whole wheat flour. Also parotta has significant amount of oil used.

Broccoli & Corn Stuffed Parathas

Under the theme, "Stuffed Breads", Valli wanted us to make a stuffed roti/ paratha with a twist. The twist can be the use of a vegetable or a spice that is not usually used in the parathas. So my twist is the use of broccoli and corn in the stuffing.

Aloo-Gobhi Paratha (Potato-Cauliflower Stuffed Indian Flatbread)

I can't help but smile when I try to translate Indian dish names into English. Take this post's title itself, even though the English name conveys what the post is about, it still seems funny to spell out the full dish name, it's almost like constantly calling someone with their first & last name. 

Today I have "Aloo-Gobhi Paratha" on the breakfast menu for day 5 of BM# 16. This is quite an elaborate dish for my breakfast standards, but this being the long weekend, I decided to treat the family with a hearty breakfast. After eating 2 of these delicious parathas, we were all ready for a shopping spree and fun in the sun.

Mooli Paratha

For Day 2 of BM# 10, I made some good old Indian style winter comfort food --- mooli paratha. These parathas are made with daikon radish which is generally available in the winter. My husband is not a big fan of mooli, so I followed Rak’s recipe to cook the mooli before stuffing in the paratha. Parathas turned out hearty and delicious, not stinky at all like my husband predicted.

Lachcha Paratha

Day 2 of Blogging Marathon #4: As I mentioned in my previous post, my roti rolling skills need to be honed too. I prefer not to make triangular or any other shaped rotis since (I think) that involves certain skill, which I firmly believe, I lack. But for today’s post I made a flaky unleavened, folded and rolled paratha recipe that was much easier to make than I thought.

Dough is similar to regular roti, but when rolling it is folded like a Chinese hand-fan or saree pleats, then rolled and cooked like regular roti. Valli actually posted a recipe for it @ Beyond Curries a while back.

What did I learn: Making Lachcha parathas is not as difficult as spelling them.

Ingredients:
Atta (Whole wheat flour) – 3 cups
Salt – 1 tsp
Ghee (Shortening) – 1tbsp

Method:
  • Add ghee and salt to the flour and work it in, so the flour resembles crumbles. Slowly add hot water to the flour, mixing steadily to make smooth, pliable dough. (I used about 1 to 1¼ cups of water). Cover with plastic wrap or damp paper towel and set aside for 30 minutes.
  • Divide the dough into 8-10 equal pieces.
  • Roll 1 piece into a 6” circle (or similar shaped), then start folding it from one end like saree pleats or Chinese hand-fan. Next roll the folded log tightly into itself. Press on the top lightly and gently roll out into a 6” circle.
  • Lachcha Paratha-Collage Small
  • Cook on a preheated skillet (tawa) until brown spots form on both sides. Add some oil/ ghee while cooking (optional). Serve hot with any spicy curry.
I served mine with Aloo-gobhi (Potato-Cauliflower in creamy cashew butter gravy).
