Jalapeño Bread for #BreadBakers

This month for Bread Bakers we are baking with Peppers. Our host for the month Sue of Palatable Pastime wanted us to bake a bread with some sort of pepper -- fresh, dried, ground, hot or sweet. So my entry is this spicy and delicious Jalapeño Bread.
Indian Style Jalapeño Bread
My sister buys this bread at a local bakery and it is very soft and very tasty. I've tasted it once or twice at her place, but don't really remember how it looks or tastes. When I was thinking of making the bread, I asked her to take a video of the bread. She took the time to buy a fresh loaf and with the help of my BIL made a video showing the cross section of the bread.

Flax Oat Wheat Dinner Rolls for #BreadBakers

It's time to bake for Bread Bakers again. Our host for this month is Deepthi who blogs at Baking Yummies. She wanted us to make either yeasted or quick, sweet or savory rolls. I had quite a roll recipes that I wanted to try on my Pinterest board. Finally narrowed it down to these Flax-Oat-Wheat dinner rolls.
Wholegrain Dinner rolls with Oats, Flax and Wheat
These rolls are hearty and have an earthy taste with the addition of oats, wholewheat and ground flax seeds. These are perfect whole grain alternate to the soft and squishy white dinner rolls. They are great to make for cookouts or for your everyday dinner.

Buttery Garlic Pull apart Bread for #BreadBakers

It's time for another edition of Bread Bakers and this month's host is lovely Karen from Karen's Kitchen Stories. She chose 'Garlic' to be the theme in celebration of National Garlic day, that is celebrated on the 19th April.
Pull apart Bread with Garlic Butter
Pull apart bread has been on my to-make list for quite sometime and when I saw this buttery herb bread on King Arthur flour, I knew I had to bake it for this month's Bread Bakers. I wasn't disappointed with my choice.

Chocolate Yeast Bread for #BreadBakers

All the recipes so far this month revolve around Chocolate. After 4 posts for kid friendly chocolate posts from last week, I have yet another recipe with chocolate and this time it is for the Bread Baker's group. Our lovely host for the month Shireen Siqueira wanted us to make any bread with cacao, cocoa or carob in form.
Chocolate Almond Bread
Initially I was planning to bake something that is good for Easter, like chocolate babka or something in those lines, but when I saw this chocolate yeast bread recipe on David Lebovitz's site I dropped all the earlier ideas and made that instead. I have only tried baking chocolate yeast bread twice before, first time in this chocolate cherry bread and then in this sourdough chocolate bread, so I was intrigued on how this bread would turn out.

Heart of Winter Loaf

After enjoying a relatively mild winter weather in January, we are back in the freezer for February. I'm not complaining, not that I enjoy the cold but I'm happy when the weather is seasonal, if it is not then I get worried about global warming.
Winter loaf
This 'Heart of Winter' loaf recipe is from King Arthur flour catalog and it caught my attention with its name itself. We are technically in the middle of winter and what perfect time but to make this bread right now.

Wholewheat Banana Bread (made with Honey)

Bake-a-thon 2015: Day 5
Bake of the Day: Wholewheat Banana Bread
I sometimes feel that overripe bananas are a bane of my existence. They haunt me with their lingering smell and I can't eat or throw them away. The family abandons them the minute they turn slightly blotchy outside even though they are perfect inside. I have learnt to show them only peeled ones so they don't judge it by the package.
Banana Bread with Honey
Even with all this I end up with 3~4 overripe bananas by the end of the week. I have so many versions of banana breads/ muffins that making another one doesn't excite me that much. But this recipe from Cookie+Kate is made with wholewheat (pastry) flour and is sweetened with honey (or maple syrup) got me off my behind and into the kitchen to bake.

Harvest Grains Loaf

Bake-a-thon 2015: Day 2
Bake of the Day: Harvest Grains Loaf
Here's another family favorite bread that is soft and delicious with a nice blend of grains and seeds. I used King Arthur's Harvest Grain blend which is a mixture of 4 grains and 4 seeds. You can use any combination of grains and seeds. Grains like oat berries, millet, barley flakes and seeds like flax, poppy, sesame, sunflower etc can be used.
Wholewheat bread with grains
I think the next time I make this bread I will use a higher ratio of wholewheat to all purpose flour. Like I said before this is a very soft and tasty bread that is great toasted for even in a sandwich. I made some potato curry & cheese sandwiches and also Nutella sandwiches with this bread. Both tasted great.

Basic Sourdough Bread

Bake-a-thon 2015: Day 1
Bake of the day: Basic Sourdough Bread
It's December already which means we are right smack in the middle of the holiday season. It is also the month where few baking enthusiastic bloggers come together for a Bake-a-thon. So look out for new posts with baked goodies on Monday, Wednesday and Friday in December. Thank you to Valli for organizing the event and also for the very helpful linky tool so all of our bakes are all in one place.
Sourdough Bread
First up is a basic sourdough bread. I already have a basic sourdough sandwich bread on the blog that is made with very few ingredients. This one has some fat and potato flour for a more softer crumb and a fluffier bread.

Homemade Cuban Bread recipe

Initially when I listed 'Cuban Tostada' as one of the breakfast entries, I wanted to use store bought Cuban bread to make the sandwich and call it a day. But when I started reading about Cuban bread, I realized that store bought Cuban bread might me made with lard (aka pig fat), so I decided to make the bake the bread at home.
Homemade Cuban bread without Lard
I found this recipe on King Arthur flour and followed it to the 'T' except for substituting some of the all purpose flour with wholewheat flour. These rolls are perfect to make sandwiches and of course Cuban tostadas.

Wholewheat Zucchini Bread for #BreadBakers

It's time for #Breadbakers again and I'm so excited to host it this month. The theme I picked is 'Breads using Summer Bounty'. So any bread, quick or with yeast, using fruits, herbs and vegetables from your garden or fresh from the farmer's market can be made. We have a delicious list of breads from the lovely bakers, don't forget to visit their blogs (listed at the end of the post).
Zucchini Wholewheat Bread
I planted a zucchini plant in my raised vegetable bed this year. It started flowering beginning of July and I was hoping for a bumper crop of zucchini. Little did I know that not all flowers become fruit. With no zucchini in sight even after 3~4 weeks, I started to panic. A quick google search even led me to think that there were no bees in our area to pollinate the flowers and I might end up zucchini-less after all. Then one day I saw these 2 big ones -- not sure how I missed them the whole time. Then the next day I found a gigantic 13" one -- I might have to get my glasses checked now. I'm glad that my zucchini story ended on a positive note. Not sure if I'll get more though -- I see flowers but no tiny or big zucchinis :-(

Oats Bread with Maple and Walnuts for #BreadBakers

For this month's #BreadBakers challenge, our host for the month Rocio picked 'breads with oats'. We are free to pick any form of oats -- steel cut, rolled or quick and it can be a sweet or savory bread.
Bread with Oats, Maple Syrup & Walnuts
I chose to make Oats bread with maple syrup and walnuts from King Arthur Whole Grains Baking cookbook. Whole wheat and oats are the featured whole grains in this soft, high rising loaf. Original recipe used maple sugar, but since I don't have it, I just used light brown sugar. Maple syrup adds a hint of sweetness and the nuttiness of walnuts is a nice counterpoint. This bread is great as is or toasted with some butter, jam or my kids favorite Nutella.

Iyengar Bakery Khara Bread (Spicy Indian flavored Bread)

Blogging Marathon# 53: Week 4/ Day 1
Theme: Bookmarked Recipes -- Veena's Veg Nation
Dish: Iyengar Bakery Khara Bread
We are starting the final week of Blogging Marathon for this month today and I'm paired with Veena and for the next 3 days I'm going to post 3 dishes from Veena's blog. Veena blogs at Veena's Veg Nation and she has an awesome collection of recipes both traditional Indian and International. She is an amazing baker, I have quite a few of her breads and other baked goodies bookmarked, hopefully I'll get to bake them some time soon.
Indian flavored Bread
For the first day, I made this Iyengar Bakery style spicy Khara Bread. This bread has delicious Indian flavors with cumin seeds, onions, mint and cilantro. Make it as spicy as you want with green chilies. I kept it mild because my kids are too big on spicy food.

Korean Onion Bread (Yang PaBbang)

Blogging Marathon# 52: Week 4/ Day 2
Theme: Bookmarked Recipes
Dish: Korean Onion Bread from Varada's Kitchen
The second bread that I really wanted to bake right away was Varada's 'Korean Onion Bread'. It looked so colorful and interesting with the onion, pepper and cheese filling and topping. I remember seeing something similar in the local Korean bakery, which was another reason for me try it at home.
I made it for my Mother's day lunch and the entire loaf was gone by the end of the day. It looked and tasted delicious with the cheesy center and topping.
Korean Onion Bread (Yang PaBbang)
Original recipe had ham in it and Varada used red peppers instead. I think that was a brilliant idea because red pepper gave the bread a beautiful color and makes it taste hearty & yummy!!

Semolina Wholewheat Bread

Blogging Marathon# 52: Week 4/ Day 1
Theme: Bookmarked Recipes
Dish: Semolina Bread from Sandhya's My Cooking Journey
My theme for the final week of this month's marathon is 'bookmarked recipes'.  It is almost impossible to pick just 3 dishes from my ever growing list of bookmarks, so I narrowed my search to just breads. After the month long mega baking marathon from April, I have many breads and other baked goodies bookmarked -- I thought this will be the beginning of many I tried from those.
First up is Sandhya's 'Semolina Bread'. Her pictures really won me over and I immediately bookmarked it to try soon. I actually made the bread twice since she posted.
Semolina Wholewheat Bread
Semolina bread has been on my to-try list for a very long time. But most of the recipes I saw, needed a covered cloche or a special baking utensil. Also most of them looked very crusty and chewy. Since my family prefers soft, sandwich bread I never got around to try any of the recipes.

Colomba Pasquale for #BreadBakers (Easter Dove Bread--Eggless Recipe)

BM# 51 -- Baking Marathon: Day 12
Bake of the Day: Colomba Pasquale (Easter Dove Bread)
I'm taking a short break from breakfast bakes today and instead have a delicious Easter bread. I recently joined the Bread Bakers group. #BreadBakers is a group of bread loving bakers who get together once a month to bake bread with a common ingredient or theme. More information about the group and how to join in the baking fun is at the end of the post.
Colomba Pasquale (Easter Dove Bread)
This month's theme is Easter, Passover and Springtime breads from around the world. I made these cute little spring breads last week and wanted to try a more traditional Easter bread for the Bread Bakers group. Found this Colomba Pasquale or Easter Dove bread recipe on King Arthur website. The dove shaped bread looked lovely, so I decided to give it a try.

Sourdough Cinnamon Raisin Bread

BM# 51 -- Baking Marathon: Day 10
Bake of the Day: Breads -- Sourdough Cinnamon Raisin Bread
Today I have a cinnamon raisin bread made with sourdough starter. I was planning to bake a sourdough bread and fed the starter the day before I wanted to make it. Then in the morning, I checked my blog to see that I already posted that recipe. So had to change the plan and a new search in King Arthur flour site landed me on this cinnamon raisin bread with sourdough starter.
Sourdough Cinnamon Raisin Bread
It's been a long time I baked a cinnamon raisin bread and so started working on it right away. The difference between the one I usually bake and this is: here the cinnamon sugar and raisins are layered in after the first rise whereas in the other recipe, they are simply kneaded in.

Turkish Pizza Bread (Pide)

BM# 51 -- Baking Marathon: Day 9
Bake of the Day: Turkish Pizza - Pide
After all the breads and loaves posts, today I have a recipe for a slightly different pizza. It's pizza from Turkey called Pide. It is a soft and chewy bread that is made with yogurt and traditionally shaped with a slight hollow that can accommodate any number of fillings.
Turkish Pizza Bread (Pide)
Pide is essentially a boat shaped bread that is used as a pizza base and can be filled with grilled veggies, cheese, eggs. Even sweet fillings like fruit and custard can be used as fillings and served as cake.

No Knead Cheese Burger Buns

BM# 51 -- Baking Marathon: Day 8
Bake of the Day: Breads -- No Knead Cheese Burger Buns
Today I have the recipe for some delicious burger buns that requires minimal hands-on time thanks to the no-knead method of preparing them. They are soft but sturdy enough to hold a veggie burger and all of its accouterments.
No Knead Cheese Burger Buns
The ingredients are beaten in a mixing bowl for just 2 minutes and after that it is very very easy to make these soft, cheese-scented buns that are perfect for any kind of burger.

Long Sandwich Rolls

BM# 51 -- Baking Marathon: Day 7
Bake of the Day: Bread -- Long Sandwich Rolls
The taste of freshly baked bread is just amazing. It is time consuming and needs some patience, but it is all well worth it. I baked these long sandwich rolls for last month's marathon and used them to make Hoagie sandwiches.
Long Sandwich Rolls
Initially I was planning on just buying store bought bread but then wanted to utilize the opportunity to bake something new and post it for the mega baking marathon. After looking through recipes for long sandwich rolls on the internet, I realized most of the recipes are similar to homemade bun recipes but shaped differently.

Nutella Swirl Bread

BM# 51 -- Baking Marathon: Day 6
Bake of the Day: Breads -- Hazelnut Spread Swirl Bread
This bread is very simple to make, but I messed it up 2 times before I got it almost right, the third time. This is probably the only bread that I made 3 times without giving up. I knew exactly what mistakes I made and wanted to make it right at the end.
Nutella Swirl Bread
OK, so here's the story behind this bread: This Nutella swirl bread recipe is from Costco connection cookbook and the photo looked absolutely amazing and I wanted to make it for my chocolate loving son. The recipe is quite simple, dough with flour-yeast-sugar, 1 rise, then roll and spread Nutella, re-roll, cut and bake.
