Xmas Fruit Cake (Kerala Christmas Fruit Cake)

Day 24: X for Xmas Fruit Cake
So here we are at probably the most difficult letter of all, X. There are very few dishes or veggies that start with the letter X, so this must have been a tough letter for everyone except for those cooking from Spanish or Chinese cuisines. I was initially planning to go with an adjective or a verb but finally ended up making this Kerala Style X mas Cake.

I was thinking of doing a post like xplore Malabar cuisine, xperience Kerala sadya or something on those lines. I even asked Rajani for her input and she said try a sadya meal by making dishes over couple of days. I was tempted but the amount of work involved seemed too tedious and with the husband traveling, it was way too much food for just me. It is one of my dream meal to make in my lifetime.

Orange-Cranberry and Nut Fruitcake

Merry Christmas to all of you.
We had a fun filled Christmas eve party with friends last night and today it's going to be another great to spend with family. My sister and my cousin are coming over for Christmas lunch, so the post is going to be rather short today :-)

I made this fruitcake to give as gift and this recipe is great for people like me who are not great at planning ahead and decide to make a fruitcake in the last minute. Recipe comes from King Arthur Flour and like all their bakes, this one turned out great. Here's the 90 minute fruitcake I made last year and here's the Vegan fruitcake I made the year before.

Overnight Panettone

Panettone has been on my baking list for a very very long time. Last year I took the leap and even bought these panettone paper pans from King Arthur flour, then I chickened out in the last minute. So, this year I made up my mind to give it a try.

I followed this recipe for Overnight Panettone from King Arthur flour. This recipe has much less fat than the traditional more luxurious recipes. But it is light and delicious. Addition of Fiori di Sicilia extract gives it that special holiday flavor.

Navratan Paratha

Dish: Navratan Paratha
After a stuffed curry and stuffed paratha, I was wondering what to make for the 3rd day in this series. I had some stuffed desserts and pasta dishes bookmarked but nothing really wanted me to get up and cook. Then I watched the recipe for this Navratan paratha on a cooking show and I knew that the 3rd dish was set.

As the name suggests this paratha recipe is stuffed with 9 gems or Nav-ratan or 9 different veggies and dry fruit. All the 9 ingredients are boiled and mashed along with spices and then stuffed inside the dough to make the parathas.

Figs, Date & Nut Bars (Anjeer-Khajoor Burfi)

Belated Diwali wishes to all of you. It was a very quite festival for us this year and the weather didn't cooperate either. It was gloomy and raining the whole day. I'm glad that my husband was home for Diwali, first time in the past 2~3 years. Even after seeing all the yummy Diwali snacks on Facebook and Instagram, I wasn't motivated enough to make anything.

But then I felt bad for the family and decided to make something less guilty yet satisfying. After leafing through the cookbooks, I found this fig, date & nuts burfi in Sanjeev Kapoor's Sweet temptations. It has no added sugar and the sweetness comes from dried figs and dates.

Colomba Pasquale for #BreadBakers (Easter Dove Bread--Eggless Recipe)

I'm taking a short break from breakfast bakes today and instead have a delicious Easter bread. I recently joined the Bread Bakers group. #BreadBakers is a group of bread loving bakers who get together once a month to bake bread with a common ingredient or theme. More information about the group and how to join in the baking fun is at the end of the post.
Colomba Pasquale (Easter Dove Bread)
This month's theme is Easter, Passover and Springtime breads from around the world. I made these cute little spring breads last week and wanted to try a more traditional Easter bread for the Bread Bakers group. Found this Colomba Pasquale or Easter Dove bread recipe on King Arthur website. The dove shaped bread looked lovely, so I decided to give it a try.

California Granola

BM# 51 -- Baking Marathon: Day 11
Bake of the Day: Breakfast Bakes -- California Granola
We are starting the 3rd week of this month's mega baking marathon. After all the breads and baked with yeast and sourdough, this week will be all about baked goodies served for breakfast.
First off, I have a crunchy granola recipe that I personally loved munching on. Store bought granola is such a rip off, they are way too expensive and are loaded with sugar and other unnecessary ingredients. It is very easy to make at home and the quantity of sugar and oil can be adjusted as per taste.
California Granola
This recipe is from Bobby Flay's 'Brunch with Bobby' cooking show. I love watching that show because he makes brunch recipes from all over the world and it is exciting to see the number of variations in pancakes, crepes, omelettes he comes up with on the show. This granola recipe is from his California brunch episode. It is quite simple to make with most of the ingredients from the pantry.

Oats Rava Laddoo

Traditional Rava laddoo gets a slightly healthy makeover with the addition of ground oats in this recipe. Saw this being made on a Telugu cooking show couple of days ago and then tried it today.
Oats are lightly roasted and ground. They are then added to the regular rava laddoo ingredients -- rava/ semolina, sugar, dry grated coconut and dry fruits. Melted ghee and warm milk act as glue to hold these laddoos together.

These tasted exactly like the regular rava laddoos. My 2 year loved them (she loves anything with nuts & raisins in it), but I was surprised that my super picky son also liked them. They are quick and very easy to make -- takes about 15 minutes to make the entire batch. Also these are goof-proof, especially for people like me who are prone to screw up consistency of sugar syrup, this is the perfect recipe :-)

Pan Seared Oatmeal with Warm Fruit Compote

Dish: Pan Seared Oatmeal with Warm Fruit Compote 
Oatmeal is one of my favorite breakfast foods and I can have it either sweet or savory in the morning. I soak them in milk and ground cinnamon the night before, if I remember, and they are ready for me in the morning. I eat them along with some seasonal fruit and nuts and I'm good to go till lunch.

Since this week is all about brunch recipes, I have a slightly elaborate dish with oats that is perfect for a leisurely brunch or even to serve for company. The good thing about this dish is both the components can be prepared ahead of time and it takes just a few minutes to pan sear the oatmeal triangles and warm the compote.

Christmas is just 1 day away. If you didn't make a fruitcake and think you don't have time to make it, think again. This 90 minute fruitcake is just for you. Instead of making loaves or round shaped fruitcakes, these mini bundt cakes are very easy to put together and taste almost like the regular fruitcake.

Last year I made an eggless Christmas Fruitcake that involved soaking in the dry fruit and nuts in orange juice or some kind of alcohol for at least 1 day or more to get the best flavor. This year I wanted to make something different and when I saw these mini bundt cake recipe in the King Arthur catalog, I knew I found myself a good recipe.

Here's wishing everyone a very merry Christmas.
This holiday season has turned out to be the best so far with family and friends around. We have family visiting us for the holiday and everyone is just having a blast. It's now past 12:00AM on Christmas morning, gifts are placed under the tree and cookies and milk left out for Santa and carrots for the reindeers. Kids are sleeping, but I'm sure they are dreaming about the presents that Santa's going to leave them.

I planned to make fruit cake for this Christmas a long time ago, but as with everything else I kept it till the very last minute to make it. The reason being I found Dassana's recipe that doesn't need cakes to be soaked in booze for days and I decided to make it just 2 days before Christmas. So I soaked the dry fruit and nuts in orange juice and rum on Sunday and baked the cakes on Monday.

Chatti Pathiri for Indian Cooking Challenge

It has been a very eventful day today. I thought it was going to be a quite sunny day and had plans of making 'Chatti Pathiri' for this month's Indian Cooking Challenge in the afternoon. But one phone call changed it all. It changed my mood from sunny to gloomy and I didn't feel like doing anything. I knew it was a problem that could be fixed but still was antsy until it was fixed.
I gave up on participating in this month's ICC, even though I had been anxiously waiting to make this delicious baked dessert from Kerala. Then came the second phone call saying that the issue is solved and there's nothing to worry about at least for the next couple of months. It brightened my mood, but it was almost late after with sunset around 4:30PM, I had less than an hour to make the dessert and then take pictures.
I'm so glad that I did because both my husband and I liked the dessert a lot. My husband said the best part was the nut filling and I have to agree I loved the crunchy poppy seeds & nutty sesame seeds in the filling.

Sakharbath

Dish: Sakharbath
After two savory and spicy dishes from Goa, I was looking for a dessert recipe to try. Goan cuisine has ton of delicious desserts that use coconut, cashews. One dessert that really caught my eye is Bebinca, but after seeing that the dish has a dozen egg yolks and cup and a half of ghee (clarified butter), I changed my mind. Also I was making this dish just for myself since my husband is travelling, so I didn't want it to be too labor intensive and wanted just 1 or 2 servings.
Finally I zeroed in on this Sakharbhath recipe. This is a very simple, easy and quick sweet rice dish. I used only ¼cup of rice, but the recipe can be doubled or tripled to feed a crowd. Rice is cooked in just water and then sweetened to taste with sugar, so this is a dairy free which I'm sure my milk-hating husband will definitely appreciate.

Five Grain Cereal with Dried Fruit

For Day 2 of BM# 16 I made this healthy and delicious 5-grain cereal with dried fruits. We just came back from our vacation to Disney World in Orlando, Florida and I can't seem to forget the oats that I ate for breakfast in the resort for almost everyday. It was just simple cooked oats and they would add your favorite toppings on it -- either fresh berries/ dried fruits/ nuts etc. It was very filling and would keep me going until afternoon.

So when we got back I wanted to make something similar but more hearty and healthy. I found the recipe for this 5-grain cereal in "Cooking Light - Way to Cook Vegetarian" cookbook. Recipe makes about 10-12 servings, I made me a whole batch and stored it in an air tight container in the fridge, this way I can make my bowl of cereal whenever I feel like it.

Fruit & Nut Cookies

This is a recipe that has been on my to-make list for a very long time. I watched Ina Garten make them on her Barefoot Contessa show and when Priya (@ Akshayapaatram) made them egg-less and vegan on her blog, I had to absolutely had to make them. I even bought all the ingredients, but couldn’t find the much needed time to make them.
As the old saying goes, it’s better late than never, so this past weekend, I finally MADE these yummy cookies. I followed the original recipe to the T, I’m giving the same recipe here.


Adapted from Ina Garten’s Recipe.
Ingredients:
Dried fruit – 2 – 2 ½ cups (I used a combination of raisins, dried cherries/pineapple/papaya/prunes/apricots/figs & cashews)
Honey – 1tbsp
Dry Sherry – 2tbsp
Lemon juice – 2tbsp, freshly squeezed
Salt – pinch
All-purpose flour – 2 2/3 cups
Sugar – ½ cup
Light brown sugar – 1/3 cup
Butter – 2 sticks, unsalted and @ room temperature (I leave it out the night before)
Egg – 1 extra large
Ground cloves – ½ tsp

Method:
  • Add honey, sherry, salt & lemon juice to dried fruit and nuts; cover with plastic wrap and allow to sit overnight at room temperature.
  • Cream butter along with both sugars, ground cloves with hand mixer on medium speed, for about 3 minutes.
  • Add egg and mix until incorporated.
  • Slowly add the flour and ¼ tsp salt and mix until just combined; do not overmix.
  • Add the fruits and nuts, along with any liquid in the bowl.
  • Divide the dough in half and place each half on a parchment paper. This dough is very easy to work with and the recipe makes about 5-dozen cookies, so if you want to divide it into more than 2 logs for future use, go ahead and make 4 smaller logs. Roll each log in the parchment and refrigerate for 2 hours. Place all the logs that are not being used right away in a Ziploc bag and stow in the freezer (right now I’ve 3 logs waiting to be used).
  • Preheat the oven to 350°F. Cut the log into ½” thick slices. Place them on a ungreased cookie pa ½” apart. Bake for 15-20 minutes or until lightly golden. My cookies were ready in 16-17 minutes, but the bottoms were slightly browned, so keep checking after 15 minutes.
These are sooooo good, buttery with the sweet and tangy bite from the dried fruit. I think I like them better than Karachi bakery fruit cookies. Thanks Priya for making me try these, they are worth every minute of the wait.
