Maple Pecan Scones for #BreadBakers

For this month's Bread Bakers, we are baking with natural sweeteners. I looked high and low for yeast bread recipes using natural sweeteners but couldn't find one that I wanted to try. Finally found the recipe for these Maple-Pecan Scones in Vegetarian Times Magazine.

Our host for the month Mayuri (Mayuri's Jikoni) wanted us to bake using natural sweeteners like maple syrup, honey, blackstrap molasses, dates, coconut sugar etc. These are healthier and tastier alternates to refined sugar, high fructose corn syrup and artificial sweeteners.

Xmas Fruit Cake (Kerala Christmas Fruit Cake)

Day 24: X for Xmas Fruit Cake
So here we are at probably the most difficult letter of all, X. There are very few dishes or veggies that start with the letter X, so this must have been a tough letter for everyone except for those cooking from Spanish or Chinese cuisines. I was initially planning to go with an adjective or a verb but finally ended up making this Kerala Style X mas Cake.

I was thinking of doing a post like xplore Malabar cuisine, xperience Kerala sadya or something on those lines. I even asked Rajani for her input and she said try a sadya meal by making dishes over couple of days. I was tempted but the amount of work involved seemed too tedious and with the husband traveling, it was way too much food for just me. It is one of my dream meal to make in my lifetime.

Buttery Garlic Pull apart Bread for #BreadBakers

It's time for another edition of Bread Bakers and this month's host is lovely Karen from Karen's Kitchen Stories. She chose 'Garlic' to be the theme in celebration of National Garlic day, that is celebrated on the 19th April.

Pull apart bread has been on my to-make list for quite sometime and when I saw this buttery herb bread on King Arthur flour, I knew I had to bake it for this month's Bread Bakers. I wasn't disappointed with my choice.

Buttery Sourdough Buns

It's only 4 days to Christmas and hope all of you have your gifts and menus ready for the big day. This year, one of our lovely friend is hosting the Christmas eve party and she asked me to bring some dinner rolls. They all love these golden pull apart dinner rolls, but I wanted to try a new recipe this year.
I found the recipe for these sourdough buns in the King Arthur Flour baker's catalog. I loved their cute little swirly shape and the addition of paprika to the butter gives them a nice reddish hue on top.
These buns are super soft on the inside and a nice crispy crust almost like a crescent roll. The swirly shape means they are fun to unravel and enjoy just like a crescent roll.

Sablés (Shortbread Cookies)

I have not made even a single cookie recipe for the ongoing blogging marathon, except if you consider the giant cookie cake as a cookie. There were no cookies even on the initial list. Cookies didn't even cross my mind and now when I'm thinking of it, I don't really know the reason why.

I think I associate cookies with Christmas and may be that's why I don't think of them during the rest of the year. But I know one thing for sure that my kids would some homemade cookies once in a while and I should be baking them more often.

Pecan Shortbread Cookies

For this month's Home Baker's Challenge, our host Sharanya Pathmanathan @ Just Not the Cakes has chosen a very interesting theme -- American food holidays for the month of January. She gave us 6 food holidays to choose from and I picked National Shortbread Day which is celebrated on January 6th. I didn't know that there were so many food days, so big thanks to Sharanya for introducing us to these mouth watering days. Here are the other food holidays that were on Sharanya's list:
January 16 -- National Fig Newton Day
January 21 -- National Granola Bar Day
January 22 -- National Blonde Brownie Day
January 23 -- National Pie Day

Aren't those totally awesome days, what a great idea to enjoy food!!
I wanted to bake Fig Newtons and Granola bars too, but as usual time was short and I made only the shortbread cookies.
Pecan Shortbread Cookies
Shortbread cookies have become my new favorite kind of cookies to bake. They are so quick and easy to put together -- combine all the ingredients and that's it, you are good to go. Dough either goes into the fridge for chilling or straight into the baking pan for baking. Also the resulting cookies have a great texture and they just melt in your mouth.

Homemade Turkish Baklava Recipe

Dish: Turkish -- Baklava
For the final day of this week's marathon I made Turkish national dish, Baklava. I don't remember the first time I tasted baklava, but it was love at first taste. Baklava is a very rich, sweet pastry made of layers of Phyllo (fillo) dough filled with nuts and sweetened with honey and syrup. 
This has been on my to-make list for a very long time. But with really good Turkish friends we have always had good quality baklavas to enjoy, I never got a chance to try it myself. So this was my chance to make baklava at home and I've to say even though the process of making it is a little tedious with the phyllo (fillo) tearing and so on, but the final product is absolutely tasty and well worth the effort. It is also less expensive to make these at home.

Working with phyllo/ fillo dough is a little tedious and sometimes a little frustrating too as it tends to rip and tear. It is very important to keep the phyllo covered with damp towel at all times to prevent drying out. But it is not the end of the world, everything will turn out OK once the dish is finished.

Caramelized Onion & Zucchini Quiche (with Spelt flour Crust)

To me making a pie crust has always been a daunting task. I've had couple of bad experiences both with homemade and store bought pie crusts in the past which made me avoid making a pie altogether. To be honest I'm not a big fan of pie. Given a chance I would rather enjoy the filling without the crust.
But quiche is a different story. I fell in love with quiche the first time I ate it about 10 years ago. One of my co-workers brought it over for potluck lunch and I probably ate almost the whole pie. I tried to recreate it at home a couple of time, but the pie crust failed me. I finally gave up on it. I never dared to make it even though it was always on the back of my mind.

Finally this weekend I decided it was time for me to try my hand at making the pie crust and quiche. I already had a bookmarked recipe for quiche with spelt flour crust from Culinate. It is not the recipe that made me bookmark the article, it is the way the author gives you confidence in making the pie crust. She makes you feel that anyone can make a pie crust and the detailed instructions really help. 
This pie crust is made of Spelt flour (equal quantity of whole wheat flour can be substituted here) and uses a stick of butter and half a stick of cream cheese. The dough is soft and really easy to handle. I had trouble fluting the edges and at one corner I trimmed too much of the excess which resulted in shrunken crust after baking. But that didn't really affect the final taste of the quiche, the crust turned was flaky & buttery.

Kolacky Cookies

I'm in a baking spree for the past couple of days. I made Chatti Pathiri, the Indian version of Turkish Baklava, yesterday for Indian Cooking Challenge and today I made these melt in your mouth European Kolacky Cookies for this week's 'Cooking from Cookbook Challenge'.
I bought some cherry pie filling a while back when I was making this Black Forest Cake. I had some leftover in the fridge that needed to be used up. I saved the wrapper from the container (Solo brand) because it had 2 recipes using the pie filling. These Kolacky cookies caught my eye because it had very few ingredients and seemed easy enough to make.

The filling for these cookies can be just about anything. Any flavored pie filling or jam or fruit preserves would work. Even chocolate-hazelnut spread would be great. I made a batch with cherry pie filling and the other with Nutella. I was worried that the filling would melt and ooze out after baking, but they held up pretty good and there was no melting whatsoever.

Almond-Cranberry Biscotti (Eggless Recipe)

For this month's Home Baker's Challenge, Priya Suresh @ Priya's Versatile Recipes wanted us to bake some crispy & crunchy Biscottis. She gave us options to bake either savory or sweet biscottis. Since I have a housefull of sweet toothed people, I made the sweet biscotti. 
I have been planning to bake biscotti for a while now, but didn't get a chance to try them. I was excited when I saw Priya's picks for this month and I wanted to bake both sweet and savory biscottis, but couldn't find time to make the savory one. I'm glad that I was able to make the sweet version that was liked by all at home. Hopefully I'll make the savory ones too some time soon.

The biscotti I made is a variation to the American Style Vanilla Biscotti that Priya wanted us to bake. Biscottis are Italian cookies that are twice baked. Italian biscottis are hard, but these American style biscottis are light and crunchy.

Vyborg Pretzels (Eggless version)

I am revisting my fellow bloggers posts from the A-Z Alphabet marathon for this week of BM# 33. Like I said yesterday it has been tough finalizing this week's 3 dishes. I still have no idea what to make for tomorrow from the very long list of short listed dishes. I've to check my pantry and the fridge to see what can be made with th time I have. I wish I can try all the recipes, but alas I can't.
So for Day 2, I made Chef Mireille's Vyborg Pretzels. These pretzels are popular in the city of Vyborg, which was previously part of Finland. These pretzels caught my eye the minute I saw them. I've been planning to make pretzels for quite some time now and when I saw these I knew this was going to be my very first pretzel recipe to try. I wasn't disappointed. This recipe makes 4 huge challah bread style pretzels that are soft, slightly sweet and super flavorful from the addtion of saffron and cardamom.
Vyborg Pretzels (Eggless version)
Changes I made were, use egg-replacer in place of eggs, brush with heavy cream in place of egg yolk-milk mixture and sprinkle some turbonado sugar on top for some extra sweetness and crunch. My pretzel shape did not turn out as professional as Mir's, but they tasted amazing especially when eaten warm. They stay fresh when wrapped well and stored at room temperature for couple of days.

Eggless Orange-Chocolate Cake with Orange Cream cheese Buttercream frosting

September & October are birthday months in my house. Both my kids are September born and my husband is October born. So when I saw the theme 'Eggless Cakes' for this edition of BM, I knew I have to take it up to try new cakes to celebrate the birthdays.
For my daughter's b'day I made - Pistachio Rosewater cupcakes & Chocolate-Vanilla Marble cupcakes. Both of them were a hit at the party.

For my son's birthday which is exactly 15days after my daughter's I knew I had to make a chocolate cake. I asked my son if he had any preference and he said he wanted a orange flavored chocolate cake. His latest favorite show is Pokemon and can talk about the characters for hours. So I made him a Orange-Chocolate Cake with Orange cream cheese-butter cream frosting and I tried to add one of the Pokemon characters in the frosting.

Nutella Cookies, Scottish Shortbread Cookies & Mexican Wedding Cookies

I'm back for the 11th edition of Blogging Marathon. I can't believe another year has almost come to an end and kudos to Valli for taking time and organizing these BMs. With the holiday season right upon us, I chose  "Holiday Specials" theme for the marathon. So for the next 7 days, I will posting some dishes made for holidays or made on holidays (including weekends).

This is my 500th Post and I'm celebrating with some homemade cookies.

 

I made cookies for this years's holiday gift-giving. I tend to stay away from cookies that require rolling & cutting and prefer slicing and baking cookies (psst.. if you really want to know why..... 'cos I'm a little lazy). So when I saw these slice & bake icebox cookies in Vegetarian Times magazine, I decided to give them a try and glad I did as they were easy to make and turned out pretty good.

Scallions & Cheese Scones

It has been a long time since I took part in Nicole’s Taste & Create event and decided to sign up when Min @ Bad Girl's Kitchen asked for participants. For this month I got paired with Corina @ Searching for Spice.

Corina has a ton of great dishes from all over the world, but I narrowed down to these spicy and yummy looking Cheese scones with chili kick. I added some finely chopped green onions and used jack cheese with veggies. Also to make them a little healthy, I added some whole wheat pastry flour as well.
