Giant Chocolate Chip Cookie Cake

I can't believe it is the third week of our month long mega baking marathon, after making breads, breakfast dishes, the next two weeks (or week and a half) are going to be focused on desserts -- cakes, cookies and so on.
I have been planning for this marathon for almost 6 months now. So I've been saving all the special baked recipes for this week. First up, is the cookie cake I made for my son's birthday. It is a giant chocolate chip cookie that is decorated like a birthday cake.

My son's birthday was on a weekday last year and I had planned to make a birthday cake for the party over the weekend. So on his actual birthday, I decided to keep it simple and made this cookie cake instead of an actual cake. That decoration was supposed to be a dinosaur because my son is a big dinosaur fan :-)
Giant Chocolate Chip Cookie Cake
This cookie cake is quite easy to put together and it was fun to decorate this big cookie. I had some buttercream frosting that I made for another cake, so used that to frost this cookie cake.
All in all, I had fun making this cake and my son enjoyed cutting it on his birthday. I halved the original recipe and made a 8" cookie cake that we ended up eating the entire thing in one sitting.
Giant Chocolate Chip Cookie Cake

Ingredients:
All purpose flour - 1cup+2tbsp
Baking Soda - ¼tsp
Salt - ¼tsp
Butter - 6tbsp, melted and cooled
Light brown sugar - ½cup
Vanilla extract - 1tsp
Egg replacer - 1tbsp whisked in 3tbsp water (or use 1 large egg)
Chocolate Chips - ¼cup+more for the topping (mini chocolate chips preferred)

Method:
  • Preheat oven to 325°F. Line a baking sheet with parchment paper. Set aside.
  • In a mixing bowl, cream together butter and brown sugar. Mix in egg mixture (or egg) and vanilla extract.
  • In a separate bowl, whisk together flour, salt and baking soda. 
  • Add dry ingredients to wet ingredients, stirring until a soft dough forms. Fold in chocolate chips.
  • Press dough evenly in the prepared pan into 8" round cookie.
  • Bake for 13~15 minutes -- make sure not to over bake the cookie, cookie will continue to cook as it cools.
  • Let the cookie cool on pan until completely cooled.
  • Once completely cooled, decorate as desired. Enjoy!!
