We are starting another week of Blogging marathon today and my theme for this week is 'Lemon/ Lime recipes'. Adding lemon juice to any dish brings out the flavor and makes it taste refreshing.
I wanted to make Cilantro-Lime rice for today, but used quinoa instead of rice and made this cilantro-lime quinoa. This is a light and fresh tasting dish that is a great alternate to plain quinoa. Lime and fresh herbs make this dish a perfect complement to heavier stews and fried foods, and it's super simple to put together, too, a great plus when there are other dishes cooking on the stovetop.
I served this with some spicy black beans and roasted vegetables. Even my picky son loved the combination. I wanted to take a photo of all the dishes together but the kids got hungry before I could click the photos and ate up all the accompaniments -- I saved a bowl of quinoa to take these photos.

Ingredients:
Quinoa - 1cup
Lime juice - 2tbsp
Lime zest - 2tsp
Cilantro - ¼cup, finely chopped
Green Onions - 1, finely chopped
Salt & Pepper - to taste

Method:
- In a heavy pot, combine quinoa, 1¾cups of water or broth, olive oil, lime juice, zest and salt and pepper to taste. Bring the mixture to a boil, lower the heat to a simmer, cover the pot and cook for 15~20 minutes, until the liquid is absorbed and the rice grains are tender.
- Remove from the heat and sprinkle the cooked quinoa with chopped cilantro and green onions. Fluff the quinoa gently. Serve immediately.
Not a fan if quinoa but that bowl looks perfect. Spicy beans sounds like a great accompaniment.

ReplyDeleteSuch a healthy dish. Quinoa is one of most healthiest grains. Couldn't find them in the Supermarkets on my recent trip to Europe.
