Thai Pineapple Fried Rice (Khao Pad Sapparot)

Dish: Pineapple Fried Rice from Mireille 
For Day 2 of bookmarked dishes I have a sweet, sour and spicy Thai Pineapple fried rice from Mir's blog. I have seen pineapple fried rice recipes on any food blogs but I wasn't sure how the sweetness of the pineapple would taste in a savory rice dish. So never tried to make it at home before.

But when I saw Mir's dish, I wanted to give it a try. I had all the ingredients on hand and my husband was travelling so I took a chance and made it for myself. I have to say I really liked this dish. The sweetness from the pineapple is actually complemented by the spicy curry powder and the saltiness of the soy sauce.

Spicy Tofu Sofritos

For the final day of this month's blogging marathon, I made Tofu Sofritas from Smruthi's Herbivore Cucina. I bookmarked it when I saw it on her Top 15 recipes of 2015. This is a restaurant style dish that can be easily made at home.

If you are wondering what Sofritas is, then here's a nice infographic by Chipotle that explains how cooked and crumbled tofu combined with sofrito (a very popular Latin spice mix) makes this amazing tasting dish that they call Sofritas. I ate sofritas at Chipotle once and was planning to make it at home and then I saw it on Smruthi's blog, so finally made it myself.

Brown Rice Bowl with Tofu and Veggies

My second meal idea after yesterday's South Indian meal this brown rice bowl with crispy tofu and vegetables. As I said yesterday, all of my dishes this week are centered around rice. We have started eating more brown rice these days, so I'm always in the look out for more recipes using it. This rice bowl recipe is from America's Test Kitchen newsletter.

This is a balanced meal with carbs, protein & veggies all served in one bowl. The list of ingredients is quite long but most well equipped kitchens will have all of the ingredients or a quick trip to the grocery store will do the trick.

Thai Curried Noodles for #Food of the World

We are visiting Thailand for this month's Food of the World event. Thai cuisine is one of my favorite and I have tried and posted quite a few Thai dishes on the blog. I looked through my 'Buddha's Table' cookbook and found this Curried Noodles recipe.

This is a spicy and delicious dish that is perfect to serve on a chilly winter day. The list of ingredients is long but all of them are easily available in well stocked Asian grocery stores. I made a trip to my local Korean market to get the noodles and some other ingredients and I was set to make the dish.

Indonesian Tofu Satay for #Food of the World

For this month's #Food of the world event, we are visiting the beautiful island of Aruba. It is an island country in the southern Caribbean sea. It is one of the 4 constituent countries that form the Kingdom of Netherlands along with the Netherlands, CuraƧao and Sint Maarten. 
Traditional Aruban cuisine includes dishes with goat meat, stoba-stew pots filled with vegetables that are locally grown - fish and maize. Finding a vegetarian recipe turned out to be quite challenging. Luckily Mir, my dear blog buddy and a fellow food of the world member, offered to help because her mom is Aruban. I jumped right away and took up the offer.

She emailed me quite a few vegetarian options for Aruban food. She also mentioned that Aruba has a very large population of Indonesian because it is a Dutch island and Indonesia was the largest former Dutch Island. and Arubans also eat a lot of Indonesian food.

General Tso's Tofu

Today's weekend special is a Chinese-American dish called General Tso's Tofu. It is the vegetarian version of General Tso's Chicken that is quite a popular item on Chinese fast food and restaurant menus in America and Canada. From what I read, this dish is unknown in China and is probably been introduced by one of the many Chinese chefs who came to America years ago.

In the original version, it is a sweet, slightly spicy and the chicken is deep fried. In this vegetarian version, tofu is used instead of the meat and it is baked until crispy.

Spicy Korean Tofu with Pear Slaw for #Food of the World

For this month's #Food of the World event, we are going to South Korea. The town we live in has a large Korean population in fact one of our next door neighbors are Korean. We have a very big Korean grocery store in town (actually that is the only store we have in town) and they have pretty much everything you need to make a Korean dish at home.

For today, I actually wanted to make another dish and bought the ingredients too. It was a cold noodle dish and the noodles I bought completely clumped up after boiling. Not sure what went wrong and then I had to change plans and make this tofu.

Sikkim is a state in northeastern India located in the Himalayan mountains. The state is bordered by Nepal to the west, Tibet to the north and east, Bhutan to the east and West Bengal to the south. Sikkim is the least populous state in India and it is the only state with an ethic Nepali majority.
Because of the close proximity to Nepal and Tibet, Sikkim cuisine is highly infuenced by both of those cuisines. Sikkimese are traditionally rice eaters. Meat and dairy products are also consumed depending on the availability. Besides these, various traditional fermented foods and beverages, which constitute about 20% of the basic diet. Depending on the altitudinal variation; finger millet, wheat, buckwheat, barley, vegetables, potato, soybeans etc., are grown.

Pad Thai (Vegan Recipe)

Today I'm revisiting one of my favorite noodle dish, Pad Thai. Recipe is from the cookbook Vegan with a Vengeance by Isa Chandra. It is a simple recipe, but it sure needs some preparations to be done. Once all the veggies are chopped and the sauce is made, dish gets done in no time.

Below recipe serves 2, if you are planning to make this for a crowd, then multiply the ingredients according. Make the sauce in bulk, but assemble the noodles only 2 servings at a time and serve immediately.

Vegan Gado Gado recipe

We are starting this month's blogging marathon today and my theme for the first week is 'National dishes from countries around the world'. I didn't really realize each country has it's own national dish until I started researching for this theme. There is a whole list of national dishes on Wiki. Some countries have more than one national dish.
Choosing 3 dishes from countries all over the world was quite a challenge. I was really happy to see 3 dishes that have been on my to-make list on Wiki's list. So for the first day, I have Indonesian national dish "Gado Gado'.

Gado Gado is an Indonesian salad that is served with a creamy peanut sauce. This salad usually has both cooked and raw veggies along with boiled eggs, fried tofu and tempeh. Most of the ingredients for the salad are customizable. I read somewhere that boiled potatoes and eggs are absolute must and everything else is optional. I skipped the eggs and made this a vegan salad.

Vegetarian Wonton Soup

This is our first International Food Challenge and this month we are exploring Cantonese Cuisine, which comes from Guangdong Province in Southern China and it is one among the 8 great traditions of Chinese cuisine.
The basic cooking techniques of Cantonese cuisine includes roasting, stir-frying, sauteing, deep frying, stewing and steaming. Steaming and stir-frying are most commonly used to preserve the natural flavors of the ingredients. The most characteristic cooking methods of this cuisine are cooking in salt, cooking in wine, baking in a pan.

Saras @ Sara's Yummy Bites and Shobana @ Kitchen Secrets and Snippets selected 4 Cantonese recipes to try. I picked 2 dishes that I have always wanted to try -- Vegetarian Wonton Soup & Scallion Pancakes.
Wonton soup involves quite a few steps; making the filling, cooking the noodles and assembling. But the end result is very hearty and worth every minute of the time spent. I followed the recipe given to us to the 'T' and it came out yummy!!

Vegan Curried Eggless 'Egg' Salad

Dish: Vegetarian Curried 'Egg' Salad
Day 2 of BM# 31 and today I'm remaking my favorite Egg salad into a meatless dish. There are a ton of recipes that use only tofu, but the tricky part of making good eggless egg salad is getting the creaminess right. Egg yolks give that creaminess and using only tofu might make the salad too dry.
For those of you who never tasted Egg salad, it is a mayonnaise based salad with chopped boiled eggs and then seasoned and flavored as per taste. I think the first time I ate an egg salad was during my Masters while working at the deli. The owner used to make me an egg salad sandwich on rye bread with all the fixings and it was super yummy!! I've peeled a zillion eggs during my stint at the deli and learnt how to make a good egg salad too. But today it's about this eggless tofu salad :-)

So when I found this recipe that uses pureed chickpeas I knew this would be a winner. The pureed chickpeas mimic real yolk in both texture and taste. The only thing I would do differently next time is not to pulse tofu in the food processor. I think I like bit more texture to my salad and I would break tofu into bigger chunks rather than pulse to crumbles the next time I make this salad.

I was watching Dr. Oz's show this morning and one thing he said that was interesting was 'never buy any prepared food that has more than 5 ingredients' and 'if it has ingredients that a 6 year old cannot read -- do not buy'. But if you can make tasty and interesting dishes right at home, then there is no need to buy junk from outside. What do you guys think?

Kadai Tofu (Tofu & Peppers in Creamy Tomato Sauce)

VeganMofo Day 18: I rarely used Tofu in Indian dishes, I'm not sure why I have never tried it before. Tofu to me is a very Asian ingredient and I tend to use in Chinese or Thai dishes. I know tofu is very versatile and I finally decided to use it in a way I've never used it before.

Veganmofo is going pretty good so far, I missed 4 days so far and hopefully I can keep up the momentum and finish the month with no further disruptions. The little one is keeping us busy, so most of my blogging is happening only around midnight.

Onions happen to be the most used veggie in my kitchen, not unusual for Indian cooking. But I don't usually make dishes ONLY with onions, they are generally part of the dish but not the entire dish itself (if that makes any sense).

Brown Rice - Vegetable Bowl with Tahini Dressing

We start the 4th and last week of Blogging marathon for this month today. My theme for this week is "Calcium Rich Foods". Here's some information to know about Calcium intake.

Calcium is the most vital mineral for strong bones. It is also essential for blood clotting, muscle contraction, and nerve function. If we don't take in enough calcium, our body uses the calcium reserves in our bones to supply the muscles, heart and nerves. So it's important that we take the required daily dosage of calcium -- milk and other dairy provide over 50% of dietary calcium, it is also found in beans and legumes, some green vegetables, such as spinach and broccoli, and nuts and fruit.

Vitamin D is vital for proper absorption of calcium and produced when the skin is exposed to sunlight. About 15-20 minutes of sunlight a day on the face and arms during the summer months enables the body to store enough vitamin D to last the rest of the year. 

High intake of protein and sodium (salt) increases the excretion of calcium in the urine. Also high intakes of caffeine can reduce the absorption of calcium.

Panaeng Curry with Tofu & Peppers

Panaeng Curry is one of my favorite Thai curries because it's creamy, mild and not as spicy as other Thai curries. Panaeng curry paste has peanuts and the usual Thai ingredients like lemon grass, galangal, garlic, coriander seeds etc. 

This curry usually is drier than most Thai curries. Its dryness is acieved by reduction, which, at the end, leaves the curry with an intense taste.

Vegetarian Wrap Sandwiches for Picnic

Time for another Blogging Marathon, BM# 6, and I’m part of group 2 that’s starting the marathon today with 19 fellow bloggers. Big thanks to Valli for organizing this edition. I’m super excited about this edition since I’ve taken “Picnic Food” as my theme. Picnics are so much fun, good time with friends & family and lots of good food.

We recently had a Father’s day picnic in a park close to where we live and we enjoyed it a LOT. Our dear host is an excellent organizer and we had everything from food to games all pre-planned and everybody had loads of fun.

Summer is already here in our neck of woods and what’s more perfect than having a picnic to enjoy the lovely summer weather. But while planning the food for a picnic, there are certain things to remember: do you have a cooler to keep the food chilled – if not then items that have eggs/ meat/ dairy etc. are NOT advisable to make. Do you plan to take silverware? If not then don’t make rice/ salads etc. that need spoons and forks to serve. Will the picnic spot have at least tables (if not chairs)? If not then don’t make anything elaborate to serve like a make yourself salad or rice and side dishes to go with it, portable sandwiches are perfect in this situation. So bottom line is do some research of the picnic area you will be visiting and carry food accordingly. Don’t forget to have lots of fun.

Enjoying the view

So for the next 7 days I’ll be posting recipes that are appropriate for picnics. Today I have these wraps that I made for our recent picnic. I made two fillings: Palak- Chole (Spinach-chickpea) & Teriyaki tofu. I took the spinach-chickpea filling idea from Nupur’s recipe here. Teriyaki tofu recipe is from Sala’s recipe here.

Wraps
Here’s how I made the wraps:
Ingredients:
Tortillas – 12 (I used spinach and roasted garlic flavored)
Cabbage - 1 cup, finely grated
Lemon juice - 2 tbsp
Broccoli slaw - 1 cup (this is packaged grated broccoli, carrots and red cabbage)
Jasmine rice - 1 cup, cooked

For Spinach – chickpea filling:
Chickpeas – 1 cup
Onion – 2 medium, finely chopped
Spinach – ½ bag of frozen chopped spinach (or 4-5 cups of fresh spinach)
Tomato puree – ¼ cup
Ginger+garlic paste – ½ tsp
Chana masala – ½ tsp
Red chili powder – 1 tsp
Turmeric – pinch
Salt – to taste

Method:
  • Soak chickpeas in lots of water for at least 6 hours and pressure cook until soft. Keep aside.
  • Heat 1 tbsp oil in a sautĆ© pan, add ½ tsp cumin seeds and once the seeds start to splutter add onions and sautĆ© until lightly browned around the edges.
  • Add g+g paste and turmeric, cook for a minute. Add thawed spinach and tomato puree, cook until spinach is cooked and tomatoes don’t smell raw, about 5-6 minutes.
  • Next add channa masala, red chili powder, salt; mix well.
  • Add the cooked chickpeas and cook until the heated through and the curry is almost dry.
  • Check the seasonings and adjust accordingly.
For teriyaki tofu:
Ingredients:
Extra firm tofu – 1 15 oz. package
Soy sauce – ½ cup
Mirin – ¼ cup
Brown Sugar – ¼ cup
Rice vinegar – ¼ cup
Fresh ginger – 2tbsp, grated

Teriyaki Tofu
Method:
  • Drain and press tofu for at leave an hour to remove all the extra moisture. See here for Sala’s excellent pictorial on how to press tofu.
  • Once ready, cut them into 1" long pieces and sautĆ© until lightly browned on all sides.
  • In the meantime make the teriyaki sauce: bring rest of the ingredients to a gentle boil in a small non stick sauce pan. Simmer for couple of minutes or until sugar is dissolved and thickens a little bit.
  • When the tofu pieces are evenly browned on all sides, pour in the teriyaki sauce and let the mixture bubble and thicken on low flame for 2-3 minutes. Turn the tofu pieces around to coat with the sauce. Turn off the heat and keep the tofu ready for making the wraps.
Assembling the wraps:
  • Microwave the tortillas for 25-30 seconds to make them pliable.
  • Spinach-Chickpea wrap: Mix grated cabbage with some lemon juice and season with salt and pepper. Place 2-3 tbsp spinach-chickpea curry filling and some cabbage mixture on the bottom half of the tortilla and fold the ends over the filling and roll and wrap to make the sandwich.
  • Teriyaki Tofu Wrap: Mix broccoli slaw with some lemon juice and season with salt and pepper. Place 2-3 tbsp jasmine rice, lay 3-4 tofu pieces and some broccoli slaw on the rice, fold, roll and wrap to make the sandwich.
  • Cut the wraps in half for easy handling.

Notes: Choice of fillings for the wraps is endless, just make sure that fillings don't make the wraps soggy. ortillas can be easily substituted with rotis/ chapathis for a kathi roll kind of wraps. These wraps can stay out for may be 4-6 hours and should be refrigerated after that.

Tofu Balls with Spaghetti

Vegan Mofo Day 28:

It is quite depressing that the long weekend is almost over and as usual it felt too short. For today's lunch I made these yummy tofu balls and served them over whole wheat spaghetti. Recipe is from The Ultimate book of Vegan Cooking by Tony & Yvonne Bishop-Weston.


Tofu balls are quite delicate and need to be cooked and turned very gently. Nudge the balls gently from the bottom when turning. They tend to stick to the pan, so it is very important they are lifted gently. (I know I said it too many times in 2 sentences, but they are very delicate and need to be treated ge......). The uncooked tofu mixture itself was so yummy that I tasted it far too many times than needed.


Ingredients:
Firm Tofu - 1 package, drained
Onion - 1 medium, grated
Garlic - 2 cloves, minced
Ground Cumin - 1tbsp
Ground Almonds - ½ cup (I used Almond meal)
Dijon mustard - 1tsp
Soy sauce - 2tbsp
Parsley - ¼ cup, finely chopped
Salt & Pepper - to taste

Spaghetti - 8 oz. (I made whole-wheat spaghetti)
Pasta sauce - home made or store bought - 1 cup

Method:
  • Take drained tofu, grated onion, garlic, cumin, almond meal, soy sauce, parsley, mustard, salt & pepper in a medium bowl. Mash with a fork or your fingers until everything is well mixed.
  • Make walnut sized balls and set aside.
  • Heat 2tbsp olive oil in a large sautĆ© pan. Slowly add the tofu balls and cook until they turn golden brown on all sides.*
  • Once done, remove from the pan and set aside.
  • In the mean time cook spaghetti according to package directions and heat the pasta sauce and keep ready.
  • To serve: Add spaghetti and pasta sauce in the serving bowl and arrange 4-5 tofu balls on the top. Garnish with basil and serve hot.
* It's advisable to cook the tofu balls in batches instead of cramming everything in one shot.
