Jalapeño Bread for #BreadBakers

This month for Bread Bakers we are baking with Peppers. Our host for the month Sue of Palatable Pastime wanted us to bake a bread with some sort of pepper -- fresh, dried, ground, hot or sweet. So my entry is this spicy and delicious Jalapeño Bread.

My sister buys this bread at a local bakery and it is very soft and very tasty. I've tasted it once or twice at her place, but don't really remember how it looks or tastes. When I was thinking of making the bread, I asked her to take a video of the bread. She took the time to buy a fresh loaf and with the help of my BIL made a video showing the cross section of the bread.

Salsa Picante

This is one of the condiments that I wanted to post for the mega marathon-condiment week, but didn't know which country to put it under. So I'm posting it today for 'Cooking from Cookbook Challenge'.
Salsa is a condiment made with tomatoes, onions, peppers and other ingredients. 'Picante' is a Spanish adjective meaning 'piquant', derived from the word 'picar' which means to sting, referring to the feeling caused on the tongue.
Spicy Tomato & Pepper Salsa
I usually make fresh salsas, the ones that are basically chopped and mixed together. This one is cooked till the veggies are tender and the sauce is thickened.

Pickled Jalapenos

Day 25: Preserving Summer Bounty - Pickled Jalapenos
Today I have a simple pickled jalapenos recipe to use up some of the jalapenos from the backyard. Recipe is from 'Everyday Food' magazine. This is a quick pickling method and it stays good in the refrigerator for about a month.

The recipe uses cider vinegar (aka apple cider vinegar) for the pickling purposes. Just a word of caution, boiling the vinegar gives out quite a strong smell and both my husband and son were bothered a lot by it. I pretended that didn't bother me, but it was quite strong to my liking as well :-)

Coconut Ceviche (Vegan Recipe)

I used to love watching Food Network. But with kids running around it has become almost impossible to watch any TV. Now a days I found the best time to watch my favorite channel is when I'm folding the laundry. So during one of my laundry folding session, I saw a new cooking show on Cooking Channel. It's called 'How to Live to 100' with Jason Wrobel as the host. I really liked the way how the host took a ingredient, transformed it into 3~4 different dishes and then talked about the benefits of using the ingredient.
Coconut Ceviche (Vegan Recipe)
In the episode I watched, Jason took Coconut as the ingredient and made this Vegan Ceviche using flesh from young coconut. It sounded delicious and looked pretty easy to make. So on my next grocery trip, I bought a young coconut and made this right away. It tasted great with tortilla chips or just as is.
