Flax Oat Wheat Dinner Rolls for #BreadBakers

It's time to bake for Bread Bakers again. Our host for this month is Deepthi who blogs at Baking Yummies. She wanted us to make either yeasted or quick, sweet or savory rolls. I had quite a roll recipes that I wanted to try on my Pinterest board. Finally narrowed it down to these Flax-Oat-Wheat dinner rolls.

These rolls are hearty and have an earthy taste with the addition of oats, wholewheat and ground flax seeds. These are perfect whole grain alternate to the soft and squishy white dinner rolls. They are great to make for cookouts or for your everyday dinner.

Heart of Winter Loaf

After enjoying a relatively mild winter weather in January, we are back in the freezer for February. I'm not complaining, not that I enjoy the cold but I'm happy when the weather is seasonal, if it is not then I get worried about global warming.

This 'Heart of Winter' loaf recipe is from King Arthur flour catalog and it caught my attention with its name itself. We are technically in the middle of winter and what perfect time but to make this bread right now.

Menthikura Pulusu Kura

Blogging Marathon# 50: Week 2/ Day 3

Dish: Methi Pulusu
For the final day of this week's blogging marathon, I had another recipe in mind. But then I saw this pulusu/ stew being made with methi (menthikura) on a Telugu cooking show and I thought it was an interesting way to cook with methi. So scrapped my previous idea and made this dish instead.

Pulusu or tangy stew is typically made with veggies like pumpkin, okra, bottlegourd, onion etc. I have made pulusu with spinach before and this methi version was equally delicious.

Meatless Meatballs with Soy Crumbles

My theme for this week's Blogging Marathon is "Lunchbox Recipes for Kids". Now this is a very challenging theme for me because of 2 reasons: One: my 5 year old has become a very picky eater and packing his lunch is quite a challenge most of the times. Two: Schools don't have microwaves to reheat the lunch, so whatever we pack has to taste good even at room temperature.

When my son was in kindergarten, his daycare had a very good lunch program. He had a vegetarian option everyday and the food was served hot. But now in kindergarten, school lunch menu has hot food everyday, but there are hardly any vegetarian options and so we have to pack him lunch. One thing we figured out is rice gets too cold and is tough to eat by lunch time, especially in winter.

Five Grain Cereal with Dried Fruit

For Day 2 of BM# 16 I made this healthy and delicious 5-grain cereal with dried fruits. We just came back from our vacation to Disney World in Orlando, Florida and I can't seem to forget the oats that I ate for breakfast in the resort for almost everyday. It was just simple cooked oats and they would add your favorite toppings on it -- either fresh berries/ dried fruits/ nuts etc. It was very filling and would keep me going until afternoon.

So when we got back I wanted to make something similar but more hearty and healthy. I found the recipe for this 5-grain cereal in "Cooking Light - Way to Cook Vegetarian" cookbook. Recipe makes about 10-12 servings, I made me a whole batch and stored it in an air tight container in the fridge, this way I can make my bowl of cereal whenever I feel like it.

New Pantry Additions

Lately I’ve started expanding my pantry staples with items that I have never used before. Here are some items that are new in my pantry/ fridge: Vital wheat gluten, Nutrition Yeast, Flax seed meal, Miso, Wheat Germ.

I made Seitan with Vital wheat gluten and nutrition yeast with Seitan O' Greatness recipe from here. This is a very versatile dish and you use any seasonings to make it your own. I added some cumin pd, coriander pd, pinch of turmeric. My husband thought it tasted a little bit like chicken, but it did not have the texture of chicken.
To use, just sauté in little bit of oil and you can use it in million different ways. Freeze the unsautéed seitan in plastic wrap or aluminum foil, it makes quick and easy BLD (Breakfast/Lunch/Dinner) recipes, so always make the complete recipe even if you are making for two.
I made Seitan Curry with mixed vegetables and coconut milk with half of the log (no pics.. sorry) and used half of the rest in wraps (lavash wrap smeared with mayo and filled with seitan, rice, onions, tomatoes and spinach).
I’m still snacking on the rest of the sautéed seitan. So good.. yummmmm..
