3 Day Detox Diet -- Detox Salad with Beets & Arugula

I have to admit I was a little skeptical to start a detox diet. I've never done a detox or a diet in my life and the thought of not eating what I want to eat for 3 days was a little disturbing. But I just wanted to do something for myself -- something for getting healthier.

It took me about 1 week to clean up the fridge and pantry of the mega marathon leftovers and then another week the body for the cleanse. It is best to go easy on coffee, dairy and gluten about a week before you start the actual detox diet. Alcohol and cigarettes are a big no-no a week before and during the cleanse.

Curry flavored Roasted Mixed Nuts

Roasted nuts are my husband's favorite go-to snack. He is the snacker in the house, grabs a handful every time he walks into the kitchen. I don't like snacking, I'm more of a 'eat a full meal and wait for the next meal' kind of a gal. Even when I snack, it has to be in a proper bowl, I don't do handfuls, I only have bowlfuls :-)

Anyway, my husband has been asking me to make roasted nuts for a long time and I finally made him these curry flavored roasted mixed nuts. Recipe courtesy Ellie Kreiger's Food Network show.

Mexican Chopped Salad with Jicama

Dish: Mexican Chopped Salad with Jicama
Jicama has recently become one of my favorite vegetable. It is crispy, slightly sweet and very refreshing. It is a root vegetable and falls under the taproot category. Rutabaga, parsnip, daikon are few other veggies that fall under this category.

I wanted to take a picture of jicama and asked my son to pose. Then my daughter wanted to hold it too for the photos. But in the end I couldn't pick just one, so I'm posting both their pics.

Sikil Pak (Pumpkin Seed Mole Dip)

For the last day of the Condiment week, here's a no-cook Pumpkin seed dip called Sikil Pak from Mexico. It is a specialty of Yucatan region and is rich, thick and very delicious.

Recipe is from 'Vegan Eats World' cookbook by Terry Hope Romero. When I first read the name, it sounded like an Asian dish but it is a Yucatan dip that is apparently very popular in many Mexican restaurants in the U.S. I've never seen it in any of the ones that I went to, so it was totally new to me.
