Peach Ice Cream (Eggless Recipe)

I didn't know that peach ice cream existed until I had it at a dairy farm last summer. It tasted so fresh and full of peach flavor. I was looking for an opportunity to make it and when I saw peaches on sale in our local grocery I bought and made this yummy ice cream.
Eggless Peach Ice Cream
When buying peaches, look for fruit that smell like what you want them to taste like. One good thing about peaches is that they ripen even after they have been picked. So you can buy them slightly ripe and finish ripening at home. But make sure to buy peaches that are heavy for their size but are not too hard (these will never ripen).

Sweet Milk Ice Cream

Here's a recipe for ice cream that tastes like the kulfi we are used to eating in India. This recipe for Sweet milk ice cream is from King Arthur catalog. It is one of the few recipes that I made the same day I saw it.
Ice Cream without Eggs
Fortunately I had all the ingredients on hand and the ice cream base came together in no time, though I had to wait overnight to freeze and make the ice cream. This recipe is made from a predominantly milk base instead of a custard base (with eggs) but it is creamy and almost gelato-like. The tapioca starch takes the place of the eggs to stabilize the base, lending it a rich, creamy texture to the finished ice cream.

Pumpkin Ice Cream (Eggless Recipe)

I don't want to say it loud but it has been a mild fall so far. Temperatures have been warmer than usual and we are occasionally still sporting our summer sandals and half sleeves. But the daylight hours have started to get shorter and the trees are changing into beautiful shades of red, yellow and gold.
Eggless Pumpkin Ice Cream
This pumpkin ice cream is perfect for this time of the year. Fall flavors with not so fall weather calls for an dessert like this. I tasted my first pumpkin flavored ice cream on one of my recent farm visit with few of my blog buddies. It was a pumpkin-vanilla soft swirl and I loved it. Also my son randomly asked for pumpkin ice cream recently, so I've been looking for a recipe.

Carrot Halwa Ice Cream

Did you ever eat warm carrot halwa with a scoop of vanilla ice cream? That is one extremely rich and decadent dessert to have (also a calorie bomb -- but you are allowed to indulge once in a while, not everyday, mind you!!). My mom and sister love this combination.

This ice cream combines carrot halwa and vanilla ice cream to make a flavor that is sure to be a hit at a Indian themed parties. Recipe is from here and it is just as it sounds, make some carrot halwa, make a vanilla ice cream base -- mix them both and churn.

Next ice cream I made this summer is this Dulche de Leche Ice cream. I had a bottle of dulche de leche in the fridge that my husband got from Argentina. It needed to used up and this ice cream from Smitten Kitchen sounded like the right recipe to make.
Eggless Dulche de Leche Ice Cream
This is one of the most easy ice cream recipes I've made. All it needs is bringing milk and cream to boil and then stirring in dulche de leche and setting aside to chill, then churning it in the ice cream machine to finish making the ice cream. I swirled some dulche de leche while putting it into a container.

My theme for the final week of this month's blogging marathon is 'Bookmarked Recipes'. Since it is almost the end of summer (sigh -- why does it have to end so soon!!!), I thought it is time to post the ice creams that I made during summer.

First up is 'Cookies & cream ice cream'. I read somewhere that 'Cookies & Cream' flavor is one of the most popular ice cream flavor and I told this little tidbit to my son. From that point on he started pestering me to make it for him (thanks to the summer vacation, he had too much free time on his hands to pester me).

Roasted Strawberry Ice Cream (3 Ingredient Recipe and No Ice Cream Maker required)

For the final day of this week's marathon, I made this amazing 3-ingredient Roasted Strawberry Ice cream that needs no ice cream maker. I did a happy dance when I found this recipe while looking for 3 ingredient dishes. I had all the ingredients on hand and it just sounded too good not to try right away.

I already have 2 strawberry ice cream recipes on the blog -- one with strawberry puree and the other with condensed milk, orange liquer etc. If you click on the links and see, you'll notice that the first one looks a little icy whereas the second one is quite creamy. The second recipe is very easy to make -- just mix all the ingredients and then churn in the ice cream maker.

Parsi Falooda

For the final day of this week's 'Parsi Dishes' I made this colorful dessert drink called Falooda. I wanted to make Parsi mawa cakes, but after all the sweet bakes from last month's marathon, I didn't want anymore extra calories. So the mawa cakes will have to wait for some time later.

Instead I made this rich and delicious Falooda drink. I had falooda bookmarked to make for a very loooong time and finally got a chance to make it. I didn't really know Falooda was a Parsi dish until I started looking for Parsi dessert recipes. It is an Iranian cold dessert drink called faloodeh, consisting of thin vermicelli noodles mixed in a semi-frozen syrup made from sugar and rose water.

Ice Cream Cake

Today's dessert is so simple to make that I feel silly posting a recipe for it. But it tasted amazing, so I felt I should share it here just so I remember to make it in the future. So if you are curious to know what it is, then let me tell you that it's nothing but softened ice cream with candy, cookies and nuts mixed in.

I made this ice cream cake to serve the kids at our BBQ party last weekend. As I was looking for recipes, I found Nigella Lawson's ice cream cake and I loved the idea of mixing crunchy and chewy mix-ins into good old vanilla ice cream. Come to think of it, vanilla ice cream is like a blank canvas that can be flavored with just about anything.

We are starting another edition of blogging marathon today. Can't believe we are almost at the mid year mark and before we know it, it will be holiday season and a brand new year again. Hmmmm... time sure is flying. Coming back to the present, we have been enjoying nice warm temperatures for the past couple of days and hopefully this weather is here to stay.
My theme for this week is 'Summer Specials' and for the first day I have a sweet and cool ice cream. I think it was my sister who once asked for a ice cream with nuts and I started looking for recipes online. One of the search led me to Sruthi's Part time chef blog and her butterscotch ice cream got me with her amazing clicks. I made the ice cream right away.

Vanilla Ice Cream (Eggless Recipe, No Ice cream maker needed)

This is my go-to recipe for Vanilla Ice cream. Recipe is from Eagle Brand site. It is super simple to make with just 4 ingredients. All that is needed is to mix all the ingredients and then churn in the ice cream maker. If you don't have ice cream maker, don't fret I've included the procedure to make it without the ice cream maker too.
Original recipe uses 4 cups of light cream or half-and-half, but I always have heavy cream and whole milk in the fridge, so that is what I used to make this ice cream. If you don't have ice cream maker, then use only Heavy Cream to get a creamy, smooth ice cream. Using light cream or half-n-half will make the ice cream too icy.

Mocha Ice Cream (Eggless recipe)

It looks like Summer has almost come to an end (bahhhh). Good things pass way too quickly and this summer flew past at rapid speed. Didn't do anything fun to mention with the husband travelling most of the season. I guess the only fun thing that my son did was to learn swimming :-)
I want to post some of the summer recipes that I have in drafts before the season ends. I made this Mocha Ice cream from King Arthur flour site in June, around the beginning of Summer. It is very simple to put together and even my 5 year old loved it.

Mango Gelato

Gelato has been on my to-make list ever since I bought my ice cream maker which was some 3 years ago. So when I saw the recipe for mango gelato in King Arthur flour's newsletter, I knew it was time to make this icy, creamy treat.

Gelato is the Italian word for Ice cream. I searched online for the differenc between ice cream and gelato, there is a ton of information, but I understood was that gelato has less air incorporated because it is churned much slower. Also gelato uses more milk than cream, so it has less fat than ice cream. Read this post from Serious eats to get a better understanding of the differences.

Milk Chocolate Ice Cream

Day 3 of Blogging Marathon# 30 and today's kid approved Summer treat for Chef Mireille's Kid's Delight: Summer Special event is this cool and creamy Milk Chocolate Ice cream. This is a very decadent dessert, perfect on a sunny day (or any day for that matter). 
I've been making eggless ice creams for quite sometime now and I've had good success with it. But this recipe uses 4 egg yolks. I had frozen some egg yolks after using the whites in making Strawberry birthday cake for 2 little girls who share the same birthday. As I was looking for recipes to use up the frozen yolks, I found this recipe for Milk Chocolate Ice cream on Annies- Eats. The recipe sounded amazing and the pic was too tempting, so I gave it a try and the resulting ice cream was super creamy and delicious.

After visiting Annies Eats I realized that July is National Ice Cream month. 3rd Sunday in July (that is the 21st of this month) is declared as 'National Ice Cream Sunday'.

Kid's Flower Pot Dessert

Kids love Ice cream. Kids love Cake. So what happens when we combine 2 of their favorite desserts in one easy to make/ assemble dessert -- they will ABSOLUTELY LOVE it. I made these for a party last weekend and all the kids when googoo-gaagaa over it. This is will be my last entry for Valli's Kid's Delight: 5 ingredient fix event happening right here this month.

I saw Pioneer Woman make edible flower pots on her show and thought it is a cool idea to serve cake and ice cream in a little terracotta pot, sprinkled with oreo (dirt) and some gummy worms. I bought tiny terracotta pots (2.25") from AC Moore and they were just the right size for my little guests. 'Ice cream wafer cones' would also be great as edible flower pot.
I used homemade chocolate cake and homemade flavored ice creams (here are recipes for homemade ice creams). But good quality store bought stuff would work perfectly. Pioneer woman used store bought pound cake.

Coconut Ice Cream

Summer means time for ice creams. Even though some might say (I'm sure my husband will agree) that ice cream can be eaten any time of the year. But at least in summer I don't have to say it's too cold outside to eat an ice cream :-)
I have stopped buying store bought ice creams more than 3 years back, when I bought my ice cream maker.  I make sure that the freezer is always stocked with vanilla and mango ice creams and I keep making new / fancy flavors when I feel like it, may be once every 3-4 months, but more frequently in summer.
I like my ice creams nice and creamy. I don't like icy stuff and since we are pretty good at portion control, I make full fat ice creams, so we can indulge once in a while.

Strawberry Ice Cream (Eggless)

Even though it's not technically winter yet in our neck of woods, temperatures have been hovering around freezing for the past few days. I have started to think about summer already and to remind me of the hot weather I'm posting my Strawberry ice cream recipe. This post has been in my drafts since summer but I haven't had a chance to post it, I thought it's better late than never. Also it's probably summer in some part of the world and I'm sure they have strawberries in season.

Chocolate Fudge Pops

For the last day of the marathon, I made these yummy Chocolate Fudge Pops, recipe courtesy from Everyday Food Magazine. This summer I made quite a icy and creamy treats to beat the heat, some old favorites like my Mango Ice cream and some new like these chocolate pops. I also tried my hand in making ice cream brownie sandwiches and frozen yogurt. Will try to post the recipes for these soon (hopefully before Summer ends).

Mango Ice Cream and a Birthday

Cook's Hideout completed 5 years this month. I created this blog as a hobby and a way to document my cooking trial and errors and I'm happy that I'm able to do just that even today. I've met so many incredible food bloggers along the way in the past few years and I've more virtual friends than actual real-life friends. I think about some of them who have stopped blogging over the years and wonder what they are up to now. I have to thank Srivalli for organizing the blogging marathons that keeps me on my toes and makes me post everyday, bonus being getting to know new bloggers and their amazing blogs. Thanks to my family for their patience. Thanks to each and every one of you who come to my blog for your encouraging words. I hope to keep going on many more years to come.

Mango ice cream is something that I absolutely adore and thought would be a perfect recipe to post for the blog's birthday. It used to be a delicacy when we were growing up, only available during summer time. I’m not sure if the situation is still the same in India, but here in the US, Indian groceries carry Mango pulp all through the year making mango ice cream accessible any time you want it.

I already posted a Mango ice cream recipe couple of years back, but this time I wanted to use the cornstarch thickening method that I’ve used for my vanilla ice cream to make it creamier and less icy. The end result was this creamy and delicious ice cream with no added preservatives, but filled with yummy mango goodness.

Ingredients:
Mango puree – 2½ cups
Heavy cream – 1 cup
Whole milk – 2cups
Sugar – ¾ cup
Cardamom powder – 2tsp
Cornstarch – 1½tbsp
Light Corn syrup – 2tbsp
Cream cheese – 3tbsp, softened (to make ice cream scoopable)

Method:
  • Whisk cornstarch with 3tbsp milk in a small bowl and set aside.
  • Add the rest of the milk to a sauce pan along with cream, corn syrup and sugar. Bring to a boil; lower the heat and simmer the mixture until sugar dissolves, about 5-6 minutes.
  • Add the mango puree and simmer for another 2 minutes.
  • Take off the heat and slowly stir in the cornstarch slurry, mix thoroughly and put it back on flame.
  • Return to boil and cook on medium flame until the mixture thickens a little, about 2 minutes.
  • Take the mixture of the heat, whisk in the softened cream cheese and cardamom powder.
  • Allow to cool completely; chill for 4 hours or overnight.
  • Once chilled, follow the ice cream machine’s instructions to make the ice cream. Enjoy!!

Eggless (Yet Creamy) Vanilla Ice Cream

The last ice cream I made was sooo good, rich and delicious, but it had way too many eggs in it that I couldn’t pull myself to make it again. At the same time it was soooo good, creamy & yummy, that couldn’t go back and make my eggless icy crystal version.
So that meant the ice cream maker had to collect dust for a couple months until I found this eggless version that is just as good but without the eggs. So when I saw this recipe that uses corn starch to thicken the ice cream, I had to make it right away.

I made this basic vanilla ice cream thrice already and it was a hit each time. Recipe also uses just little bit of cream cheese to give the final ice cream better scoopability & softness. The final result was this creamy with no crystals and an ice cream that melts in your mouth. I used whipped cream cheese on my second try and it made life much easier as you can use it right out of the fridge and don’t have to worry about softening it on the counter.


Ingredients:
Whole Milk – 2 cups
Heavy cream – 1 ¼ cups
Sugar – 2/3 cup
Light Corn syrup – 1½ tbsp
Pure Vanilla extract – 2 tbsp
Corn starch – 1tbsp plus 1tsp
Cream cheese – 3tbsp (1½ oz.), softened.

Method:
  • Mix corn starch with 2tbsp milk in a small bowl and set aside.
  • Add the remaining milk, heavy cream, sugar and corn syrup in a large sauce pan. Bring the mixture to a boil and cook on moderate heat until sugar dissolves, about 4 minutes.
  • Turn off the heat. Gradually whisk in the corn starch mixture. Return to boil and cook on moderately high heat until the mixture thickens a little bit, between 1-2 minutes.
  • Remove from heat and mix in the softened cream cheese. Let cool. Once the mixture is slightly cooled add the vanilla extract. Chill the milk mixture for at least 3-4 hours or overnight.
  • Once thoroughly chilled follow your ice cream machine instructions to make the ice cream. Enjoy right away or freeze for later.
I served my ice cream topped with the chocolate ganache I made here.
