Dulche de Leche Ice Cream (Eggless recipe)

Next ice cream I made this summer is this Dulche de Leche Ice cream. I had a bottle of dulche de leche in the fridge that my husband got from Argentina. It needed to used up and this ice cream from Smitten Kitchen sounded like the right recipe to make.
Eggless Dulche de Leche Ice Cream
This is one of the most easy ice cream recipes I've made. All it needs is bringing milk and cream to boil and then stirring in dulche de leche and setting aside to chill, then churning it in the ice cream machine to finish making the ice cream. I swirled some dulche de leche while putting it into a container.

Eggless Dulche de Leche Cake

Bake of the Day: Celebration Cakes -- Eggless Dulche de Leche Cake
After yesterday's giant chocolate chip cookie, I made this Dulche de leche cake for my son's birthday that weekend. My husband travels on business to Argentina frequently and gets this amazing local dulche de leche from there which I use in all kinds of different desserts, like this creme caramel and this yummy cake. You can make your own dulche de leche at home or you can buy the canned variety or you can use just regular condensed milk (it will taste different but it will still be good).
Eggless Dulche de Leche Cake
This is an eggless cake and is sweetened with just the dulche de leche. I always tell myself not to experiment a new recipe for a party. But I always do that -- I'm too bad that planning ahead of time.

Russian Honey Cake -- Medovik (with Eggless Custard Filling)

For this month's International Cooking Challenge, Saras @ Saras Yummy Bites is taking us to the world's largest country in the world, Russia. Russia's cuisine is very diverse just like the country and she gave us 3 traditional recipes to choose from. I picked this irresistible Russian Honey Cake from the list.
Russian Honey Cake -- Medovik (with Eggless Custard Filling)
I made it as a part of my Russian meal I did earlier this month. This honey cake is very different from any cake I've ever made. The cake part is not a cake after all, it is basically rolled out dough that is baked in the oven to make somewhat like thin pancakes. These thin cakes are then layered with creamy custard filling and then chilled to make a delicious cake.

This month, our blogging marathon group is setting off on a culinary journey around the world. I have to say this group is filled with hyper active women who get crazy ideas and thanks to our ever enthusiastic leader, Valli, we are able to channel all our energies into something interesting and exciting at the same time. So after our A-Z Indian cooking series, we started thinking on what the theme for the next mega marathon would be and A-Z International cooking series was the next obvious and logical choice.
Starting today, we will be visiting a different country and enjoying a dish or two from the local cuisine. I've always loved the concept of Passport to a certain country by making and enjoying their dishes right at home without even leaving your kitchen. Rachael ray used to make some of these passport style dishes in her '30 minute meals' years ago.
Deciding on one country to cook from a whole list was a difficult task for me. To make things simple, I decided to cook from countries that I'm really familiar with. Since my husband travels a LOT and gets a chance to taste the local food, I've cooked from the countries he visited. Also I'm lucky to have a very diverse group of friends from different countries. I've asked them to share their favorite recipes that I can cook for this series. For a few countries, I played it safe and cooked simple dishes that I'm sure the whole family likes. 
Creme Caramel with Dulche de Leche
A for Argentina: Starting off the series with Argentina. It is located in the southeastern South America and one of the countries that my husband frequently visits. He likes the country, but says it is really difficult to get vegetarian food there. Not surprisingly because Argentina has the highest consumption of red meat in the world. But he found some authentic Italian restaurants that serve amazing Italian food that he enjoys a lot.
Argentina is famous for its Tango and for delicious milk based desserts like dulche-de-leche, alfajores and so on.
