Murmure Chiwda

Blogging Marathon# 61: Week 4/ Day 1

Dish: Murmure Chiwda from Varada's Kitchen
We are starting the final week of blogging marathon for this month today and my theme for the week is one of my favorite -- cooking from fellow blogging marathoners. As a group we are checking and commenting each others posts very frequently and I have a ton of recipes bookmarked from them.
I already have quite a few dishes made from the blogs, so this one's from my drafts. This Murmure chiwda is from Varada's Kitchen and I made it for Diwali (back in November). This is a easy, quick to make snack that can be whipped up in no time.

Sweet Corn Uggani (Borugula/ Maramarala Upma)

Dish: Sweet Corn Uggani
It's time to start yet another edition of Blogging Marathon. My theme for the first week is 'Cooking with Corn'. Corn was rarely used in cooking while I was growing up. We used to enjoy grilled corn on the cob during rainy season, but my mom hardly ever used it to cook anything.  Though sweet corn soup was famous in those days, but we ate it only at restaurants once in a while.
Nowadays corn, especially sweet corn, is being used very widely in Indian dishes. I use corn quite a lot in my cooking and make corn pulao, corn gravy curry for rotis. I keep a bag of frozen corn in the freezer and also buy fresh when I see some good quality ones in the grocery store.

So for the first day I made a snack that is made with sweet corn and murmure or puffed rice. Uggani is a famous snack in Rayalaseema region in Andhra Pradesh. Typically it is lightly cooked, but today I have a no-cook version that is equally delicious. This is a quick and easy dish that is great to be served as an evening snack.

Masala Murmure/ Mandakki Usal

My partner for this month's Taste & Create is PJ @ Seduce your Tastebuds. PJ has a ton of quick and easy recipes and I tried quite a few from her blog in the past. But for this month's Taste & Create, I chose a very quick and easy Mandakki Usal aka Masala Murmure from PJ's blog.

I wanted to make something quick for my lunch one day and happened to this recipe on PJ's blog. As she says, it takes no time to put together and is spicy and delicious. Since murmure don't need to be cooked for long, the only time consuming part of the dish is chopping and cooking the veggies. I thought the addition of grated ginger really made the dish taste spicy and yummy!!
