Sourdough Carrot Cake

I made this cake first time more than 3 years ago when I first got the sourdough starter. I took it to work and everyone loved it there. But I haven't had a chance to make it again until now. I saw the recipe in the King Arthur Catalog and it reminded me of the moist and delicious cake that I made years ago.

Sourdough starter makes this cake very moist and there are no tell-tale signs of sourness or the addition of sourdough starter anywhere. I halved the original recipe and made 1 8" round cake. Then frosted the cake with a very simple cream cheese frosting.

English Muffin Bread

Dish: English Muffin Bread
Today's bread is very simple to make and needs only 1 rise, it can be made in less than 2 hours from start to finish. A great bread for newbies, not much kneading involved -- mix up the ingredients, scoop into the baking pan and let rise, then bake it off to get a nice textured bread that is perfect when toasted and with some jam or chocolate hazelnut spread.

Soft Wholewheat Bread

Dish: Wholewheat Bread
Making homemade bread is quite satisfying. I'm not a pro at bread baking and I always follow the recipes to the T. Baking is a science and I don't think I have the expertise to make up my own bread recipes yet. I go-to site for everything related to baking is King Arthur flour site. The only changes I usually make is to add wholewheat flour for a part of white flour other than I don't take too many chances in baking.

Wholewheat bread is a challenge to make. I've tried quite a few recipes and most of them turn out 'almost cardboard-like'. I added molasses in one recipe and the bread turned out a strange brown color with a strong molasses flavor -- I didn't get the seal of approval from the family members. So in my quest for whole wheat bread, I tried this recipe from King Arthur Flour.

We are back to the regular weeking marathons this month. It has been quite a roller coaster ride exploring the dishes from all the Indian states. So I'm taking a short break from Indian food and decided to bake some yeast breads for the first week of Blogging Marathon# 40.
My husband bought me this Bread maker recently. He wanted to buy one a while back, but I was resisting the idea -- didn't want to clutter the kitchen with another appliance. But when it went on sale couple of months ago, we went ahead and bought it. Since then we have stopped buying bread unless it is absolutely necessary and I bake about 2 loaves of bread every week.
But what I found out was that the bread baked in the machine is rather unsightly -- awkwardly large and has a gaping hole in the bottom. I couldn't even pull myself to take a picture of that monstrosity -- don't get me wrong, it tastes amazing, but it is just not camera ready (you know what I mean.. right!!!!)

Homemade Bread Bowls for Soups

King Arthur site is my favorite place to look for baking recipes. They have fool proof recipes and almost everything I have baked from there have been a success. So if you are a beginning baker, then start your search in the King Arthur site and I'm sure you will slowly gain confidence in your baking skills.
Homemade Bread Bowls for Soups
I made these homemade bread bowls to serve the broccoli-cheese soup.This recipe makes buns that are perfect to serve soup for 1 -- not too big and not too small. They are also soft and great to eat just as is. Make the buns smaller -- may be 8~10 instead of 6, skip the dried thyme and you have great dinner rolls or even breakfast rolls. They taste awesome with a smear of soft butter and if you are like my son, then spread some Nutella.

Self Saucing Chocolate Cake (Vegan recipe)

Happy Valentines Day to everyone.
After posting the Mango custard yesterday, I thought I should also post something with Chocolate for Valentines day. Valentines day without chocolate is probably unthinkable for some, but history channel says that this association happened only recently even though the roots of Valentines day go all the way back to Roman era. Chocolate is a well known aphrodisiac, but the main reason for chocolate being the center of this holiday could be the candy companies marketing strategies. Whatever it might be, here's another reason to enjoy our beloved chocolate.
I saw this recipe in King Arthur's catalog and made it the other day for my son's afternoon snack. It is super simple to put together and tasted absolutely a.m.a.z.i.n.g. The warm cake with chocolate sauce served with ice cream is just too irresistible.

Recipe is supposed to be made in 8~10 oz. ramekins or oven safe mugs, I didn't have either, so used 7oz. mini ramekins. Also I veganized the recipe by using soy milk, canola oil (instead of melted butter) and egg replacer (instead of an egg).

Bread Sticks

Blogging Marathon# 37: Week 2/ Day 1
Theme: Kid's Delight -- Oven Baked Snacks
Dish: Bread Sticks
We begin our 2nd week of Blogging Marathon today and my theme for this week is 'Kid's Delight -- Baked Treats'. This month's Kid's delight host PJ @ Seduce your tastebuds wants us to send in kid approved baked dishes. So I have 3 recipes for this week that are approved by my little ones.
First up are Oven baked Bread Sticks. We love the soft bread sticks served at Olive Garden and I was looking for a recipe to make them for a while. When I saw this recipe in King Arthur's catalog, I baked them right away. Even though they are not as soft as the Olive Garden version, they taste great when served warm with some marinara sauce.

The original recipe makes 3 dozen bread sticks but I halved the recipe. I also added some wholewheat flour (atta) to make them a little healthy. Recipe is super simple to make and I'm sure they will be devoured by both by kids and adults alike.

Almond-Pistachio Cloud Cookies (Gluten free & Dairy free recipe)

This is the first cookie I made for this holiday season. I had jars of almond paste and pistachio paste in the pantry and I found these cookies on King Arthur flour site. There is no flour, no dairy and no oil/ fat recipe -- gluten free and diary free recipe. Egg whites hold the cookies together. Cookies turned out chewy and delicious.

These cookies are very easy to put together. No refrigeration is required, so these can be made when with no prior planning and no time at all. Perfect when you need cookies or something sweet really really fast :-)

Pumpkin Cake Muffins (Eggless Recipe)

I wanted to use up some of the pumpkin puree I had left after making a dessert for Thanksgiving (recipe for Individual no-bake pumpkin pie coming up soon).  I browsed through Pinterest board and found these delicious Pumpkin Cake doughnuts recipe from King Arthur Flour.
I don't have a standard size doughnut pan, so I made them into muffins instead. Also since I only had 1cup of pumpkin puree left, I adjusted the quantitiesof the ingredients accordingly. Original recipe had 3 eggs and with my downsizing the recipe I had to use 2 which I comfortably substituted with egg replacer powder

I found the muffins to be a little too sweet to my liking. I think the next time I make it I will reduce the sugar quantity by ¼cup. I should have smoothed the tops of the muffins before baking, they turned out a little rustic looking :-)

Sourdough Multi grain Sandwich Bread

It's that time of the year when the ovens in most households are going to be working overtime. It's holiday season and to jump start my baking spree I joined the lovely group of ladies doing the bake-a-thon. Champa @ Versatile Vegetarian Kitchen is the brain behind  this bake-a-thon.
The group has been doing this baking marathon for the past couple of years and I'm joining in the fun for the first time this year. Group is planning to post 3 days a week, so look forward to some delicious sweet & savory bakes in the coming days.
I'm always looking for new recipes to use my sourdough starter. Even though I forget to feed it for weeks together, the starter is still doing well (knock on wood). But I try to bake something with it at least once every 2 weeks.
Sourdough Multi grain Sandwich Bread
This recipe is from King Arthur Flour's site. I like this bread because it has multigrains and whole wheat flour to make the bread more nutritious. I added Bob's Red Mill 5 grain rolled cereal, but any combination of seeds and grains can be used here.

Eggless Chocolate Cake for Wilton Course 1 - Class 4

Dish - Eggless Chocolate Cake
It is the last day in April which means it is the last and final day of our Blogging Marathon# 27. Kudos to the entire group for successfully completing this challenge and thanks to Valli for being the best organizer as ever. 
Coming back to my Wilton decorating course, for 4th class we had to bring a cake that was torted, leveled and frosted ready to decorate. Final class was dedicated to making roses and writing/ printing on the cake -- all the final touches for a good looking cake.
Eggless Chocolate Cake

As I mentioned in my previous post, I was the only student left in the class and I had the undivided attention of the instructor. I'm not sure if this was good or bad, since I felt like an unfocused 5 year old making these roses. There are about 10 things that need to be remembered while making the roses like right hand should be steady, hold the tip at a certain angle, rotate the flower nail in one direction and so on. I kept forgetting one instruction after the other much to my chagrin. Oh well, finally I got the hang of it, but my roses where nowhere as cute as the instructor's. I need to practice a little more on my technique.

Corn & Scallion Pancakes

Dish: Corn & Scallion Pancakes
When I started looking for breakfast dishes with corn, most of the recipes used cornmeal instead of whole corn. I found this savory corn pancakes recipe in the King Arthur Flour catalog. These can be served for breakfast or even brunch with black bean salsa and a dollop of sour cream.
Recipe uses Sourdough starter and since I'm always looking for ways to use my starter I made these pancakes right away. I made a few changes to the original recipe to make it eggless and add some fiber. Pancakes turned out great - they looked and tasted like cheelas (chickpea dosas/ crepes).

Wholewheat Oatmeal Bread

Theme: Baking with Whole Grains
Dish: Wholewheat Oatmeal Bread
Wholewheat Oatmeal bread has been on my to-make list for a while now. For some reason the combination of wholewheat and oats sounded delicious. So when I saw the theme "Baking with Whole Grains", I knew right away that I have to give this combo a try.
I found this amazing bread recipe on King Arthur Flour site (my go-to site for all things baking). When I saw that the recipe had 117 reviews and most of them with 5 stars, I knew that thiswais going to be a fantastic recipe. I wasn't wrong, this is probably the BEST bread I've ever baked in my short baking career. For all newbie bakers, this should be the first bread to try, so you can build your bread baking confidence.

Roasted Vegetable Sandwich with Homemade Cheesy Burger Buns

As I was thinking about the theme for this week, "Cooking with Appliance", one appliance I use a lot after my blender is my oven. Here in the US, ovens are standard in every house, even rental apartments come with a standard size oven. For today's recipes I've used the stand mixer and the oven to make a complete meal.

Double Chocolate Zucchini Bread

We begin the 3rd week for Blogging Marathon today and my theme for next 3 days is "Kid Friendly recipes with Chocolate" for Kid's Delight event. I know first hand how much my kid loves chocolate. I mentioned about his LOVE for all things chocolate a number of times here and so when I saw the theme with chocolates, I thought this what could be better than making more chocolate delicacies for my son.

Since all these recipes are going to Vaishali's Kid's Delight - Chocolate event, they have to be eggless. So for today's chocolate delight, I made this "Double chocolate Zucchini Bread" from King Arthur flour site. The original recipe had eggs, but I used egg replacer to make it eggless.

Grilled Veggie & Cheese Stuffed Rolls

After that decadent stuffed breakfast and indulgent stuffed lunch, I have a light & healthy stuffed dish for dinner. Today's recipe is from King Arthur Flour's Baking Sheet newsletter. In this dish, roasted vegetables and cheese are rolled in a yeasty bread dough and baked to make light & flaky stuffed rolls that are perfect for a meal with some salad on the side or even as a quick pick-me up breakfast. 

The original recipe used roasted vegetables, but I used left over grilled vegetables. Also the original recipe  called for garlic herb cheese (like Boursin) or goat cheese, but I used a combination of cream cheese and grated mozzarella.

Cheddar Cheese Soda Bread

Today I have a savory and cheesy bread that gets done in about an hour and goes well with soups. It has been a little chilly for the past few days and I decided to make some soup and a quick bread for dinner. When I found this recipe on King Arthur flour’s site, I thought it would go perfectly with my red lentil and tomato soup. 

If you are wondering what is the difference between soda bread and regular bread (like I did when I saw the recipe), soda breads utilize the reaction between baking soda and buttermilk to leavening instead of yeast.

Cinnamon Sticks

This is a recipe that my sister, who lives in India, wanted me to make since her hubby really likes Cinnamon sticks. I looked for recipes online and found this recipe on King Arthur’s website. Recipe seemed simple to make with very few ingredients that are easily available in India. But she wanted the recipe to be eggless, so I substituted the egg with egg-replacer.

I sent my sister detailed pictures on how to make the cinnamon sticks along with KAF recipe. She tried them and reported back saying that the taste was great. Personally I thought the cinnamon sticks were a little too buttery, but my husband and my BIL seemed to like them. I halved the recipe from the original.

Cinnamon Sticks

Ingredients:
All purpose flour – 1cup
Sugar – 1½ tsp
Salt – ½ tsp
Butter – ½ cup or 1 stick (4 oz.), softened to room temperature
Milk – 1tbsp
Egg-replacer powder – 1½ tbsp (original recipe used 1 egg, since I halved the recipe, I used half of the required egg-replacer)
Cinnamon – 2tbsp
Granulated Sugar – ¼ cup
Milk or cream – to brush the pastry

Cinnamon Sticks-Ingredients
Method:
  • Whisk flour, sugar and salt in a medium bowl. Work in the butter into the flour mixture until it forms crumbles and holds shape when squeezed.
  • Whisk egg-replacer powder and milk in a small bowl and add to the flour mixture and mix just until everything is cohesive.
  • Roll the dough and pat into a 3”x5” rectangle; wrap in plastic and refrigerate it for an hour or for up to 2 days.
  • Preheat the oven to 350°F. Line a baking sheet with parchment paper. Remove the dough onto a lightly floured surface and roll it out into a 10” x 15” rectangle about 1/8” thick.
  • Brush half of the lengthwise surface (i.e. the 5” x 15” strip) with milk/ cream and sprinkle cinnamon sugar** evenly all over. Fold the unfilled side of the pastry over the filled side and press the edges lightly.
  • Brush the resulting 5”x15” pastry with milk/ cream and sprinkle the remaining cinnamon sugar. Using a pizza cutter or a sharp knife, cut the pastry crosswise into ½” strips that are 5” long.
  • Hold the strip on each end and twist them to give them the characteristic “cinnamon stick” shape.
  • Place them on a prepared baking sheet and bake the cinnamon sticks for 25-30 minutes or until golden brown.
Remove from the oven and after couple of minutes, place them on a wire rack to cool completely. Enjoy with your evening cup of tea or coffee.

Cinnamon Sugar
**Note: To make cinnamon sugar sugar, simply mix the 2tbsp cinnamon with 1/4 cup of granulated sugar.

Grilled Pizza

So after having Burgers with home-made buns for our first veggie bbq, the next logical dish to make seemed to be Grilled pizzas. I found an awesome recipe for perfect grilled pizza on King Arthur’s site. This is my go-to website for all things baking, they have so many different recipes, some of which are guaranteed by KAF and I absolutely love their blog as they have step-by-step recipes of some very yummy bakes. If you don’t know about KAF, do check them out here.

Coming to the recipe, I made this recipe twice already and it’s been a big hit both times. Recipe is very easy to put together and the dough is very easy to handle as well. We made both thin & thick crust pizzas with the dough and both of them were excellent. My only addition is 2tbsp Extra virgin Olive oil to the dough.


Recipe adapted from King Arthur Flour
Ingredients:
All purpose Flour – 2½ cups
Semolina flour – ¼ cup (I used fine Sooji from Indian store)
Whole-wheat flour – ¼ cup
Yeast – 1tbsp Salt – ¾tsp
Water – 1cup, luke warm @ 110ºF
EVOO – 2tbsp
Method:
  • In a large mixing bowl, dissolve yeast in water. Stir in the salt, EVOO, semolina & whole wheat flour.
  • Gradually add in all-purpose flour until it forms a ball.
  • Remove from the bowl and knead the dough on a lightly floured surface until smooth, for about 10 minutes.
  • Place in a greased bowl, cover with plastic wrap and place it in a warm place to rise until doubled in bulk, about 2 hours.
  • Degas the dough after 2 hours and let rise again for another 40 minutes. Now, punch it down and divide into smaller pieces and roll into pizzas: We made 6 individual thin crust pizzas the first time and for our second attempt, we made 5 individual thick crust pizzas.
  • Heat the grill to medium hot; gently drape the rolled dough on the grill grate (either directly on the grill or you can buy a pizza grill topper) and grill for 1-2 minutes. This should be long enough to make it stiffer; brush EVOO on the grilled side and top with your favorite toppings. Grill for another 4-5 minutes until the toppings are hot and cheese is melted. Enjoy right away.
I think grilled pizzas are quick and easy to EAT and have an awesome smoky taste. My choice of toppings (pick all for a supreme loaded pizza or pick 1 or 2 toppings): Caramelized onions, Sautéed mushrooms, tomatoes, grilled veggies (like eggplant, red onion, peppers etc), tandoori paneer (paneer marinated in tandoor spices and grilled) and lots of cheese (of course). Enjoy!!
