Thai Tofu Pizza on Spelt Crust

Dish: Thai Tofu Pizza on Spelt Crust
For the last day of this week's marathon, I have an interesting pizza recipe. The base is a No-rise spelt flour crust and the topping is spicy peanut sauce with crumbled tofu. I was in an experimenting mode and found these recipes -- crust recipe from Vegan Richa and Thai tofu topping recipe from Nasoya -- and wanted to give them a try.

No rise instant pizza crusts seem to be the common theme for all three days this week (check out the instant-pizza crust and chickpea flour crust). This spelt flour pizza base doesn't need any rising time and is ready to roll once you have the topping done. Richa's original recipe has BBQ tofu topping, but I used the Thai style peanut-Tofu instead.

Chickpea flour Pizza with Pesto

Dish: Chickpea flour Pizza with Pesto
After yesterday's Instant pizza recipe, I have another instant pizza today too. This one's made with chickpea flour or besan. The crust tasted a lot of cheela to me, but instead of cooking on the stove top, the crust here is baked in the oven. Apparently this chickpea crepe is also associated to France where these are called Socca and are a popular street food usually served with frosty-cool rosé.

As I was looking for instant pizza bases, I found this Socca Pizza recipe on Cookie and Kate blog. The chickpea base in baked under the broiler until set -- so the longer it bakes, the more crispy and browned the pizza gets.

Saag Pizza (Indian Style Spinach Pizza)

We are into 2nd week of blogging marathon and my theme for this week is 'Pizza'. With the kids home on summer vacation, I knew they would be very happy if I made some pizza at home, so picked the theme. First up is a Indian style pizza topping on an Instant pizza crust.

I have quite a few pizza recipes on the blog and most of them are traditional crusts that need at least 3 hours to up to 18 hours of rise time. So I wanted to try a crust recipe that doesn't need too much time to make. This recipe from Mel's Kitchen worked out perfectly. It needs just 10 minutes of rise time and then you are ready to make pizzas.

Easy to make Pizza Dough with Italian Vegetarian toppings

Dish: Pizza Dough with Italian Vegetarian toppings
Pizza is probably the most popular Italian dish all over the world. Each country conveniently customized the toppings to appeal to the local tastes -- like the spicy toppings in India and the extra cheesy toppings in America. But from what I heard, Italian pizzas are not overloaded with cheese or toppings and are usually made with light and refreshing tomato sauce instead of a slow simmered heavy tomato sauce that the American pizzas tend to use.

I've a few pizza recipes on the blog already, but wanted to try a new pizza crust recipe from King Arthur flour. They say this is the 'easiest pizza you will ever make'. After making it I can assure you that it is in fact very easy to make this pizza.

Pizza Mac and Cheese

Dish: Pizza Mac and Cheese
It was crazy snowy weekend in our neck of woods. I don't think I've seen that much snowfall in one day in all of my 15 years in the US. Storm stuck around the whole day Saturday and Sunday was spent in cleaning up the mess. Thankfully my husband was around for the shoveling, though I had to do my part too.
Vegetarian Pizza Macaroni and Cheese
Coming to today's recipe for BM, I bookmarked this Pizza Mac and Cheese from Food52. I made this dish 3~4 times in the past couple of months. You can guess why -- who doesn't like pizza and pasta separately, now if you put them together it is absolutely delicious. My son went gaga over this dish.

Corn Pizza on Multigrain Crust for #BreadBakers

'Whole Grain breads' is the theme for this month's #BreadBakers challenge. Thanks to Cali's Cuisine for choosing this interesting theme. Any yeasted or chemically leavened bread using at least half of the grains whole is what we need to come up for the challenge.

So I did the easiest thing I can do, opened my Whole Grain Baking cookbook by King Arthur Flour and found this Corn Pizza recipe with Multi grain crust. The crust has cornmeal, barley flour and wholewheat flour along with a little bit of bread flour. Per serving there are 43gms of whole grains in this recipe.

Turkish Pizza Bread (Pide)

After all the breads and loaves posts, today I have a recipe for a slightly different pizza. It's pizza from Turkey called Pide. It is a soft and chewy bread that is made with yogurt and traditionally shaped with a slight hollow that can accommodate any number of fillings.

Pide is essentially a boat shaped bread that is used as a pizza base and can be filled with grilled veggies, cheese, eggs. Even sweet fillings like fruit and custard can be used as fillings and served as cake.

Pizza Muffins

The title of the post itself is very catchy, especially to kids and adults who love pizza. That is what drew me to making these cheesy and delicious pizza muffins for this month's 'Home Baker's Challenge'. I've missed couple of challenges due to many reasons, but when I saw Priya's savory bakes and these pizza muffins, I had to bake them.

Both my kids love pizza, so this was an obvious choice for me. These muffins have all the flavors of a pizza -- basil, cheese and pizza sauce. You can add any vegetable that you like on your pizza to the batter to make the muffins taste just like your favorite pizza. My super picky son likes onions, tomatoes and corn (he recently added spinach to that list), so added some corn to the batter. I think the next time, I'm going to add some caramelized onions to give some more flavor to the muffins.

Taco Pizza (Vegetarian Recipe)

Dish: Taco Pizza
Today's dish is a Mexican - Italian fusion dish, Taco pizza. My son loves tacos and pizzas and this seemed to be a great dish which combines both of his favorites. I saw the recipe being made on TV by the Pioneer Woman and I knew I will be making it for my kids real soon.

Refried black beans are spread on the pizza instead of tomato sauce here and then baked with some grated cheese on top. What happens after the pizza comes out makes it a Mexican specialty.

I have tried quite a few pizza crust recipes in the past and I think I found couple of recipes that I really like and work very well -- like this whole wheat crust and this regular pizza dough. But when I saw this pizza dough with semolina recipe in one of the King Arthur catalogs, I really wanted to try it out.

I have never used semolina in baking before and I remember one of my friend telling me that fine sooji is a good substitute. I had to ask my blog buddies to find out if they ever used sooji in baking and they confirmed that they were able to successfully bake with sooji. So I went ahead and made the pizza dough with sooji.

California Veggie Pizza Recipe on Whole wheat Crust

I have missed the last edition of International Food Challenge because of summer vacation and possibly poor planning on my side. Even this post is late, but I didn't want to miss the 1st Anniversary of IFC. Hearty congratulations to Saras and Shobana for coming up with the event idea and completing 1 successful year.
For this month's challenge, Saras picked 2 dishes from each of the previous years challenges. It was quite tough picking just one and I ended up making California Veggie Pizza that Joanne T Ferguson suggested.

My son has been asking for a pizza and I thought I can shoot 2 birds in 1 shot :-) I wanted to try whole wheat pizza crust and voila King Arthur has an amazing recipe for whole wheat pizza crust. One thing to keep in mind while making this crust is that the dough has to be refrigerated overnight, at least 18 hours, so plan accordingly. Don't tell your kids you are making the pizza until you are ready to put it in the oven or you will be in a night long trouble.

Pizza Monkey Bread

For this month's 'Home Baker's Challenge' we are making Bread. Manjula of Desi Fiesta is the host for this month and she chose 4 different breads for trying. After deliberating on which one to choose, I finally ended up making a quite simple, but super tasty Pizza Monkey Bread. I hope to make the others on the challenge too sometime.

Monkey Bread is usually a sweet, sticky, gooey bread served for breakfast in the US. I went with a savory pizza flavor this time and used a pizza crust for the bread. The bread was so soft and fluffy and tasted great when dipped with pizza sauce/ marinara sauce. To make life easy, you could also use store bought pizza dough and make this monkey bread in a jiffy.

Homemade Pesto Pizza

This is our first Home Bakers Challenge. Home Bakers is an enthusiastic group of baking enthusiastic bloggers and is started by Priya Suresh @ Priya's Versatile Recipes. For the first month's challenge Divya @ Divya's Culinary Journey picked Homemade Pizza.

We were given couple of different pizza crust and toppings recipes and I made Martha Stewart's pizza crust recipe with few minor changes and a store bought pesto topping. I liked that this recipe can be conveniently made in the food processor. I added wholewheat flour along with all-purpose flour to add some fiber and nutrition.

Kids LOVE cheese, kids LOVE pizza, so it's only obvious that we have a pizza post for Kid's Delight: 5 ingredient fix, that I'm hosting this month right here. Thanks to Valli for giving me the opportunity to host.
Coming back to kids and their love of pizza, my 5 year old son is no different. He absolutely loves pizza and he thinks Friday is the best day of the week and he wants everyday to be a Friday just because they have pizza for lunch in school. He wanted me to make meatball pizza because he saw that flavor on the pizza box and wanted to see how it tastes. So, of course I had to make it for him.

Vegetarian Wholewheat Calzones

Today we begin the 2nd week of Blogging Marathon, my theme for this week is "Stuffed Breads". To make the theme challenging Valli wants us to make very specific stuffed breads: Stuffed Yeast bread, Stuffed Roti/ Paratha & Stuffed Naan/ Kulcha. 

So for the "Stuffed Yeast Bread", I made a "Calzone". Calzone is nothing but a folded pizza, all the gooey and yummy goodness of pizza in a portable turnover form. After tasting her first calzone ever, my mom commented that this is better than pizza because your fingers are clean when eating and there are less chances of toppings falling off. I have to agree with that. Calzones are easier to carry and cleaner to eat.

Chocolate Pizza (Grilled)

Chocolate & Pizza are two of my son's favorites (or can I say, any kid's favorite), so what perfect way to combine these two than make a Chocolate Pizza. I made this chocolate pizza on the grill using the goof-proof grilled pizza recipe I posted the other day. But this can be made in the oven with any of your favorite pizza crust or even store bought pizza crust to save time.

Grilled Pizza

I don't want to say it aloud, but the fact of the matter is we have almost come to the end of summer in our neck of woods. It is still feels hot not, but it won't be too long before the leaves start to change color and the wind starts to get chilly. So, before ALL of that happens, I want to post from Grilling Recipes that we have been enjoying in the warm weather.

One of my favorite Grill recipes that I tried this summer is this Grilled Pizza, recipe courtesy Vegetarian Times magazine. This is one fool proof recipe to make excellent grilled pizza. The trick is in pre-baking the crust in the oven to set it and then finish with the toppings on the grill. Pre-baking helps in easy transportation of the loaded (or should I say overloaded) pizza from the table to the grill and there is no way your pizza is going to sag over the hot grates.

Grilled Pizza

So after having Burgers with home-made buns for our first veggie bbq, the next logical dish to make seemed to be Grilled pizzas. I found an awesome recipe for perfect grilled pizza on King Arthur’s site. This is my go-to website for all things baking, they have so many different recipes, some of which are guaranteed by KAF and I absolutely love their blog as they have step-by-step recipes of some very yummy bakes. If you don’t know about KAF, do check them out here.

Coming to the recipe, I made this recipe twice already and it’s been a big hit both times. Recipe is very easy to put together and the dough is very easy to handle as well. We made both thin & thick crust pizzas with the dough and both of them were excellent. My only addition is 2tbsp Extra virgin Olive oil to the dough.


Recipe adapted from King Arthur Flour
Ingredients:
All purpose Flour – 2½ cups
Semolina flour – ¼ cup (I used fine Sooji from Indian store)
Whole-wheat flour – ¼ cup
Yeast – 1tbsp Salt – ¾tsp
Water – 1cup, luke warm @ 110ºF
EVOO – 2tbsp
Method:
  • In a large mixing bowl, dissolve yeast in water. Stir in the salt, EVOO, semolina & whole wheat flour.
  • Gradually add in all-purpose flour until it forms a ball.
  • Remove from the bowl and knead the dough on a lightly floured surface until smooth, for about 10 minutes.
  • Place in a greased bowl, cover with plastic wrap and place it in a warm place to rise until doubled in bulk, about 2 hours.
  • Degas the dough after 2 hours and let rise again for another 40 minutes. Now, punch it down and divide into smaller pieces and roll into pizzas: We made 6 individual thin crust pizzas the first time and for our second attempt, we made 5 individual thick crust pizzas.
  • Heat the grill to medium hot; gently drape the rolled dough on the grill grate (either directly on the grill or you can buy a pizza grill topper) and grill for 1-2 minutes. This should be long enough to make it stiffer; brush EVOO on the grilled side and top with your favorite toppings. Grill for another 4-5 minutes until the toppings are hot and cheese is melted. Enjoy right away.
I think grilled pizzas are quick and easy to EAT and have an awesome smoky taste. My choice of toppings (pick all for a supreme loaded pizza or pick 1 or 2 toppings): Caramelized onions, Sautéed mushrooms, tomatoes, grilled veggies (like eggplant, red onion, peppers etc), tandoori paneer (paneer marinated in tandoor spices and grilled) and lots of cheese (of course). Enjoy!!

Vegan Potato Pizza

I was looking at my cookbook collection and I realized that I have made a big progression over the years in selecting cookbooks. I bought cookbooks from places you wouldn’t even think to look for books. The first cookbook I bought “Indian cooking” was from Costco and it has very limited vegetarian recipes. I remember just glancing at the book cover and the next thing you know; book was home, didn’t even bother to see what was in the book. My next cookbook was from “Marshalls” and the same thing happened again.

I collected quite a few books that have not much use to me as they have minimum vegetarian recipes. But with time I realized (and a nice little discussion with my DH) that I’m amassing all these book to gather dust and that’s when I started to research a little bit before actually buying (and if you want to know, the last 4 cookbooks I bought were from amazon). I bought all of Isa Chandra’s vegan cookbook collection recently and I’m very very happy with all 3 of them.

I also have to mention about the great library that I have in town; it is a part of a co-operative library system and if my local library doesn’t carry a particular book (which is 9 out of 10 times), they can borrow it for me from any of the 75 other libraries… how cool is that!!! I might have borrowed about 25 books till now using this (or should I say misusing this). If I think I like the book and I should have it, then I buy on amazon. Its been working great for me.


So now coming to the recipe, this is my entry to Vaishali’s (@ Holy Cow-Earth Vegan) Vegan-Italian event. Recipe is from Isa’s Vegan With a Vengeance (VWaV) and has two very unusual pizza toppings: Potato and Tempeh crumbles.
And what do you know Pillsbury Pizza Crust is vegan; and I had Bertolli’s tomato and basil pasta sauce on hand; that cut my prep to practically nothing. I changed the recipe just a little bit since I didn’t have some of the ingredients on hand, but both DH and I liked the pizza very much.


Ingredients:
Pizza Crust – 1, homemade or store-bought (I used Pillsbury brand)
Potato – 1 medium, thinly sliced
Tempeh crumbles* – 3 tbsp (Recipe follows)
Pizza sauce – 1/3 cup
Garlic – 3 cloves, thinly sliced
Onion – 1 small, thinly sliced
Olive oil – for brushing
Method:
  • Preheat oven to 450°F.
  • Rinse potato slices until the water runs clear, 2-3 times to remove any excess starch.
  • Roll out the dough onto a pizza stone or foil covered baking sheet.
  • Spread the tomato sauce with the back of a big spoon on the crust. As per Isa you should still be able to see some of the crust through the sauce-otherwise pizza might get soggy, so that’s what I did.
  • Scatter all the other ingredients on the crust making sure that potatoes and onions lay flat for even cooking. Drizzle little olive oil on potato, onion and garlic to make sure that they don’t dry out in the oven.
  • Bake in the oven and check after 8 minutes. Once the crust is lightly browned the pizza is ready, takes about 12-14 minutes.
  • Remove and let cool before enjoying this unique pizza.

Tempeh Crumbles:
Ingredients:
Tempeh – 1 pk, any variety
Fennel Seeds – 1 tbsp
Dried Basil – 1tsp
Dried Oregano or marjoram – 1tsp
Garlic – 2 cloves, minced
Soy sauce or Tamari – 2tbsp
Olive oil – 1tbsp
Lemon juice – 1tbsp
Salt – to taste

Method:
  • In a small pan, crumble tempeh; add enough water to almost cover it. Over medium-high heat, simmer until most of the water evaporates; about 12-15 minutes.
  • Drain remaining water; add the rest of the ingredients and cook on medium heat stirring occasionally till lightly browned; about 10 minutes.

Pizza with Ricotta & Fontina:

I wanted to make this pizza crust for a very very long time. Finally I made it this weekend and it was so good. It is very quick and easy pizza crust recipe. Dump all the ingredients in the food processor, pulse till it comes together, let it rise for just 1 hour, roll, top, bake and enjoy. The whole pizza comes together in less than 2 hours that’s including the rising time. I’m so impressed that this will be my go-to pizza recipe.
Another important thing to note about this crust is that it is full of Whole grain goodness and there is no oil.. none at all. So there is no need to dab each slice with 2-3 tissues to soak up the extra oil.. Wow.. I’m so so impressed. I followed the recipe to the T, please find it here. Thanks Jai & Bee.
Tomato sauce & Topping recipe is from Vegetarian cookbook. My husband does not eat mushrooms, so I made zucchini topping for him. This is one of the simplest tomato sauce recipes ever and is also going to be my new go-to recipe.

Ingredients:

For tomato sauce:
Canned chopped tomatoes – 14.5 oz. can
Passata – 2/3 cup (I used crushed tomatoes instead)
Garlic – 2 cloves, crushed Dried Oregano – 1 tsp
Red chili flakes – ¼ tsp
Bay leaf – 1 (fresh or dry)
Salt& Pepper – to taste

For topping:
Mushrooms – 4 cups
Garlic – 1 clove, minced Oregano – 1 tsp (I used ½ tsp dry instead)
Summer squash – 2 medium, cut into thin rounds (I used green and yellow)
Ricotta cheese – 1 cup
Fontina cheese – 8 oz. grated











Method:
  • Preheat oven to 500°F and place your pizza stone to pre-heat as well.
  • To make the tomato sauce, combine all the ingredients in a sauce pan, cover and bring to a boil. Uncover and simmer on medium-low flame for 20 minutes.
  • To make the topping, heat 2 tbsp oil in a large sauté pan, add garlic and mushrooms and sauté for 5 minutes or until the mushrooms are tender. Season with salt and pepper. Keep aside.
  • Repeat the process for the squash rounds as well.
  • When the pizza dough has puffed up for 1 hour, roll it out into a fairly thin crust. Spread 3-4 tbsp sauce leaving 1” area around the edge. Top with the toppings, cheeses, oregano, and chili flakes (optional). Bake for 10-12 minutes or until the cheeses are all oozy and delicious. Enjoy..
