Indian Style Nachos with Kidney Beans (Naan-Chos)

Dish: Indian Style Nachos with Kidney Beans
I was raking my mind on what nachos to make for today. I googled quite a bit to find something I liked and then found these vegetable chili nachos on Foodgawker. But instead of topping the nachos with traditional chili, I thought of giving the dish an Indian touch by topping it with Rajma masala (Kidney bean curry).

So I went ahead and Indianized (is that even a word???) all of the components and made it the same way as the regular nachos. This dish turned out so delicious and I was very impressed with my own creation.

7 Layer Mexican Dip

Dish: 7 Layer Mexican dip
My theme for this week's blogging marathon is 'Snacks for Movie Night'. Family movie nights have become rare with my husband's crazy travel schedule but we try and catch up once in a while. I'm not big on snacks, I rather eat a full meal and I'm happy. But the kids and the husband love snacks. So for the next 3 days, I'm going to share some make ahead or quick to make snacks that are great for a movie night (or for any night or party for that matter).
7 Layer Mexican Dip
First up is a Mexican layer dip. It has 7 layers with gaucamole, refried beans, salsa, sour cream, shredded cheese, olives and scallions. If you are up for it, you can make some of the layers at home, or if you are like me, just buy some good quality guacamole, refried beans and salsa.

Tabbouleh with Guacamole in a Tortilla Wrap

This morning my son, who just woke up, asked me why doesn’t our town have “nowhere”. I was searching for words for a little bit and said there is nothing called “nowhere”. He retorted back, then how did Lightning Mcqueen (the race car in Cars movie) get lost in the middle of nowhere???? Every town should have a "middle of nowhere". I was thinking to myself, how the heck am I supposed to know that, ask the people at Disney who made the movie. Phew, these kids make you sweat sometimes..

Well since the day started with a LOT of thinking, I decided not to think too much about dinner and to keep it simple and easy. Keeping with the “Cooking from the cookbook” theme I made Bulgur tabbouleh with guacamole from The Ultimate Book of Vegan Cooking, wrapped them up in a tortilla and called it a day..
