Butternut Squash Queso Fundido

Super Bowl weekend is coming up and I'm sure all sports fans are gearing up for a fun game night. I am not a big football fan and don't follow it too closely. But I'm excited about the half time show and the commercials more than the game itself :-)

This queso dip made with butternut squash will be a yummy addition to your super bowl party menu. It is secretly healthy with the addition of squash and sports two-thirds less fat than the classic queso (or cheese) dip.

Classic Hummus

I love hummus. I use it as a spread on sandwiches, wraps and even made a bread with it. But never made hummus myself at home -- I wonder why!! All it needs is 2 main ingredients -- chickpeas and tahini and that's all you need to make this creamy and delicious dip.
Hummus is known as the poor man's food in the Middle East and it is a versatile dish. It can be served as a snack or with any meal of the day -- it is served for breakfast for Israel. It is an easy and delicious way to add protein to the diet.
Classic Hummus
This recipe is from Vegetarian Times magazine. The recipe is a little unusual in that it uses warm chickpeas -- the author says the heat helps cut the garlic's acidity. It is best to make the hummus from scratch using dried chickpeas (instructions on how to cook chickpeas from scratch are included at the end of the post).

7 Layer Mexican Dip

Blogging Marathon# 53: Week 2/ Day 1

Dish: 7 Layer Mexican dip
My theme for this week's blogging marathon is 'Snacks for Movie Night'. Family movie nights have become rare with my husband's crazy travel schedule but we try and catch up once in a while. I'm not big on snacks, I rather eat a full meal and I'm happy. But the kids and the husband love snacks. So for the next 3 days, I'm going to share some make ahead or quick to make snacks that are great for a movie night (or for any night or party for that matter).
7 Layer Mexican Dip
First up is a Mexican layer dip. It has 7 layers with gaucamole, refried beans, salsa, sour cream, shredded cheese, olives and scallions. If you are up for it, you can make some of the layers at home, or if you are like me, just buy some good quality guacamole, refried beans and salsa.

Qatar -- Motabel (Smokey Eggplant & Tahini dip)

Dish: Motabel (Smokey Eggplant & Tahini dip)
We are going to Qatar today because from the little I know there are no more countries that start with Q :-) Qatar is a sorerign Arab country located in Western Asia. It is world's richest country per capita due to the presence of large natural gas reserves and oil reserves.
Qatari cuisine is very similar to other Middle eastern countries. I picked a eggplant dip recipe from Qatar. It seems like some version of eggplant dip is present in all of the Mediterranean cuisines. Motabel/ Moutabel is almost like Baba ghanoush with smokey roasted eggplant as the main ingredient.

Homemade Tortilla Chips with Creamy Avocado Dip
We are currently experiencing a heat wave in our neck of woods and it has been might hot outside. Kids and I are staying inside and only get out if it is absolutely necessary. I guess that's the joy of being a stay at home mom. It has been a challenge feeding a picky eater who's home for summer vacation and he says he's hungry ALL the time. So I've been looking for some quick and healthy snacks to feed my little one.
