First stop is in Brazil and here's a Brazilian version of French toast. It is served around Christmas time. Recipe is from 'Vegan Brunch' cookbook and is made with bananas and cornstarch and no eggs.

Dish: Baked French Toast
We all love French toast in our house. I have tried quite a few variations of French Toast recipes before, but this baked overnight French Toast recipe is something I tried recently with a friend for our Holiday brunch party.
We usually have pot lucks for most of our get-togethers and for the holiday brunch party I hosted, one of my friends suggested this Praline topped Overnight French toast by Paula Deen. She said she ate it at one of her friend's house and it was delicious. She sent the recipe over and we both made it together for the party. We actually put everything together the night before, which, by the way, only takes about 5 minutes and we spent the next 2 hours chatting :-) The next morning I baked it off in the oven, just before everyone came.

Eggless French Toast (with Custard powder)

Dish: Eggless French Toast
For the final day of this week's marathon, I made a simple eggless French toast using this No-Knead Light Whole wheat bread. I love French toast, be it with egg or without. I like the puffy slightly sweet bread drizzled with some maple syrup or honey.

It's been a while I made French toast and wanted to make it with the first batch of whole-wheat bread, but that loaf was all gone in a blink of an eye. So I baked another loaf and told my mom clearly that the leftovers were for French toast and nothing else. Thankfully I had a few end slices left to make this yummy treat that can be served for breakfast or as an evening snack.

Eggless Stuffed French Toast Roll Ups

Dish: Eggless Stuffed French Toast Roll Ups
Final day of Blogging marathon and today's dish was the toughest of all to select. I usually make a note of all the dishes that I want to make for the theme right after Valli announces the themes. But this week under the theme 'Get it Rolled' I had the first two dishes cooked and done (Summer Rolls & Chana Dal Kebabs) long back, but the third dish was eluding me.

I probably went through 10 different things to make--mentally, but some seemed too elaborate (no time for that) or involved deep frying (it's too hot to deep fry) or I didn't have the ingredients to make a dish. As I was quickly exhausting all my options, one morning I woke up and wanted to make French toast for breakfast and remembered seeing French Toast roll ups on Pinterest. I made them eggless following Hari Chandana's recipe from here.

Stuffed French Toast

Time seems to fly. I can't believe we are in the middle of July already, before we turn around it will be Christmas and New Year again **sigh** I wish time could stay STILL for a little while. Keeping still is something I keep telling my 4 year old who bounces around the whole house to do. But just like time he keeps running away.

Speaking of running time, today starts the 3rd week of Blogging marathon and the theme I chose for the week is "Stuffed Foods". I tried 3 new stuffed dishes for this week that I've never made before and I actually surprised myself on how good they turned out (if I can say so myself).

Nutella & Strawberry Jam Bread Pudding

Today is the day after Christmas, last day of our 3 day long weekend and I woke up really late this morning. If it was like any other weekend I would have skipped breakfast and went straight to lunch, but as I said it is the last day of our 3 day looong weekend and I wanted to make something special for breakfast.

I had this bread pudding in my mind, but I wanted to make it without the croissants and make it (very very) little healthy. I had whole grain white bread on hand and I used this recipe with nutella and strawberry jam to make the bread pudding.

French Toast

This will be my post for the 2nd day of Blogging Marathon. It's been quite a while that I posted back to back and since I'll have to do this for the next 5 days, I better get used to it. Follow up on my camera, I think I might have lost the egg fried rice pics from yesterday's post, but I've quite a few photos to make up for that in this post.

Coming to the recipe, Our weekday breakfasts usually consist of toast or cereal. Which is why I try to make something interesting on the weekends, just so it feels like a weekend and not another rushed weekday. My son loves pancakes & waffles and these items feature on most of my weekend breakfast menus. Also I freeze the leftovers in individual portions for quick weekday breakfasts.

This past weekend, I decided to try something new and made French toast from America’s test kitchen. I made some changes to the recipe: I used 2% milk instead of whole milk since we don’t buy whole milk in our home. I also reduced the quantities of the ingredients as I was making only 3 serving instead of 4 as in the original recipe.

The recipe is copyrighted by Cook’s Illustrated/ America's Test Kitchen(AND I don’t want to get into trouble them for tweaking/ changing the recipe), so I’m not going to give the recipe, but will give you a partial pictorial. (So yesterday's post has no pictures, this post has no recipe--you guys must be thinking this lady is a sham. Please bear with me and come back tomorrow for a post with both, I promise there will be both even though it will be about something extremely basic and simple).

All my previous attempts left me with eggy & flavorless French toasts. This recipe makes EXCELLENT French toasts with just the right amount of sweetness and the texture is beyond belief. I’m going to be using this recipe for a very very long time.

French ToastSoaking bread in Custard (Eggs, Milk, Melted butter, brown sugar & Spices) for 20 seconds each side.

French Toast
Cooking French Toast on Medium-low flame for 3 minutes per side or until it becomes golden-brown.
