Thai Curried Noodles for #Food of the World

We are visiting Thailand for this month's Food of the World event. Thai cuisine is one of my favorite and I have tried and posted quite a few Thai dishes on the blog. I looked through my 'Buddha's Table' cookbook and found this Curried Noodles recipe.
Curried Noodles
This is a spicy and delicious dish that is perfect to serve on a chilly winter day. The list of ingredients is long but all of them are easily available in well stocked Asian grocery stores. I made a trip to my local Korean market to get the noodles and some other ingredients and I was set to make the dish.

Cherry Tomato Kurma

Dish: Cherry Tomato Kurma
For the second day of  'Healthy Family Dinners', I have a creamy and delicious kurma made with cherry tomatoes. This dish can be served with either rotis or simple vegetable pulao.

I have been cooking a lot with cherry tomatoes lately like this cherry tomato pachadi or this cherry tomato & kale pasta. I make sure to keep some handy to make quick pasta sauces or toss into salads for a juicy bite.

Cherry Tomato Pachadi (Cherry tomato Chutney)

Cherry tomatoes have lately become my absolute favorite. I buy a big tub of them from BJ's and use them in different dishes. They are so juicy and have just the perfect taste. I planted a cherry tomato plant in my garden this year, I'm waiting for my harvest.

After adding them to salads, pastas and other non-Indian dishes, I wanted to make something Indian with them. After a quick call to my mom, I set out to make this quick, easy and tasty cherry tomato pachadi.

Asparagus & Spinach Pasta with Checca Sauce

Dish: Asparagus & Spinach Pasta with Checca Sauce
Today's dish is a simple pasta with sauteed asparagus and spinach that is then mixed with a no-cook checca sauce. We had this dish at California Pizza kitchen couple of months back and I wanted to try it at home ever since.

The first time I made it, I wasn't sure if the kids would like it. But both the kids came back for seconds. This dish will be in my meal rotation now.

Cherry Tomato & Kale Pasta

I love cherry tomatoes and usually keep a pack of red or yellow cherry tomatoes in the fridge. They are so juicy and can be eaten just as is. They are great to add in salads, pastas and even on crostini.

This recipe is from 'Meatless' cookbook by Martha Stewart Living. Cherry tomatoes are cooked till they burst and then stirred with pasta and kale. It is a very simple recipe with few ingredients and can be whipped up in less than 30 minutes, perfect for a busy weeknight.

Pasta with Fresh Tomato Sauce

Past weekend we went to Apple picking for the very first time. I'm not a big fan of apples and apple picking never appealed to me that much. But I wanted to do something fun with the kids on the weekend and found a pick your own apple farm very close to my sister's home. We didn't pick too many apples since it started to drizzle and rain and the kids started getting restless. They actually had fun playing in the hay bale maze for a little bit before it started to rain harder.

You must be wondering, why the talk about apples when the dish here is made with tomatoes. As I said we didn't pick too many apples, but the farm also has a fresh produce market and they had colorful cherry tomatoes that I picked up. Since it is almost the end of summer and finding fresh, juicy tomatoes is going to be difficult, I couldn't resist from buying them.

Summer Pasta Puttanesca (Vegan recipe)

Weather in our neck of woods is very Spring like -- hot one day, sprinkles and chilly the next day. Spring is one of my favorite seasons -- I love the budding trees, blooming flowers and the crisp mornings. Not many might agree with me, which includes my husband and my son, who suffer from Spring allergies. But I still like spring.
Coming back to today's pasta dish, I watched this being made on America's Test Kitchen cook show and I really liked how the chef made a fresh tomato sauce using grape tomatoes. Grape tomatoes are consistently good all through the year, so this is a great dish to make any time of the year.

For this month's International Food Challenge, Priya Suresh @ Priyas Versatile Recipes is taking us on a culinary journey through Campania region of Italy. There are various regional cuisine in Italy and Campania is one among them. Campania is a highly populated region in the southern Italy, located on the Italian Peninsula, with the Mediterranean sea to the west. Best known around the world for its Pizza.

Campania's exuberant cuisine relies on sun-kissed vegetables and herbs, salty capers, dried pasta, and fresh farmhouse cheeses, chief among them water buffalo's Mozzarella. Campania is home to over 80 percent of Italy's water buffaloes, so the Campani produce a number of delicious water buffalo's milk cheeses. Though none as wide spread or beloved as their Mozzarella di Bufala.
