Strawberry-Chocolate Chip Pancakes with Strawberry Maple Syrup

Dish: Strawberry-Chocolate Chip Pancakes with Strawberry Maple Syrup
For the second day under Kid's Delight -- fruits in any form theme, I made strawberry pancakes and served them with strawberry maple syrup. My kids love pancakes and waffles for breakfast, but I rarely make them. After a lot of nagging from them, I finally treat them with some pancakes.
Eggless Strawberry Pancakes
Last month, we went strawberry picking and seeing all the beautiful strawberries we got too excited and picked way too much than we can really handle. Strawberries are quite fragile and need to be treated very gently. I sorted them out and put them in a single layer on paper towel lined baking sheets in the fridge.

At one point, I had about 3 baking sheets in the fridge. I almost had a panic attack thinking of the berries going bad. But thankfully I was able to use all of them up without wasting any. I couldn't stop myself from taking these pictures, they are just such great posers :-)

So 2 of the ways I used the strawberries are in this eggless strawberry-chocolate chip pancakes and strawberry maple syrup. These pancakes use sour cream, but well whisked yogurt can also be used instead.
Pancakes turned out soft and fluffy. Both my kids loved them, but my little one enjoyed them even more because she absolutely loves strawberries :-) These pancakes are great to make for Mother's day, so colorful and yummy!! May be I can train my son to make them for me next year ;-)
Eggless Strawberry Pancakes
Recipe adapted from here:
Ingredients: Makes 16~18 medium pancakes
Whole wheat Pastry flour - 1¾cups
Sugar - 2tbsp
Baking powder - 2tsp
Baking Soda - ¼tsp 
Salt - ½tsp
Sour cream - 1cup
Butter - 2tbsp, melted
Milk - 1½cup
Vanilla extract - 1tsp
Strawberries - ½cup, chopped
Semi sweet or dark Chocolate chips - ½cup

Method:

  • In a large mixing bowl. combine flour, sugar, baking powder, baking soda and salt.
  • In another mixing bowl, whisk together sour cream, melted butter, milk and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Stir in strawberries and chocolate chips. Set the batter aside for 15~20 minutes.
  • Heat a griddle on medium flame. Lightly grease the griddle and ladle ¼cup of the batter. Cook till bubbles start forming on the top and the bottom is lightly browned, about 2 minutes. Flip gently and cook on the other side for about 1 minute.
  • Serve hot with strawberry maple syrup.
Eggless Strawberry Pancakes
Strawberry maple syrup:
Ingredients:
Strawberries - 1cup, chopped
Maple Syrup - ¼cup
Vanilla extract - ¼tsp

Method:
  • In a small saucepan on medium heat, cook strawberries until mushy. Add maple syrup and simmer the mixture for 3~4 minutes. Finally stir in the vanilla extract and turn off the heat. Serve as needed. Pour any leftover syrup into a airtight bottle or container and refrigerate. Can be stored for up to 2 weeks.
