Gingerbread People Cookies

Bake of the Day: Gingerbread People Cookies
I love the smell of Gingerbread houses -- the vanilla frosting mixed with the spices from the gingerbread makes it feel like Christmas time. 3 years ago, when I was still working, our department decided to participate in the annual gingerbread house competition. It was so much fun to come together as a team and even though we didn't win, I think we had a great time making the gingerbread house.

My son has been making gingerbread houses in school and we keep it around the house for a while because I love the smell of it and it feels like Christmas for a little longer in the new year too.
This year my son volunteered to bring Gingerbread people to school. It was his brilliant idea (!!!!!!) to include people in their gingerbread houses and when the teacher said they are difficult to find, he volunteered to bring them himself (?????). Well, since I love baking, I didn't complain and took up the project.

Spicy Cabbage dry Curry

There are some vegetables that get treated the same way ALL the time. In our household, cabbage is one of them. I usually make a dry curry with grated ginger and coconut which tastes great but after a while I got bored of cooking it. So I bookmarked this recipe from the 'India Cookbook' by Pushpesh Pant.

This is a huge cookbook with 1000 recipes (out of which may be 500~600 are vegetarian) and since I'm borrowing it from the library, I don't have too much time to even go through the recipes in detail. Luckily there are pictures of the dishes at regular intervals in the book and I looked through them to find the dishes I want to try. Even with that I have more than 20 recipes to try and I think I can keep the book till the end of this month. I'll be happy if I can try at least half of what I bookmarked.

Vegan Gingerbread Cookies

For this holiday season, I bought 'Vegan Cookies Invade your Cookie jar' cookbook on Amazon. For the couple of days I was leafing through the book breaking my head to decide what to make first. My son came home from school yesterday and asked me if he could have a gingerbread cookie because he made a  paper gingerbread boy in school and was wondering how it would actually taste.

I knew right away that Gingerbread cookies would be first cookie to be made from my new cookbook. Luckily I had all the ingredients on hand. My son helped me with reading the ingredients and the instructions. After I was done making the dough and set it in the fridge to chill for 1 hour, he pestered me a million times if it was time to bake. Oh these kids and their restlessness :-)
