Pizza Mac and Cheese

Dish: Pizza Mac and Cheese
It was crazy snowy weekend in our neck of woods. I don't think I've seen that much snowfall in one day in all of my 15 years in the US. Storm stuck around the whole day Saturday and Sunday was spent in cleaning up the mess. Thankfully my husband was around for the shoveling, though I had to do my part too.

Coming to today's recipe for BM, I bookmarked this Pizza Mac and Cheese from Food52. I made this dish 3~4 times in the past couple of months. You can guess why -- who doesn't like pizza and pasta separately, now if you put them together it is absolutely delicious. My son went gaga over this dish.

Indian Flavored Risotto (Vegan Recipe)

Finally spring seems to have found its way into our neck of woods. I can see the tiny buds on trees and hopefully they'll bloom within a week now. Somehow spring makes me very happy -- everything is waking from a long slumber and with the harsh winter that we had even people seem to be coming out of hibernation -- I mean the heavy jackets, boots and so on.
Today, I'm excited to share with you a dish that is colorful and springy (??) and is inspired from a dish off a specialty menu at the Wynn Resort in Las Vegas.
I've never been to Vegas and it is one of the destinations on my bucket list. My ex-manager had a condo in Vegas and she used to take a yearly vacation there. I always thought Vegas was all about the casinos until she told me there are many things to do with kids too like hiking, sight seeing etc.

Vegas is a foodie heaven with plethora of restaurants to dine at and a lot of them fine dining with exquisite menu options. So today I'm trying to put my own spin on one of the dish based on Wynn's specialty menus created by famous vegan chef Tai Ronnen.

Taco Pizza (Vegetarian Recipe)

Dish: Taco Pizza
Today's dish is a Mexican - Italian fusion dish, Taco pizza. My son loves tacos and pizzas and this seemed to be a great dish which combines both of his favorites. I saw the recipe being made on TV by the Pioneer Woman and I knew I will be making it for my kids real soon.
Vegetarian Taco Pizza
Refried black beans are spread on the pizza instead of tomato sauce here and then baked with some grated cheese on top. What happens after the pizza comes out makes it a Mexican specialty.

Potato Quesadillas


This is my entry to Recipes for the Rest of Us-Dinner being hosted by lovely Siri @ Siri’s Corner. This event is started by Ramki @ One Page cookbook and the rules say that the recipe should be easy enough for a 10 year old to make.

I’m sure almost all 10 year olds like potato (I sure did and my DH says he could eat potato everyday even now, so I can imagine how he was when he was 10 J) and they would want these for themselves.

Coming to the recipe, its nothing but spicy aloo bhaji tucked in a tortilla (roti) with lots of cheese.

Ingredients:
Potatoes – 1 medium, cubed
Onions – ½ small, chopped
Red chili powder – a little bit or a lot (depending on how spicy you like)
Garam masala – to your taste
Salt- to your taste
Cheese – you 2 handfuls
Tortillas – 2 (I used sundried tomato-basil flavored, but any flavored tortilla would work. Chapati/ Roti would be great too)

Method:
  • First make aloo cury: Heat few drops of oil in a pan, add onions and potatoes; sauté till onions are tender, will take around 5 minutes.
  • Add a small glass of water, cover and cook on medium-low flame till potatoes are tender, about 10 minutes. Add chili powder, garam masala and salt; mix well and keep aside.
  • To make the quesadillas: Heat a griddle or tawa on medium heat; spray with non-stick cooking spray; add the tortilla and let it brown a little bit on one side; then flip. Add palmful cheese on half the tortilla, and then add half potato curry then another palmful cheese. Fold tortilla in half and press lightly with a spatula, so the cheese melts and sticks. Flip and cook on the other side till brown spots appear. Remove and let cool** for at least 5 minutes and then cut into wedges.
** If the quesadillas are cut when the cheese is still hot, then the cheese oozes out.
