Mixture/ Chivda with Kaarappusa (Sev)

For the second day of Blogging Marathon#22, my mom made this savory crunchy mixture that is perfect for snacking. This is also great as a little treat along with sweets for last minute guests that pop in during the festival season. 

My mom makes quite a few varieties of mixtures with cornflakes, poha (atukulu) and this. today's mixture consists of kaarappusa/ sev, little maida biscuits, fried peanuts, fried gram dal (putnalu) and curry leaves and is seasoned with chili powder, ground cumin and salt.

Ingredients:
For Sev/ Kaarappusa:
Besan (chickpea flour) - 1cup
Rice flour - 2tbsp
Red chili powder - 2tsp (or as per taste)
Ajwain (vaamu) - 2tsp
Hot Oil - 3tbsp
Salt - to taste

For Maida Biscuits:
All purpose biscuits - 1cup
Salt - to taste
Hot oil - 1tbsp
Baking powder - a pinch

Other Ingredients:
Fried Peanuts - 3tbsp
Roasted gram dal (Putnalu/ Dalia) - 3tbsp
Curry Leaves - 12, dep fried
Ground Cumin - 2tsp
Red Chili powder - 2tsp
Salt - to taste

Method:
  • Make the Sev: Mix all the ingredients with enough water to make a thick batter. Heat oil in a wok for deep frying. Using a janthikala gottam/ cookie press make the sev. Fry until golden brown, remove onto a paper towel to drain.
  • For the Maida Biscuits: Mix all the ingredients in to smooth dough. Roll into a thin disc, using a sharp knife, cut into diamonds or use a cookie cutter or even the cap of a small bottle to make small round biscuits. Deep fry these until golden brown.
  • Assemble: To assemble crumble the sev in a large bowl, add the maida biscuits and all the other ingredients, mix well and store in an airtight container. This stays well for at least 10 days.
