First off a big thanks to Vardhini @ Cooks Joy for letting me host Dish It out. Ingredients I chose for this edition were eggplant and tomato. I received some delicious creations from fellow bloggers that I can't wait to try all the dishes.
Here are the entries I received:
First up is Sagari @ Passionate Chef who sent her delicious Vankaya Masala (Spicy Eggplant in Tomato Gravy). Love the way she stuffed those green beauties and cooked them in the tomato gravy. A must try.
Next up is this famous North Indian Baigna Bhartha from Goddess of Spices' kitchen. I can't say how much I love the smoky flavor of roasted eggplant and the tangy tomatoes in this dish.
Then we have the Meatballs made meatless by using eggplant -- that's just genius ides in my book. Pallavi @ Cook-Eat-Burrrp is the mastermind behind these amazing vegetarian meatballs.
Narmada @ Cooking & beyond sent her Eggplant Tomato Chutney, it sounds like it tastes divine to me.
Anshu Bhatnagar went the Turkish way with eggplant and made delicious Domates Dolmasi (Tomatoes stuffed with eggplant & onions). What else can I say, pic says everything.. AMAZING!!
Srimathi @ Few Minute Wonders sent this wonderful Eggplant Cashew curry that can be made in 15minutes flat. Now that's a dish I want to be on my weekday dinner rotation.
Shobha @ Food Mazaa sent in this amazing Sukhe Baigan with Chettinad Masala. Personally I love slender long eggplants that we get in India and Shobha's pic made me want to have some that curry like right now.

Next up is Vardhini @ Cook's Joy, the mind behind Dish It Out event. She sent her absolutely amazing Eggplant Parmesan using baked eggplant instead of fried. A must try for all health conscious eggplant lovers.
Another Italian dish from Vardhini, Vegetable Calzones stuffed with eggplants and cheese. Delicious!!
