Taco Salad (Vegetarian Recipe)

Dish: Taco Salad
Today's dish from Taste of Home top 100 recipes is this delicious Taco Salad. I wanted to make taco salad for a while now and when I saw it on the top 100 I knew I had to give it a try. Original recipe also has cooked meat but I omitted it and just made the rest of the recipe.
Vegetarian Taco Salad
Key to this recipe is the dressing that is made with Thousand Island dressing. You can either use store bought Thousand Island dressing or make it yourself at home. I didn't want to buy a jar since I know I will let it sit in the fridge for god knows how long.

Salsa Picante

This is one of the condiments that I wanted to post for the mega marathon-condiment week, but didn't know which country to put it under. So I'm posting it today for 'Cooking from Cookbook Challenge'.
Salsa is a condiment made with tomatoes, onions, peppers and other ingredients. 'Picante' is a Spanish adjective meaning 'piquant', derived from the word 'picar' which means to sting, referring to the feeling caused on the tongue.
Spicy Tomato & Pepper Salsa
I usually make fresh salsas, the ones that are basically chopped and mixed together. This one is cooked till the veggies are tender and the sauce is thickened.

Mango & Roasted corn Salsa

Blogging Marathon# 40: Week 2/ Day 1

Dish: Mango & Roasted Corn Salsa
We are starting our second week of blogging marathon today and my theme for this week is 'Mango Mania'. We get mangoes here in the states all through the year, even though the quality of the off-season mangoes is questionable. I don't buy ripe mangoes from regular grocery store unless it looks really really good. I like the ripe mangoes we get at the Indian store and last year we totally enjoyed the mango season. I'm so looking forward to summer for some juicy, ripe mangoes.
Mango & Roasted corn Salsa
I made this mango salad/ salsa couple of months back when I had couple of ripe mangoes and fresh corn in the fridge. There is hardly any recipe here, it is more of a guideline. It is very easily customizable too. Add some cooked black beans or any other beans to add some protein and make it more filling. I served it along with some avocado rice for a simple dinner.

Watermelon Salsa

This watermelon salsa recipe does not technically require an entire blog post. But the clicks were so colorful and pretty, that I thought I needed to do another post just for them. Like any other no-cook salsa, all this recipe requires is mixing of the ingredients. So the more fresher and sweeter the melon, the more tasty this salsa is going to be. 
Watermelon Salsa
 Recipe is from a book that we got from my kid's Pediatrician's office. Even though my 5 year old wasn't very impressed with the salsa, I really enjoyed it's refreshing taste. I served it with Grilled veggie Quesadillas.
