Brown Rice Bowl with Tofu and Veggies

Dish: Brown Rice Bowl
My second meal idea after yesterday's South Indian meal this brown rice bowl with crispy tofu and vegetables. As I said yesterday, all of my dishes this week are centered around rice. We have started eating more brown rice these days, so I'm always in the look out for more recipes using it. This rice bowl recipe is from America's Test Kitchen newsletter.

This is a balanced meal with carbs, protein & veggies all served in one bowl. The list of ingredients is quite long but most well equipped kitchens will have all of the ingredients or a quick trip to the grocery store will do the trick.

Assam -- Labra (Mixed Vegetable Curry)

Assam is a state in the North eastern part of India. It is located south of the Eastern Himalayas and comprises of the Brahmaputra and the Barak river valleys. It is surrounded by the six of the other Seven Sister States. Geographically Assam and the other sister states are connected to India via a narrow strip of land in West Bengal called the Silguri Corridor or 'Chicken's neck' (this is something new to me and wanted to share with all of you)
Cuisine: Because of the geographical location, Assam has both the mountains and plains which influence their style of cooking. It is a confluence of cooking habits of the hills that favor fermentation and drying as forms of food preservation and those from the plains that provide fresh vegetables and abundance of fish from the many rivers and ponds that run through the state. The cuisine is characterized by very little use of spices, little cooking over fire and the preparations are rarely elaborate.
Staple Food: Rice, Fish, Meat & Vegetables.
Specialties: Tenga (light and sour fish dish), Pura (Assamese version of smoked or barbecued meat or fish), Pitika (side dishes), Bor-a etc.,

Vegan Kimchi with Ginger & Chiles

New Jersey is one state where you find large Indian population. In some towns it almost feels like Americans are in minority there. Most of the apartment complexes are filled with Indians and streets are filled with Indian stores, restaurants, beauty parlors, these towns look like mini Indias. 
But the town we live in has a majority of Koreans. Most of the stores are run by Koreans and stores have a lot of Korean vegetables and ingredients. Being around so many Koreans, I have always wanted to try Kimchi. It is a tradional fermented side dish made of vegetables and variety of seasoning. It tastes spicy and sour. Kimchi is Korea's national dish and is used to make other dishes like kimchi fried rice, kimchi pancakes, kimchi stew etc.

Our local Korean store has a whole Kimchi section. It's around the corner where fresh seafood is sold, so I never actually saw this side of the store in detail. When I decided to make kimchi and went to the store to get the ingredients, I took a few pictures to share with you guys.

Indian Dal with Radish & Tomatoes

VeganMofo Day 4: Many Indian savory dishes are either Vegan to begin with or can be easily made Vegan by simply substituting very few ingredients. 'Desserts' is another story, most of them use ghee (clarified butter) and milk, but come to think of it, these can be veganized easily too. I want to make some traditional Indian desserts - vegan style this festival season (which starts this month with Dasara, yay) and hopefully I can post them for veganmofo.

Today's dish is simple, healthy and delicious. Radish is not one of our favorite veggies, but I buy it since it has quite a few health benefits. My husband hates the smell and pungent taste of raw radish. So I pressure cooked it with dal and tomato and once done it turned out mellow with no discernible smell or the taste.

Mooli Paratha

For Day 2 of BM# 10, I made some good old Indian style winter comfort food --- mooli paratha. These parathas are made with daikon radish which is generally available in the winter. My husband is not a big fan of mooli, so I followed Rak’s recipe to cook the mooli before stuffing in the paratha. Parathas turned out hearty and delicious, not stinky at all like my husband predicted.
