Baked French Toast with Chocolate Chips

Dish: Baked French Toast
We all love French toast in our house. I have tried quite a few variations of French Toast recipes before, but this baked overnight French Toast recipe is something I tried recently with a friend for our Holiday brunch party.
We usually have pot lucks for most of our get-togethers and for the holiday brunch party I hosted, one of my friends suggested this Praline topped Overnight French toast by Paula Deen. She said she ate it at one of her friend's house and it was delicious. She sent the recipe over and we both made it together for the party. We actually put everything together the night before, which, by the way, only takes about 5 minutes and we spent the next 2 hours chatting :-) The next morning I baked it off in the oven, just before everyone came.

Russian Honey Cake -- Medovik (with Eggless Custard Filling)

For this month's International Cooking Challenge, Saras @ Saras Yummy Bites is taking us to the world's largest country in the world, Russia. Russia's cuisine is very diverse just like the country and she gave us 3 traditional recipes to choose from. I picked this irresistible Russian Honey Cake from the list.
Russian Honey Cake -- Medovik (with Eggless Custard Filling)
I made it as a part of my Russian meal I did earlier this month. This honey cake is very different from any cake I've ever made. The cake part is not a cake after all, it is basically rolled out dough that is baked in the oven to make somewhat like thin pancakes. These thin cakes are then layered with creamy custard filling and then chilled to make a delicious cake.

Boston Cream Cupcakes

I made these cupcakes back in February and it took me this much time to post the recipe. Recipe is from 'the big book of Cupcakes' cookbook. The pictures were too tempting and the thought of having one of my favorite donut flavors in a cupcake was very exciting. 
Boston Cream Cupcakes
The creamy 'Boston Cream' part of the cupcake is made vanilla instant pudding mix, which makes it quick and easy to make. I made my basic Vegan vanilla cupcakes recipe and then filled them with the custard and topped them with chocolate icing. These cupcakes were a big hit with both kids and adults.

Chocolate Custard with Custard Powder

Dish: Chocolate Custard with Custard Powder
Day 2 of BM# 30 and my theme for this week is "Summer Specials". This month's Kid's Delight event is being hosted by the talented Chef Mireille @ Global Gourmet. I love her theme because it is crazy hot here and my 5 year old is driving me crazy with his little demands. So I've been looking for some kid friendly recipes to please my picky eater.
Chocolate Custard with Custard Powder
Today I made something sweet with one of his favorite ingredients, chocolate. He doesn't eat vanilla in any form and he wouldn't even touch the regular custard. So I added some cocoa to custard and made a chocolate version of it and he loved it. I wish I had thought of it earlier!!

Fruit Salad with Vegan Custard

VeganMofo Day 16: Rice Milk that I bought from Trader Joe's is still sitting in my fridge waiting to be used. The consistency of the milk is very thin, almost water like and I can't see myself using it in my morning coffee (I started to like my coffee with soy milk these days). So after using it in these cupcakes and smoothie, I wanted to try and see how it would work in a custard.
