Blogging Marathon# 27: Week 3/ Day 4
Theme: Seasonal Dishes - Summer Dessert
Dish: Coconut Ice Cream
Heavy Cream - 1½cups
Milk - ½cup (I used whole milk)
Sugar - 2/3 cup (or to taste)
Ground Cardamom - ¼tsp
Corn Starch - 1½tbsp
Toasted coconut - for topping (optional)

Summer means time for ice creams. Even though some might say (I'm sure my husband will agree) that ice cream can be eaten any time of the year. But at least in summer I don't have to say it's too cold outside to eat an ice cream :-)
I have stopped buying store bought ice creams more than 3 years back, when I bought my ice cream maker. I make sure that the freezer is always stocked with vanilla and mango ice creams and I keep making new / fancy flavors when I feel like it, may be once every 3-4 months, but more frequently in summer.
I like my ice creams nice and creamy. I don't like icy stuff and since we are pretty good at portion control, I make full fat ice creams, so we can indulge once in a while.
I recently made this refreshing coconut ice cream. This is a perfect summer dessert, especially at barbecues. I flavored it with ground cardamom for an Indian flavor.
No ice cream maker-- no worries, freeze the coconut custard in a shallow freezer container, after freezing for couple of hours whip it up in a blender or use a hand mixer. Freeze for another 2-3 hours, whip again. If you feel like it, repeat this process one last time to get a creamy ice cream.
Ingredients:

Method:
- Whisk corn starch with 3tbsp of milk in a small bowl, set aside.
- Combine coconut milk, heavy cream, remaining milk and sugar in a heavy bottomed sauce pan. Heat on medium flame, stirring constantly until sugar melts. Bring the mixture to a boil.
- Lower the heat and slowly add the corn starch mixture in a steady stream, whisk continuously. Cook stirring continuously until the mixture thickens, about 3 minutes.
- Turn off the heat and add ground cardamom. Let cool, then refrigerate for at least 4 hours.
- Follow ice cream machine directions and churn the ice cream. Enjoy with toasted coconut sprinkled on top!!

ReplyDeleteI have an ice cream maker but I hardly ever use it because of freezing the bucket - there is hardly ever room in my freezer to keep it in there and then when I want ice cream hate having to wait to freeze the bucket - maybe I'll try the no machine method :)

ReplyDeleteI had my first coconut ice-cream at a really old shop called Michaels icecream in Trichy (my native place) ages ago. Thouh it was 'icy' as were all the other ice-creams there, i loved the taste of this one. I'm definitely going to try this. I do not have an ice-cream maker, so I'm going to have to take the long freeze it-churn-it route!!!

Its been ages since i made ice cream. Must make this one. atleast we adults will enjoy it a lot. Kids a no no its not chocolate.

ReplyDeleteWhat a fabulous looking ice cream with coconut! From all the flavours I thought of coconut never came to mind!..would surely want to make it next time. I don't have a maker, and I make sure I get a creamy one..since it's only the kids who eat, I have no trouble making with full cream..:)

ReplyDeleteI saw this ice cream recently (coconut flavor) and somehow I didnt try it. Those who tried said it tasted wonderful. I wanted to make ice cream for summer theme, but dropped it since I am not at all good at portion control :-(

ReplyDeleteThat one is fabulous for sure, Pavani. I have been thinking whether to invest in an ice cream maker or not since my son is the only one who loves it. However posts like your's tempt me.
ReplyDeleteBTW, I guess you can invest in the sodastream. I don't drink sodas and my husband and the son are the ones who are putting it to the maximum use. And the gooseberry preserves is not tart or sour. It is pleasantly sweeter.
