I make pancakes or waffles almost every week. It is really convenient to have some homemade goodies stacked in the freezer for quick weekday breakfasts. Every time I ask my 3-year old what pancakes he wants his very prompt reply would be “chocolate”. I try to reason with him and say too much chocolate is not good, but sometimes I have to give in and add some chocolate chips into the batter just to please him.
So for Day 3 of our blogging marathon, I made these Almond butter & chocolate chip waffles. The recipe is from Whole Grains Baking by King Arthur Flour, this cookbook is like a bible with over 600 pages and tons of recipes using whole grains. Original recipe was for Peanut Butter & Chocolate chip Waffles, but I prefer other nut butters over peanut butter, so I used almond butter instead. Also the recipe uses Spelt flour which is a much healthy alternate to all-purpose flour. The waffles turned out just perfect, fluffy and delicious.
Here’s how I made them:
Ingredients:
Spelt flour – 1 cup
Baking powder – 2tbsp
Salt - ¾tsp
Almond Butter – ½ cup (You can use Peanut butter instead)
Sugar - ¼cup
Unsalted Butter – 4tbsp, melted
Almond milk – 1 cup (Original recipe used regular milk)
Eggs – 2
Chocolate chips – ½cup (I used mini chocolate chips)
Method:
- In a small bowl whisk together flour, salt and baking powder. Set aside.
- Cream almond butter with the sugar until it softens, then pour in the melted butter. Add eggs one at a time, mixing to incorporate before adding the second egg.
- Add milk gradually; mixture will be wet at this point.
- Slowly stir in the flour mixture and mix until combined.
- Stir in the chocolate chips.
- Let the batter sit for at least 10 minutes before making the waffles. This is an important step for spelt flour, since the batter starts out soupy but thickens as the grain absorbs the liquid.
- To bake the waffles: Follow your waffle iron instructions and bake the waffles. On my waffle iron: I added a scant 1 cup of batter and baked for 4 minutes for perfectly golden waffles.
Enjoy with some bananas and maple syrup. Have some coffee too for a very satisfying breakfast. These waffles are pretty filling, I was able to eat half waffle and was too full already.

ReplyDeletePictures are stunning Pavani. I agree that kids seem to want only chocolate in all their dishes. My boys eat anything baked only if it's chocolate..when I bake vanilla, they bring out to show the chocolate muffin on the butter cover..I don't have waffle maker, must get one..
