Easy Coconut Laddoo (using condensed milk)

We are starting the last week of this month's blogging marathon and my theme for this week is 'Bookmarked recipes'. First up is an easy to make coconut laddoo recipe from Jyothi Rajesh's Curry Trail blog.

I bookmarked Jyothi's recipe the minute I saw it on FB. Her clicks were just amazing and adding rose syrup to coconut laddoo sounded so exotic. I made these cute little laddoos to bring to a friend's house.

Coconut and Nuts Laddoo
These laddoos need 2 main ingredients, dry grated coconut and condensed milk with optional add-ins like nuts and rose syrup. They are very quick and easy to make too. Do give these a try when you have an impromptu guest or need something sweet really quick.

Easy Coconut Laddoo
Ingredients:
  • 1cup Dry grated Coconut
  • 1cup Condensed Milk
  • 1tbsp Rose Syrup
  • 2tbsp Pistachios
  • 2tbsp Almonds
Method:
  1. Grind Almonds and pistachios to a fine powder.
  2. In a nonstick pan, combine grated coconut, condensed milk and cook on medium flame, stirring constantly.
  3. Cook till the mixture starts to leave the pan. Add the rose syrup and ground nuts and cook for another 1~2 minutes.
  4. Turn off the heat and let the mixture cool for about 5~10 minutes. Take a tablespoon of mixture and roll into smooth laddoos. Serve immediately or store in the fridge for 3~4 days.
