Lunch Box

This is my lunch box(es) with Aloo kura (Potato curry) and Pesarapappu Charu from last night. I usually cook for 2 meals at night, so we can pack them up for lunch the next day. I make a big pot of sambhar, pappu (dal) or rasam and lasts for atleast 3-4 meals for the 2 of us. Also I try to make curries with a little gravy, so it doesn’t get too dry for lunch the next day. If not we take a small container of dal or rasam on the side.

I tend to make white rice 2-3 times a week, pasta, brown rice and other grains make up for the rest of the days. I want to make rotis more often, but I’m not too good at making them and don’t have the time with a 13 month old pulling on my leg all the time.

I need some tips on making rotis quickly on weeknights, let me know how you guys usually manage. Any and all the tips are welcome. Also do you make sandwiches for lunch the day before or pack everything up and assemble at work? I’d love to take sandwich to work but I’m not sure if it’s going to end up being a soggy mess.

  2. That curry looks very tasty! I never liked making my sandwich and then packing because it does get soggy... It doesn't seem to bother some people, but I hate it!

  3. That looks like a delicious and comforting lunch! I like packing sandwiches for lunch as long as the filling is something quite dry and non-soggy (like dry potato-vegetable filling with some cheese or thick chutney).
    But much more often than sandwiches, I make burritos for lunch. Sometimes with a Mexican-style filling of sauteed onions and peppers, soy "meatballs" or beans. And often, Indian-style: dabbing my favorite pickle on a tortilla and stuffing it generously with whatever Indian style dry vegetable stir-fry I have made, then rolling up tightly. It tastes delicious hot or cold. If you live near a Trader Joe's store, I love their whole-wheat tortillas.

  4. I have the very same problem with lunches. I would love to take sandwiches but don't know how to. Now a days I take dal or soup with a few slices of toasted bread, otherwise its pasta for the most part or fried rice style dishes.

    Usually I make chapati's in bulk, like say I need 3 per meal I will make about 12-15 and wrap 3 chapatis in parchment paper and then Al foil and stack them in the freezer. They have lasted in there for more than a month. I've also frozen chutneys, a few spoonfuls in a ziploc bag, and I wrote about my frozen dal in my latest post. Well, I will stop now!

  5. Deesha, Aloo is my husband's all time favorite. I, on the other hand love love love baingan...

    Meeso, I dont like soggy sandwiches either. Can have them for dinner, but packing for lunch is not something I like to do.

    Thanks so much for the ideas Nupur. I think I can make sandwiches and wraps with the curries I make than eat the same curry with rice.. ting.. ting.. I think I hear my "Beja Bell" ringing.. Thanks again.

    Thanks Priya for the tip on freezing rotis.. I think its way better than buying frozen rotis from the Indian store. Will definitely give them a try. See Nupur's comment for ideas on sandwiches.. May be it will help you too.
